The BEST Chicken Fajita Tacos that are easy to make, savory, and SO delicious! Chicken strips cooked to perfection in the best fajita seasoning with salsa, fajita veggies that are tender and so delicious, corn tortillas and a cream sauce that brings it all together. This recipe is one of my favorite quick healthy meals for dinner that can be made in 30 minutes or less!

8 corn tortillas
2 Tablespoons avocado oil (divided)
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
2 medium chicken breasts, sliced into strips
2 Tablespoon salsa (divided)
1 teaspoon minced garlic
1/2 medium yellow onion, sliced
2 medium bell peppers, sliced
1/2 cup fresh cilantro leaves (optional, for topping)
1/2 medium lime, quartered (optional)
3 Tablespoons plain whole milk yogurt (or sour cream)
1/2 teaspoon salt
1-2 Tablespoons water

Steps:

  • Heat the tortillas up in a pan or directly over the stove and set aside.
  • Mix the chili powder, smoked paprika, cumin, salt, and pepper together in a small bowl.
  • Slice the chicken breasts into thin strips.
  • Heat up 1 Tablespoon of the avocado oil in a skillet or pan.
  • Place the chicken in the pan along with 1/2 of the seasoning mix and 1 Tablespoon of the salsa.
  • Cook for about 10 minutes, flipping halfway through and stirring as needed until fully cooked.
  • Set the chicken aside.
  • Add the remaining oil along with the garlic and sliced onion to the pan, then cook for 2-3 minutes.
  • Add in the sliced bell peppers, remaining seasoning mix, and remaining salsa.
  • Continue to cook for about 10 minutes, stirring often, until the vegetables are soft.
  • Add the chicken back in and stir until evenly warm.
  • Remove from heat and fill each tortilla with the chicken fajita mixture.
  • Mix the cream sauce together (optional).
  • Top each chicken fajita taco with cream sauce, cilantro, and a squeeze of fresh lime juice!

8 Mission Fajita Flour Tortillas, warmed
1 lb. Boneless, skinless, chicken breast, cut into strips
½ tbsp. Chili powder
½ tsp. Each salt and pepper
½ tsp. Ground cumin
2 tbsp. Vegetable oil, divided
1 Onion, thinly sliced
8 oz. Queso Oaxaca
1 Avocado, halved, pitted, peeled and sliced

Steps:

  • Season chicken strips with chili powder, salt, pepper and cumin. Heat 1 tbsp. oil a medium, heavy skillet over medium-high until hot. Cook chicken, stirring, for 5 to 7 minutes or until browned on all sides and cooked through. Transfer to a plate and set aside.
  • In same skillet, heat 1 tbsp. oil over medium heat. Cook onions, stirring, for 6 to 8 minutes or until softened and caramelized. Set aside.
  • In batches, place tortillas on non-stick pan over low heat. Place 1 oz. of cheese onto each tortilla and cook, covered, until just melted, about 1 to 2 minutes.
  • Divide chicken and onions into each tortilla. Garnish with avocado.

2 shredded cooked Lemon-Herb Roasted Chicken
1-1/2 cooked onions and peppers from Roasted Spring Vegetables
3/4 cup KRAFT Shredded Mild Cheddar Cheese
1-1/2 cups shredded lettuce
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 300°F.
  • Bring Taco Seasoning Mix and water to boil in large skillet. Add Lemon-Herb Roasted Chicken, onions and peppers; stir. Cover; simmer on medium-low heat 10 min., stirring occasionally and uncovering after 5 min.
  • Meanwhile, heat Taco Shells as directed on package.

1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
½ white onion, thinly sliced
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon cumin
1 teaspoon salt
½ teaspoon black pepper
4 corn tortillas
sour cream, for topping

Steps:

  • In a large, nonstick skillet, heat the olive oil over medium heat.
  • Toss in the onions, bell peppers, salt, chili powder, cumin, and black pepper, and sauté until the onions and peppers have softened.
  • Add in the shredded chicken and toss until everything in the pan is evenly coated and warmed through.
  • Pour the chicken mixture into a large serving bowl .
  • Toast the tortillas in the seasoned pan, about 3 minutes per side.
  • Divide the mixture evenly between tortillas, top with a drizzle of sour cream, and serve.

1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb boneless, skinless chicken breast, cut in half
2 tablespoons taco seasoning
4 cloves garlic, diced
1 lime
10 oz canned diced tomatoes with green chiles, drained
flour tortilla
cheese, optional
sour cream, optional
guacamole, optional

Steps:

  • Add half of the sliced peppers and onions to your slow cooker.
  • Layer the chicken and coat all sides with taco seasoning.
  • Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
  • Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
  • Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

Steps:

  • Combine all of the spice ingredients in a small bowl.
