- Empty seasoning mix into large resealable plastic bag. Add half the chicken; seal bag. Turn bag over several times to evenly coat chicken with seasoning. Remove chicken from bag. Repeat with remaining chicken.
- Grill chicken 3 min. on each side. Brush with barbecue sauce; grill 2 min. on each side or until done (165ºF).

- Stir together the vegetable oil, cider vinegar, garlic powder, black pepper, salt, basil, and thyme in a bowl; set aside.
- Lay out 4 12x12 inch squares of aluminum foil. Place 1 chicken breast in the center of each square, top with potatoes, onions, bell peppers, and mushrooms. Ladle 1/4 of the sauce on each and fold the foil around the ingredients to form four sealed packets.

I came up with this delicious meal salad after I found I was all too often relying on prepackaged deli salads that were too expensive and not always the freshest. This is quick and easy, can be prepared ahead and scaled up or down depending on the servings needed.

- Mix lime juice, olive oil, chili powder, cumin, salt, and black pepper together in a resealable plastic bag along with the chicken breasts. Marinate in the refrigerator at least 1 hour to overnight.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cook chicken on the preheated grill until juices no longer run pink, about 5 minutes per side. Allow to cool for about 5 minutes; roughly chop and refrigerate.
- Toss romaine lettuce, baby greens, corn, Cheddar cheese, black beans, and cucumber together in a large bowl. Set aside.
- Mix ranch dressing, salsa, and cilantro together in a small bowl. Pour dressing over salad and toss gently. Sprinkle salad with crushed taco chips and diced chicken and serve immediately.

- In small bowl, combine marinade ingredients; remove 1/4 cup and combine with chicken in resealable plastic bag.
- Turn to coat; marinate in refrigerator 30 minutes or up to 2 hours, turning occasionally.
- Meanwhile, in microwave-safe dish, combine potatoes and water.
- Cover and microwave on HIGH 9 to 10 minutes or until just tender; cool.
- When potatoes are cool enough to handle, alternately thread with bell pepper and zucchini onto eight 10 to 12-inch skewers; brush with remaining marinade.
- Remove chicken from plastic bag; discard marinade from chicken.
- Grill chicken over medium to medium-low coals 30 to 40 minutes or until juices run clear, turning occasionally.
- About 10 minutes before chicken is done, add vegetables to grid; reserve marinade.
- Grill until tender and lightly browned, turning and basting occasionally with reserved vegetable marinade.
- Serve chicken and vegetables with tortillas and salsa, if desired.
