You don't even have to boil the pasta or cook the chicken -- just stir everything together for a delicious Dump-and-Bake Chicken Florentine Pasta in minutes!

1 (14.5 ounce) can (about 2 cups) low-sodium chicken broth
1 (16 ounce) jar (about 1 ¾ cups) Alfredo sauce
2 teaspoons minced fresh garlic
½ teaspoon salt
1 lb. raw boneless, skinless chicken breasts, diced
2 (10 ounce) packages frozen chopped spinach, thawed, with all of the liquid squeezed out
½ cup chopped or torn fresh basil leaves, divided
1 (14.5 ounce) can petite-diced tomatoes (NOT drained)
12 ounces (about 3 ¾ cups) uncooked penne pasta
4 ounces (about 1 cup) grated mozzarella cheese, divided
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
  • In a large bowl, whisk together chicken broth, Alfredo sauce, garlic and salt until completely combined.
  • In the prepared baking dish, stir together raw chicken, spinach, ¼ cup of chopped basil leaves, tomatoes, and uncooked pasta. I like to use my hands to gently combine and evenly distribute all of the ingredients. Pour chicken broth mixture over top and stir to combine.
  • Cover the dish tightly with foil and bake for 40 minutes.
  • Uncover; stir. At this point you should check the pasta to make sure that it is al dente (firm but just about finished cooking). If it's still too hard, cover the dish and return to the oven until pasta is al dente. Then move on to the next step.
  • Sprinkle mozzarella and Parmesan cheeses over the top. Bake uncovered for 5-10 more minutes (or until cheese is melted, pasta is tender, and chicken is cooked through).
  • Garnish with remaining basil leaves just before serving.

12 oz. penne
1 tbsp. extra-virgin olive oil
1 lb. Boneless Skinless Chicken Breast
kosher salt
Freshly ground black pepper
1/2 tsp. oregano
1/3 c. white wine
2 garlic cloves, minced
1 1/2 c. chopped tomato
1 c. heavy cream
1 c. shredded mozzarella
1/2 c. finely grated parmesan (plus more for serving)
1 1/2 c. baby spinach
2 tbsp. chopped fresh parsley
pinch red pepper flakes (optional)

Steps:

  • In a large pot of salted boiling water, cook penne according to package instructions until al dente. Drain and set aside.
  • In a large skillet over medium-high heat, heat 1 tablespoon oil. Season both sides of chicken with salt, pepper and oregano and cook until golden and no longer pink in the middle, 8 minutes per side. Transfer chicken a cutting board and let it rest for 5 minutes before slicing into strips.
  • Make sauce: Add the white wine to deglaze the pan. When the wine is simmering, use a wooden spoon to scrape all the golden chicken bits from the pan. (They have a lot of flavor that you'll want in your sauce!)
  • Add tomatoes and garlic and cook until the tomatoes soften slightly, about 2 minutes. Add cream and bring mixture back to a simmer. Add mozzarella and Parmesan and stir until the cheese melts. Season sauce with salt and pepper.
  • Turn off heat and add in the cooked penne, baby spinach, parsley and red pepper flakes (if using). Toss until the pasta is evenly coated in sauce and the spinach has wilted slightly. Serve immediately.

12 ounces farfalle pasta
1 tablespoon olive oil
1 yellow onion (chopped)
2 eggs
1 ¼ cups milk
1½ teaspoons dried Italian seasoning
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon crushed red pepper flakes (optional)
½ cup sun dried tomatoes (chopped)
10 ounces frozen chopped spinach (thawed and well drained (see note))
14 ounce can artichoke hearts (drained and chopped)
2 cups chopped or shredded cooked chicken
2 cups shredded Monterey jack cheese (8 ounces)
¼ cup grated Parmesan cheese
½ cup bread crumbs (Panko or regular)
2 tablespoons grated Parmesan cheese
½ teaspoon paprika
1 tablespoon butter (melted)

Steps:

  • Preheat oven to 350° F. Spray a 13x9-inch baking dish or large casserole dish with cooking spray and set aside.
  • Cook the pasta according to the package directions. Drain and set aside.
  • In a medium skillet, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally, until onion softens and lightly browns, about 5 minutes. Remove from heat and set aside.
  • In a large bowl, whisk together the eggs, milk, Italian seasoning, salt, pepper and red pepper flakes (if using). Add the onion, sun dried tomatoes, spinach, artichokes, cooked chicken, Monterey jack cheese and Parmesan cheese to the bowl. Stir until well combined.
  • Add the pasta and gently stir until everything is evenly distributed. (If your bowl is not large enough to fit the pasta and the artichoke mixture, you can layer the pasta with the mixture in the baking dish. stirring a bit to combine the layers as you go.)
  • Transfer the pasta mixture to the prepared baking dish. Cover with foil and bake 25 minutes.
  • Meanwhile, prepare the topping: In a small bowl, combine the bread crumbs, Parmesan, paprika and melted butter. Stir to combine.
  • Sprinkle the casserole with the topping and continue to bake, uncovered, for 10 minutes more, until hot and golden brown on top.

1 pound penne
Salt
4 whole boneless, skinless chicken breasts, cut into bite-size chunks
Ground pepper
2 tablespoons butter
2 tablespoons olive oil
4 cloves garlic, minced
3/4 cup low-sodium broth, more if needed
3/4 cup dry white wine
1 bag baby spinach
2 cups grape tomatoes, halved lengthwise
4 ounces Parmesan, shaved with a vegetable peeler, plus more for serving

Steps:

  • Cook the pasta according to package directions in lightly salted water. Drain and set aside.
  • Sprinkle the chicken with salt and pepper. Heat the butter and olive oil over high heat in a large skillet. Add the chicken chunks in a single layer and do not stir for a minute or two in order to allow the chicken to brown on the first side. Flip the chicken and brown on the other side. Cook until done, and then remove the chicken from the skillet.
  • Turn the heat to medium. Add the garlic and quickly stir to avoid burning. After about 30 seconds, pour in the broth and wine, stirring to deglaze the skillet. Allow the liquid to bubble up, and then continue cooking until it's reduced by at least half (most of the surface of the liquid should be bubbling at this point).
  • Turn off the heat. Add the spinach, tomatoes, chicken, cooked pasta and Parmesan shavings to the skillet. Toss to combine; the spinach will wilt as you toss everything.
  • Add more Parmesan shavings and serve immediately! Serve with extra Parmesan shavings.

This is a simple pasta recipe that everyone I have fed with it loves. I got the recipe originally from a Paula Dean recipe but I have modified it a lot. This can be made ahead for OAMC or used for large crowds. I last used it to serve 120 people.

2 (10 ounce) packages frozen chopped spinach
4 lbs cooked chicken, boned, and shredded
2 (11 ounce) cans 98% fat-free cream of mushroom soup
1 cup fat-free mayonnaise
1 cup light sour cream
2 cups low-fat cheddar cheese (grated)
salt & freshly ground black pepper
1 cup low sodium chicken broth (approximately)
1 (8 ounce) box penne pasta
1 (6 ounce) can French fried onion rings

Steps:

  • Directions.
  • Cook Pasta until almost done. Remove the outer wrappers from the box of spinach. Open 1 end of each box. Microwave on full power for 3 minutes, until thawed. Drain the spinach and put into a large bowl. Add the shredded chicken, the soup, mayonnaise, sour cream, Cheddar, salt and pepper, to taste, and chicken broth. Mix well with a spatula.
  • Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula.
  • Wrap the uncooked casserole securely with plastic wrap, then with aluminum foil. Place each pan into a plastic freezer bag and seal. Place into fridge.
  • Allow casserole to set up at least 1 hour in refrigerator. When ready to bake, remove the plastic wrap and foil. Bake covered at 350 degrees F for about 30 minutes until bubbly. Add fried onion rings to top and bake uncovered. Let sit for 10 minutes before serving.

6 ounces farfalle (bow tie) pasta
1 ½ heads broccoli, cut into bite-sized pieces
3 tablespoons butter, divided
1 small red onion, chopped
2 cloves garlic, or more to taste, minced
2 cups baby spinach leaves
1 ½ cups shredded cooked chicken
½ cup sun-dried tomatoes packed in oil, drained and chopped
1 (14 ounce) can artichoke hearts, drained and quartered
1 (8 ounce) package shredded Italian cheese blend
¼ cup all-purpose flour
1 ½ cups milk, or more to taste
1 teaspoon Italian seasoning
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook pasta at a boil, stirring occasionally, for 8 minutes. Add broccoli and cook for 2 more minutes; pasta will be slightly undercooked.
  • While the pasta is cooking, melt 1 tablespoon butter in a skillet over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Transfer to a large bowl.
  • Drain pasta and broccoli. Run under cold water and drain again. Add to the onion mixture along with spinach, cooked chicken, sun-dried tomatoes, artichoke hearts, and Italian cheese.
  • Melt remaining 2 tablespoons butter in a medium skillet over medium heat until bubbly. Slowly whisk in flour; cook and whisk for 1 minute. Gradually add milk, whisking constantly. Add enough milk to thin the sauce enough so it will coat all ingredients in the bowl; it will thicken more in the oven.
  • Pour sauce into the bowl and mix until well combined. Transfer contents to a 9x13-inch baking dish. Sprinkle Parmesan cheese over top.
  • Bake, uncovered, in the preheated oven until hot and bubbly, 20 to 30 minutes.
