1/4 cup finely chopped walnuts

1/2 teaspoon seasoned salt
1/4 teaspoon pepper
1 pound boneless skinless chicken breasts
1/4 cup butter, melted
Warm marinara sauce, optional

Steps:

  • Preheat oven to 400°. Line a baking sheet with foil; grease foil., In a shallow bowl, mix the first 7 ingredients. Cut chicken into 1-1/2-in. pieces. Dip in melted butter, then in cracker mixture, patting firmly to adhere. Place on prepared pan., Bake 20-25 minutes or until golden brown and chicken is no longer pink. If desired, serve with sauce.

Vegetable oil, for frying
1 c. marinara
1/4 lb. mozzarella, cut into 1/2" cubes
2 tbsp. chopped fresh basil

Steps:

  • Preheat oven to 350º. Prepare breading station with three large bowls: In one bowl, whisk together bread crumbs, garlic powder, paprika and Parmesan; in another bowl, add egg and water; in the last bowl, add flour.
  • Season chicken with salt and pepper. Coat each piece of chicken in flour and shake off excess, then dip into egg and coat in bread crumb mixture. Repeat steps for remaining chicken and set aside on a plate.
  • In a deep cast-iron skillet, warm 1" oil over medium-high heat. Add chicken and cook until golden, 5 to 7 minutes. Drain on a paper towel-lined plate.
  • Arrange chicken in a baking dish in a single layer. Add a small spoonful of marinara over each piece of chicken and top with a cube of mozzarella.
  • Bake until chicken is warmed through and cheese is melty, 3 to 5 minutes.
  • Garnish with basil and serve immediately.

Steps:

  • Cut the chicken tenders into 1.5-inch (4 cm) pieces.
  • Take a knife and carefully cut a hole into the chicken tenders. Make sure to not cut all the way to the other side.
  • Stuff the holes with mozzarella cheese.
  • Add garlic powder, dried basil, dried parsley, and salt to the panko bread crumbs.
  • Batter the chicken in flour, egg, then panko bread crumb mixture.

1 pound ground chicken
1/2 teaspoon Italian seasoning
1 large egg
1 1/4 cups panko
Kosher salt and freshly ground black pepper
Fifteen 1/2-inch cubes part-skim mozzarella (from 1 pound piece of mozzarella)
2 tablespoons grated Parmesan
Warmed marinara sauce, for dipping

Steps:

  • Fill a large Dutch oven or pot halfway with oil. Attach a deep-fat fry thermometer on the side. Heat over medium to 350 degrees F.
  • Meanwhile, mix together the chicken, Italian seasoning, egg, 1/4 cup panko, 1 teaspoon salt and a few grinds of pepper in a large bowl.
