GRINGO SMOKED CHICKEN ENCHILADAS RECIPE

Gringo Smoked Chicken Enchiladas Recipe image

For this recipe I smoke a whole chicken using my Grande Gringo Seasoning and make a spicy, creamy white sauce to go over the top. It's finished off with a ton of shredded cheese and cooked right back on the pit... I call it Gringo Smoked Chicken Enchiladas!

Provided by Malcom Reed

Number Of Ingredients 21

1 whole chicken
2 Tablespoons Malcom's Grande Gringo Seasoning
2 Tablespoons Canola oil
1/2 medium size onion diced
4 cloves garlic minced
4oz diced green chilies drained
16oz salsa verde
16oz sour cream
16oz block Monterrey Jack Cheese shredded
1 bunch cilantro chopped
1 package corn tortilla shells
1 jalapeno pepper sliced
1 medium onion diced
4 cloves garlic minced
1 Tablespoon canola oil
1 4oz can diced green chilies drained
16oz Salsa Verde
16oz sour cream
8oz Monterrey Jack cheese grated
1 teaspoon Grande Gringo Seasoning
1 Tablespoon fresh cilantro chopped

Steps:

  • Prepare pellet smoker for indirect cooking at 300 degrees.
  • Dry the outer surface of chicken with paper towel and brush with Canola oil. Season well with Grande Gringo seasoning.
  • Place chicken on pellet smoker and cook until internal temperature reaches 165 in breast. Rest for 10-15 minutes and pull into bite size pieces by hand.
  • Heat 1 Tablespoon of oil in a large sauce pan over medium heat. Sauté onion for 2-3 minutes, add garlic and continue to sauté for 1-2 minutes. Add diced green chilies and cook for 1-2 minutes. Pour in salsa verde and bring to a slight simmer.
  • Add sour cream and reduce heat to low. Stir until sour cream is smooth. Slowly add half of the Monterrey Jack cheese stirring as needed to melt cheese. Season with a good pinch of Grande Gringo and fresh cilantro.
  • Pour half of the sauce into a bowl over the pulled chicken and mix gently to combine.
  • To assemble the enchiladas: Ladle a few spoons of the sauce into a casserole dish or baking pan.
  • Warm the corn tortillas in hot oil for 3-5 seconds each side. Place 2 Tablespoons of the chicken mixture on each tortilla and fold the shell around. Place the enchiladas seam side down in the baking dish.
  • Ladle the remaining sauce over the top of the enchiladas and top with the remaining Monterrey Jack cheese. Place slices of jalapeño on top and sprinkle with a little extra Grande Gringo.
  • Place the baking dish on the pellet grill set for 350 degrees. The enchiladas need to cook for about 30 minutes or until the cheese is brown and bubbly on top.

CHICKEN ENCHILADAS

Chicken Enchiladas image

This Mexican recipe came to The Times in 2002 by way of Amanda Hesser. It is a simply prepared casserole of shredded chicken rolled in corn tortillas underneath a mild, seed-speckled tomatillo sauce. Crumbled queso añejo, a sharp white cheese, is sprinkled over the top before it is baked until the cheese melts and the entire dish is heated through. You could serve it with rice and a medley of steamed beets, cauliflower and carrots, as a cook in Mexico might, but a crisp green salad would be welcome, too. (After reading several comments from readers who felt the sauce needed to be doubled, we retested the recipe and agreed. We've updated the amounts accordingly.)

Categories     dinner, easy, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 10

Sea salt
4 skinless, boneless chicken-breast halves
2 pounds tomatillos, papery skin removed
2 tablespoons vegetable oil
2 large white onions, peeled, 1 chopped, the other sliced into rings
2 tablespoons minced jalapeño
3 tablespoons chopped cilantro
12 corn tortillas
8 ounces queso añejo or cotija, crumbled
Mexican crema or crème fraîche for serving

Steps:

  • Bring a pan of salted water to a simmer and poach the chicken over low heat until just cooked through, about 9 minutes. Remove to a bowl. Let cool. With your fingers, finely shred the chicken. Lightly season with salt, toss to mix and set aside.
  • Meanwhile, make the sauce. Cut the tomatillos in half. Heat the oil in a skillet large enough to fit the tomatillos in 1 layer. When the oil shimmers, add the chopped onion and jalapeño and sauté until the onion is softened at the edges. Add the tomatillos, season with salt and continue cooking until wilted. Turn off the heat and let cool for a few minutes.
  • Pour the tomatillos into a food processor or blender and blend until smooth. Add the cilantro. Adjust the seasoning. Pour the sauce into a shallow bowl.
  • Preheat the oven to 350 degrees. Grease a 2-quart baking dish and spread a little sauce on the bottom. Working with 1 tortilla at a time, soften each in a dry, hot skillet for about 8 seconds per side, then coat lightly with sauce. Lay each tortilla on a plate and sprinkle about 1/3 cup of shredded chicken in the middle and roll into a cylinder. Repeat, lining up tortillas tightly in the dish.
  • Spread the rest of the sauce over the tortillas and sprinkle with queso añejo. Cover the dish with aluminum foil and place in the oven. Bake until heated through, about 15 minutes. Remove the foil and bake 10 minutes longer, until the queso añejo is melted. Dollop with crema, garnish with onion rings and serve with additional crema.

Poblano Chile Enchiladas a la Gringa image

Prepare for your taste buds to jump for joy!

Provided by Olga Gonzalez

Categories     World Cuisine Recipes     Latin American     Mexican

Time 40m

Yield 5

Number Of Ingredients 10

2 (8 ounce) skinless, boneless chicken breast halves
2 tablespoons minced garlic
1 medium onion, chopped
3 cups water
1 tablespoon chicken bouillon granules
4 fresh poblano chilies
1 (8 ounce) container sour cream
2 tablespoons olive oil
10 (6 inch) corn tortillas
1 cup shredded mozzarella cheese

Steps:

  • Place the chicken breasts, garlic, onion, water, and chicken bouillon into a saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 40 minutes. When finished, remove the chicken to a plate to cool. Measure out 1 cup of the chicken broth and discard the rest.
  • Roast the poblano chiles over an open flame, or underneath a broiler until the skin has blackened on all sides. Place the chiles into a plastic bag, or a bowl covered with plastic wrap, and allow to steam as they cool, about 30 minutes. When cool, peel the blackened skin off of the pepper, and remove the seeds and membrane.
  • Place the reserved chicken broth into a blender along with the roasted poblanos and sour cream. Puree until smooth and set aside.
  • Heat the olive oil in a skillet over medium heat. Fry the tortillas one at a time until softened and beginning to crisp. Place onto a plate and set aside. Pour the pureed poblano mixture into the skillet and simmer for 10 minutes. While the sauce is cooking, slice the cooled chicken breasts into 1/4 inch strips.
  • Using tongs, dip a tortilla into the sauce, coating both sides. Place some of the chicken in the center of the tortilla, roll tightly, then place on a serving dish with the seam side down. Repeat with remaining tortillas. Spoon any remaining sauce over top of the enchiladas, then sprinkle with the shredded mozzarella cheese.

Time 2h5m

Yield 4 servings

Number Of Ingredients 14

2 boneless, skinless chicken breasts
2 tablespoons olive oil
2 teaspoons taco seasoning
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
1/2 medium onion, chopped
Half of a 4-ounce can chopped green chiles, with liquid
4 ounces cream cheese, softened
Half of a .5-ounce packet ranch seasoning, such as Hidden Valley Original Ranch Salad Dressing and Seasoning Mix
Eight 8-inch flour tortillas
3 cups shredded Monterey Jack
1 1/2 cups picante sauce

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray; set aside.
  • Place the chicken breasts on a jelly roll pan. Drizzle each breast on both sides with 1 tablespoon olive oil. In a small bowl, mix together the taco seasoning, cumin, oregano and black pepper; sprinkle evenly over both sides of the chicken breasts. Roast for 15 to 20 minutes on each side, or until golden brown and cooked through. Remove the pan from the oven and allow to cool for 15 minutes. Shred the chicken and set aside.
  • Meanwhile, in a medium skillet over medium heat, melt the butter until shimmering, about 2 minutes. Add the onions and saute until soft, about 5 minutes. Add the green chiles and saute for 1 minute. Stir in the cream cheese, ranch seasoning and the shredded chicken. Cook over medium heat, stirring constantly, until the cream cheese melts, 3 to 5 minutes.
  • Lay the tortillas flat on a clean dry surface and spoon 2 to 3 tablespoons of the chicken mixture down the center of each. Roll up the tortillas and place them, seam-side down, in the prepared baking dish. Sprinkle with the Monterey Jack. Pour the picante sauce over the rolled tortillas and cheese. Bake until browned and bubbly, 45 minutes.
