No-Cook Chocolate Coconut Budino image

3/4 cup unsweetened almond milk
3/4 cup coconut yogurt, such as COYO (dairy-free preferred)
1/4 cup good quality unsweetened cocoa powder
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
Pinch of kosher salt
1/3 cup chia seeds
Chopped chocolate covered almonds and whole raspberries to serve

Steps:

In a medium bowl whisk together the almond milk, coconut yogurt, cocoa powder, maple syrup, vanilla and salt. Stir in the chia seeds. Cover and refrigerate for at least 6 hours or until thickened to the consistency of pudding. Serve topped with the chocolate almonds and raspberries.

5 cups mochiko sweet rice flour
3 cups brown sugar
1 teaspoon baking soda
1 teaspoon vanilla
1 (12 ounce) can frozen coconut milk
2 1/2 cups water

Steps:

Mix dry ingredients together.
Add liquid ingredients, and mix well.
Pour into a greased 9x13-inch pan and bake at 350°F for 45 minutes to 1 hour.
Cut into small squares to serve.
