Chicken, Penne,Pesto & Sundried tomatoes... oh yes. This gem comes from my Best of Arizona Cookbook contributed by the 5 star Armadillo Grill. The cayenne pepper brings a little zing, if you want more hot... add more.

10 ounces boneless chicken breasts
2 red bell peppers (cut in 1/2-inch strips)
1 1/2 teaspoons cayenne pepper
1/2 lb penne pasta
2 teaspoons olive oil
4 tablespoons onions (minced)
1 tablespoon garlic (minced)
2 cups white wine
1/2 cup sun-dried tomato (julienned)
1/2 cup pesto sauce
2 cups half-and-half
1/3 cup parmesan cheese
2 tablespoons fresh basil

Steps:

  • Preheat broiler and place chicken breasts and red pepper strips to baking sheet, sprinkle with cayene; broil until golden brown (about 20 minutes); set aside, and slice chicken in diagonal pieces.
  • Begin cooking pasta until al dente.
  • In a saucepan, heat oil and saute' onion and garlic.
  • Deglaze pan with white wine and reduce liquid, adding tomatoes & cook 3-4 minutes.
  • Then add pesto, cream and seasonings, stir until fully incorporated.
  • Add drained pasta to sauce and toss, then divide mixture among 4 warm plates and top each with chicken slices and red peppers.
  • Garnish with Parmesan and fresh basil leaves.

1 tablespoon butter
1 tablespoon salt, or more to taste
1 tablespoon ground black pepper, or more to taste
1 tablespoon garlic powder
1 pound boneless skinless chicken breasts, cut into bite-size pieces
1 (14.6 ounce) package penne pasta
5 cups fresh spinach, or more to taste
1 cup grated Parmesan cheese
1 tablespoon red pepper flakes

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Spread butter, 1 tablespoon salt, 1 tablespoon pepper, and garlic powder over chicken breasts on a plate or cutting board.
  • Grill the chicken breasts until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Pour penne into a colander to drain.
  • Place the penne, chicken breasts, spinach, 1/2 cup Parmesan cheese, and red pepper flakes in the pot. Cook and stir over low heat until the spinach is wilted but still green, about 7 minutes. Season with the remaining 1/2 cup Parmesan cheese, salt, and pepper.
  • Mix pasta into spinach-chicken mixture; toss well.

4 garlic cloves
2 cups cherry tomatoes
3 cups uncooked mezze penne pasta
3 cups chicken broth
3/4 cup dry white wine(ex Chardonnay)
1 1/4 cups lightly packed fresh basil
2 cups diced grilled chicken (cooked)
1/2 tsp salt
1/2 tsp pepper
1 oz. parmesan cheese grated

Steps:

  • Option- cook chicken in deep covered baker 6-7 min and chop with salad chopper. rub oil on Deep Covered Baker. Slice garlic or crush with garlic press into baker. Add tomatoes. Cover, microwave on High 4-5 min. Stir after 2 min. Add Pasta, broth, wine, salt and pepper. Cover and microwave on HIGH 16-18 min or until pasta is tender, stirring after 10 min. Meanwhile, coarsley chop basil. Reserve 2 tbsp for garnish. Grate cheese. Remove baker from microwave and remove lid. Add remaining basil,cheese and chicken to baker; mix well. Garnish with reserved 2 tbsp basil, additional Parmesan cheese and pepper.

2 cups penne pasta, uncooked
2 teaspoons olive oil
1 medium onion, sliced into thin rings
1 teaspoon sugar
2 cups grilled chicken, cut into strips
1 1/2 cups chicken broth
1/2 cup asparagus, cut diagonally in 1 inch pieces
1/4 cup whipping cream
3 garlic cloves, minced
3/4 cup crumbled gorgonzola
1/2 cup fresh basil leaf, chopped

Steps:

  • Cook pasta as directed on package.
  • Meanwhile, heat oil in skillet over medium heat.
  • Add onions and sugar; cook and stir 3-5 minutes or until onion is tender.
  • Remove from heat and set aside.
  • Drain and rinse pasta and place in large skillet.
  • Add chicken, broth, asparagus, cream and garlic.
  • Cook and stir 5 minutes or until sauce has thickened slightly.
  • Add onions, cheese and basil.
  • Cook 2 minutes or until heated through, stirring occasionally.
  • Serve and enjoy!

4 garlic cloves, peeled
2 cups cherry tomatoes (or grape)
3 cups chicken broth
3 cups penne, uncooked
3/4 cup dry white wine (such as Chardonnay)
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1 1/4 cups basil leaves, lightly packed, divided
1 ounce parmesan cheese, grated (about 1/4 cup packed)
2 cups chicken breasts, grilled and diced

Steps:

  • Spray deep microwaveable baker with olive oil. Slice garlic into baker. Add tomatoes. Cover; microwave on high 4-5 minutes or until tomatoes begin to burst, stirring after 2 minutes. Crush tomatoes with a spoon or spatula. Add pasta, broth,wine, salt and black pepper.
  • Return baker to microwave; cover and microwave on high 16-18 minutes or until pasta is tender, stirring after 10 minutes. Meanwhile, coarsely chop basil. Reserve 2 tbsp for garnish. Grate cheese.
  • Garefully remove baker from microwave and remove lid, lifting away from you. Add remaining basil, cheese and chicken to baker; mix well. Garnish with reserved 2 tbsp basil, additional Parmesan cheese and black pepper if desired.
