Lime wedges, for the rim and garnish
Chile-Lime Rub, recipe follows, for the rim
2 ounces tequila, preferably blanco
1 1/2 ounces fresh lime juice
1 ounce poblano liqueur, preferably Rancho Reyes Verde
1 ounce triple sec
1 tablespoon chile powder
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon sugar
Zest of 1 lime

Steps:

  • Run the edge of a rock glass with lime, then dip in a shallow dish of Chile-Lime Rub. Fill the glass with ice.
  • To a cocktail shaker with ice, add the tequila, lime juice, poblano liqueur and triple sec. Shake well. Pour into the glass and garnish with a lime wedge.
  • Mix together the chile powder, salt, cumin, cayenne, coriander, sugar and lime zest in a shallow dish.

1 part ginger powder,
2 parts Kosher salt.
Ginger-Lime syrup:
1 cup peeled and sliced ginger
1 cup fresh lime juice
1 cup sugar
Margarita:
Ice
3 tablespoons (1 1/2 oz.) añejo tequila
1 1/2 tablespoons (3/4 oz.) Ginger-Lime Syrup (see below)
1 tablespoon (1/2 oz.) Cointreau
1 teaspoon fresh lime juice
1 lime wedge, for garnish

Steps:

  • Salt rim: On a plate, mix the ground ginger and salt. Moisten the rim of a margarita glass with water and dip the rim in the ginger salt to coat. Ginger-lime simple syrup: Combine 1 cup peeled and sliced ginger, 1 cup fresh lime juice and 1 cup sugar. Bring all ingredients to a boil, simmer 2 minutes, let cool, then puree in a blender. Strain, and reserve liquid. Margarita: Fill shaker with ice, tequila, Cointreau, lime and ginger-lime base. Shake. Pour into a rocks glass. Garnish with lime wedge.

3/4 cup sugar
1 1/2 cups water
1 large hand ginger, peeled and cut into 1/2-inch coins/chunks
Bar sugar
Freshly grated nutmeg
2 ounces good quality tequila or reposado (recommended: Cabo Wabo)
1 lime, juiced, plus lime wedges for garnish

Steps:

  • Bring sugar and water up to a light simmer and cook until all of the sugar is dissolved. Add ginger and steep for 30 minutes. Pour ginger-simple syrup into blender and puree. Strain out pulp and store in a tightly sealed jar or bottle. Will keep for several weeks in the refrigerator.
  • Pour some bar sugar onto small plate and grate a pinch of nutmeg on top, mix well.
  • Add tequila, lime juice, 5 ounces ginger-simple syrup and ice to cocktail shaker and give it a good shake. Run lime wedge around rim of glass and dip in sugar/nutmeg mixture, add ice and pour in contents of shaker, grate a little nutmeg on top and serve with a wedge of lime.

1 part dried ginger
2 parts kosher salt
Ginger lime syrup:

8 ounces (1 cup) fresh lime juice
1 cup sugar
1/4 stalk lemongrass, smashed and chopped.
Margarita:
16 ounces añejo tequila
4 ounces Ginger-Lime Syrup
6 ounces Cointreau or other triple sec

Steps:

  • For the rim: On a plate, mix the ground ginger and salt. Moisten the rim of a margarita glass with water and dip the rim in the ginger salt to coat. Ginger lime syrup: In a small saucepan, combine all of the ingredients and bring to a boil, stirring to dissolve the sugar. Transfer the mixture to a blender and puree. Strain, let cool and refrigerate, covered, for up to 1 week. Margarita: Moisten the outer rims of 8 highball glasses with 2 of the lime wedges and coat lightly with salt. Fill the glasses with ice. In a pitcher, combine the tequila, Ginger-Lime Syrup and Cointreau. Stir well and pour one-fourth of the mixture into an ice-filled cocktail shaker. Shake well and strain into 2 of the highball glasses. Repeat 3 more times, using fresh ice each time. Garnish each drink with a lime wedge.

3/4 ounce Ginger-Lime Base liquid
1 1/2 ounces anejo tequila
1/2 ounce Cointreau

Steps:

  • Place salt mixture in a shallow dish. Moisten the rim of a rocks glass with one of the lime wedges and dip in salt mixture to coat; set aside.
  • Fill a cocktail shaker with ice and add tequila, ginger-lime base liquid, and Cointreau; shake to combine and strain into prepared glass. Squeeze remaining lime wedge over glass and add to cocktail. Serve.

1 cup peeled and thinly sliced fresh ginger
1 cup freshly squeezed lime juice
1 cup sugar
1 (1-inch) piece lemongrass, smashed and sliced
Coarse salt

Steps:

  • Preheat oven to 175 degrees. Line a baking sheet with a nonstick baking mat and set aside.
  • Place ginger, lime juice, sugar, and lemongrass in a saucepan and bring to a boil over high heat. Carefully transfer to the jar of a blender or bowl of a food processor; blend until pureed. Strain through a fine mesh sieve and set juice aside for base mixture. Evenly spread remaining pulp on prepared baking sheet and transfer to oven until almost dry, about 2 hours. Remove from oven and let cool until completely dried.
  • Place pulp in a small food processor and grind to a fine powder. Mix with an equal amount of salt and set aside for rimming cocktails.
