INSTANT POT CHICKEN PAPRIKA
Tender chicken thighs in a flavorful creamy tomato and paprika sauce served over pasta or rice.

- Turn your Instant Pot to the saute setting. When the display says HOT add in the oil and swirl it around. Add in the onion and saute for 4-5 minutes. Pour in the chicken broth and scrape the bottom of the pot. Turn off the Instant Pot.
- Add in the chicken. Sprinkle the chicken with paprika, marjoram, salt, pepper and red pepper flakes. Then dump the tomatoes on top of the chicken.
- Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for fresh thighs or 15 minutes for frozen thighs. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
- Turn the Instant Pot to saute. In a small bowl stir together 2 Tbsp of cornstarch with 3 Tbsp of water, until smooth.Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Turn off the Instant Pot. Stir about 1/2 cup of the sauce from the pot into the sour cream to temper it. Then stir the sour cream into the Instant Pot. Taste test the sauce and add more salt and pepper to taste.
- Serve the chicken and sauce over rice, egg noodles, orzo or cauliflower rice.

- Add butter to Instant Pot, turn to saute' until hot. Mix flour, salt, pepper and paprika on a plate. Dip chicken breasts in seasoned flour, coating well. Add chicken to cooker, lightly browning on both sides. Using tongs, remove chicken from pot. Add onion and cook/stir until translucent; add garlic and cook for 1 minute. Return chicken to pot and pour chicken broth to cover. Lock lid, set to high, and cook 8 minutes. Let pressure release naturally 10 minutes before quick releasing remaining pressure and safely removing the lid. Use tongs to set aside chicken breasts. Make sauce by using saute' setting on high with the lid off, and wait until cooking liquid is simmering. Thoroughly combine sour cream and cornstarch, then slowly stir into simmering liquid until fully integrated and sauce is creamy and thick. Salt and pepper to taste. Pour some sauce over chicken and serve topped with parsley and a pinch of paprika. Excellent over rice. This is from Bob Warden's "Slow Food Fast" book.
PAPRIKA CHICKEN WITH SOUR CREAM GRAVY
Steps:
- Heat the oven to 400 F. Lightly oil a large baking dish and set it aside.
- Heat the olive oil in a large skillet or sauté pan.
- Sprinkle the chicken breasts on both sides with kosher salt and freshly ground black pepper.
- Brown the chicken breasts in the hot oil.
- Spread the sliced onions across the bottom of the prepared baking dish. Arrange the chicken on top of the onions and sprinkle the breasts evenly with the paprika.
- Pour the broth over the chicken.
- Bake it for 45 to 55 minutes or until the chicken breasts register at least 165 F on an instant-read thermometer.
- Transfer the chicken to a plate and cover it loosely with foil to keep it warm.
- Skim the fat from the juices remaining in the baking dish, then strain the liquid or put it through a gravy separator.
- Put the strained juices in a saucepan (or use the baking dish if it is safe for the stovetop). Bring the liquids to a boil over medium-high heat. Turn the heat down to low and simmer for 3 to 4 minutes to reduce the liquid and concentrate the flavors.
- Whisk in the sour cream and flour mixture and heat, whisking constantly, until smooth and thickened. Do not let it boil.
- Serve the gravy with the chicken. If you prefer skinless meat, simply pull the skin off and discard it before you top the breast with gravy.

My father would make this when I was a child. When I make it now, it reminds me of home. It is a milk, rich and creamy recipe. My family's all time favorite! A one-skillet dish. Serve over hot cooked egg noodles or rice, if desired.

- You can leave breasts whole or cut them up, whatever your preference. In a large skillet, heat oil over medium-high heat. Add chicken and pan-fry until cooked through and juices run clear, about 10 minutes. Remove chicken from skillet and set aside.
- Using the same skillet, cook onion in butter until translucent but not brown, about 5 to 8 minutes. Season with paprika and salt. Pour chicken stock into the pan, and bring all to a boil. INSTANT POT CHICKEN AND GRAVY RECIPE

- In a small bowl, combine salt, paprika, thyme, pepper, and garlic powder in a small bowl.
- Sprinkle chicken with seasonings and rub on both sides so that each chicken breast is completely covered.
- Press SAUTE button on Instant Pot.
- Add butter to hot pot and let it melt.
- Cook chicken breasts until browned (about 2-3 minutes per side - we aren't cooking the breasts, just browning the outside).
- Transfer browned chicken breasts to a plate.
- Press CANCEL button to turn off the saute.
- Pour chicken broth to pot and scrape any browned bits on the bottom of the pot (I like to use a wooden spatula to do this).
- Place trivet inside pot and lay chicken breasts on top of trivet.
- Place lid on the Instant Pot.
- Press the PRESSURE COOK button and set timer for 5 minutes.
- After timer is finished, let the pot do a NATURAL RELEASE for 10 minutes, then move the valve to VENTING to release the remaining pressure.
- Remove the lid, then remove the chicken to a plate and cover with foil to keep them warm.
- In a small bowl, mix cornstarch and water together until completely dissolved.
- Press the SAUTE button.
- Whisk in the cornstarch mixture to thicken the gravy until it reaches the consistency you prefer.
- Add salt and pepper as desired.
- Press CANCEL and serve chicken with gravy on top.

- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and toss with butter, parsley, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Keep noodles warm while preparing the chicken.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil, shallots, and garlic; saute until fragrant, 2 to 3 minutes. Pour in pasta sauce, chicken broth, and red wine vinegar.
- Season chicken with remaining 1 teaspoon salt and 1/2 teaspoon pepper. Add chicken to the pot. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method.
- Place 1/2 cup yogurt in a small bowl. Add in 1/2 cup of sauce, a tablespoon at time, to temper the yogurt. Add paprika and blend well. Pour yogurt mixture back into the pot. Shred the chicken thighs and serve over cooked noodles. Garnish each serving with a dollop of yogurt.

INSTANT POT 3-INGREDIENT CHICKEN AND GRAVY
I was worried this would be too salty, and the ingredients didn't sound appealing to me at all. I couldn't figure out how it would make a delicious gravy, but surprise surprise--it sure did. Great over the top of chicken or mashed potatoes. Surprisingly simple but delicious. I used chicken thighs because I prefer dark meat, but you could use chicken breasts (cook for 12 minutes if using breasts).

- Add water or broth into instant pot. Add chicken.
- Sprinkle onion soup mix over top, and dump cream of mushroom soup on top of chicken. Do not stir.
- Cover and make sure the valve is on sealing. Set the timer to manual (high pressure) for 15 minutes.
- When the timer beeps let the pressure release naturally for 5 to 10 minutes and then release the rest of the pressure by moving the valve to venting. Remove the lid.
- Use a spoon to break up the chicken.
- Serve chicken and gravy over potatoes, noodles, toast, biscuits, or rice.
