I enjoy this tasty dish with a garden salad, corn on the cob and a warm dinner roll. The greatest thing about casseroles like this one - besides eating them - is that they can be prepared ahead of time. This recipe is perfect for hearty appetites.

POTATO SHELL:
3-1/2 cups mashed potatoes (without added milk and butter)
1-1/2 cups shredded cheddar cheese
1 can (2.8 ounces) french-fried onions
2 tablespoons minced fresh parsley
Salt to taste
FILLING:
1-1/2 cups shredded or cubed cooked chicken or turkey
1 package (10 ounces) frozen mixed vegetables, thawed and drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/4 cup whole milk
1/2 teaspoon ground mustard
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • Combine all of the potato shell ingredients; spread over the bottom and up the sides of a greased 2-qt. shallow baking dish. In a large bowl, combine filling ingredients; pour gently into shell. , Bake, uncovered, at 375° for 40 minutes or until heated through. Let stand for 5 minutes before serving.

4 eggs, yolks separated
salt, to taste
pepper, to taste
⅓ cup shredded parmesan cheese
⅓ cup crumbled bacon
¼ cup chives, chopped

Steps:

  • Preheat oven to 450°F/230°C.
  • Separate the eggs: egg whites in one bowl and egg yolks each into their own bowls.
  • Using an electric mixer or whisk, mix the egg whites until thick and fluffy.
  • Salt and pepper to taste. Fold in bacon, parmesan cheese, and chives. Do not overfold.
  • Scoop onto baking tray and make an indent in the middle using the back of a spoon.
  • Bake for 5-8 minutes or until egg whites start to brown.
  • Place the egg yolks into center of the egg whites. Bake for 3 more minutes.
  • Enjoy!

Creamy chicken and veggies nestled in a fluffy cloud of mashed potatoes, topped with melted cheese, true comfort food at it's finest! A simple and easy recipe, this casserole can be assembled in advance and popped into the oven an hour before serving. Serve with warm buttered biscuits. Enjoy! Tip: The hot mashed potatoes are especially tasty prepared with chicken broth in place of water, and cream cheese in place of the usual milk & butter. I sometimes skip the cream of chicken soup--equally delicious! Can be made using leftover rotisserie chicken.

3 1/2 cups hot mashed potatoes
2 cups cooked cubed chicken (3 skinless boneless breasts)
1 (16 ounce) package frozen mixed vegetables, thawed and drained
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup sour cream
2 tablespoons minced onion flakes (or snipped fresh chives)
1/2 teaspoon dry mustard (or 2-3 teaspoons Dijon mustard)
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
2 cups shredded sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 13 by 9 inch shallow baking dish.
  • Spread hot mashed potatoes evenly across the bottom of the baking dish, coming up the sides somewhat to create a shell.
  • In a large bowl, stir together the chicken, vegetables, soup, sour cream, onion or chives, mustard, garlic, and pepper.
  • Spread the chicken mixture on top of the mashed potatoes, and sprinkle evenly with the shredded cheese.
  • Bake uncovered for 45 minutes (or bake for about 1 hour if made ahead and refrigerated), until cheese is melted and casserole is hot and bubbly.
  • Remove casserole from the oven, let stand for 10 minutes before serving.
  • Good served with warm buttered biscuits.
  • Note: This casserole is even more over-the-top awesome made with a breadcrumb or stuffing topping. Assemble the casserole as directed, reserving the grated cheese. During the last 30 minutes of baking, top casserole with 1-2 cups freshly torn soft breadcrumbs (or stuffing mix), seasoned with a pinch of poultry seasoning and a few dashes of celery seeds. Drizzle with 2-3 tablespoons of melted butter, and then top with the grated cheese. Bake until topping is lightly browned and casserole is hot and bubbling. Extra yummy!

Steps:

  • Separate the yolk from egg whites.
  • In a chilled metal bowl, whisk the whites until stiff peaks form. Mix in whatever you want. We use bacon, chives and parmesan cheese.
  • Spoon the whites into even piles on a baking sheet and create a well in the center of each pile with the back of the spoon.
  • Bake at 450°F (230°C) for 3 minutes.
  • Put a yolk in each well, bake another 3 minutes.
  • Enjoy!

These are very easy to do, very fun to make, super cool to look at, and very enjoyable to eat. This could also be a pretty cool menu item for a Mother's Day brunch. Serve on generously buttered toast with a pinch of cayenne and a sprinkle of coarse sea salt.

2 large eggs
¼ teaspoon white vinegar
1 pinch salt
1 teaspoon unsalted butter, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone liner (such as Silpat®) and butter lightly.
  • Crack 1 egg into a clean hand and then separate carefully by letting the egg white drip down between your fingers into a large bowl. Reserve the yolk in a separate, smaller bowl. Repeat with second egg.
  • Pour vinegar into the egg whites, add salt, and whip with a whisk until we have relatively firm, but not dry, peaks.
  • Spoon onto the prepared baking sheet, making sure they are not too wide, as we want some height here. Shape as desired and make a small depression in the top centers using a spoon for yolks.
  • Bake in center of the preheated oven until they just start to take on some golden color, 5 to 6 minutes. Add yolks and bake until yolks are heated through, but still runny, 3 to 4 minutes more. Serve on butter toast.
