Steps:
- Heat olive oil in a large pot.
- Add onions, carrots and celery. Saute on medium heat for 3-5 minutes.
- Add garlic, stir for 30 seconds, just until fragrant.
- Add broth and bay leaves. Simmer for 20-30 minutes
- Add pasta. Simmer for 5 minutes..
- Add chicken. Simmer for 3-5 minutes until chicken is heated through and pasta is cooked.
- Add salt and pepper.
- Remove bay leaves, serve.

ELBOW MACARONI CHICKEN NOODLE SOUP
Steps:
- In a large crock pot, add chicken breasts, carrots, onion, fennel, celery, garlic, olive oil, thyme and a bay leaf.
- Pour chicken broth and water over the chicken mixture and season heavily with salt and pepper to taste.
- Cover and cook on low heat 3-4 hours.
- Remove cooked chicken breasts with a slotted spoon and set aside; shred with a fork.
- In the hot broth, add the elbow macaroni pasta and basil. Cooke until the noodles are tender, about 8-10 minutes (on low heat).
- Add the chicken back in; gently mix together. Serve with fresh Parmesan cheese!

- Bring a large pot of cold water to a boil over high heat and salt it generously. Add the pasta and boil, stirring occasionally, until al dente, about 8 minutes. Drain.

- Melt butter in heavy large pot over medium heat.
- Add mushrooms, celery, carrots and onion.
- Cook until celery and onion are tender, about 5 minutes.
- Add flour and cook 3 minutes, stirring frequently.

- Pat chicken dry with paper towels; sprinkle with salt and pepper. In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken in batches, skin side down; cook until dark golden brown, 3-4 minutes. Remove chicken from pan; remove and discard skin. Discard drippings, reserving 2 tablespoons., Add onion to drippings; cook and stir over medium-high heat until tender, 4-5 minutes. Add garlic; cook 1 minute longer. - Place enough water in a 5 quart pot over high heat to boil the pasta. Place the bouillon in the water and bring to a boil. Place the rotini in the boiling water and cook according to package directions. Drain and set pasta aside.

- Bring chicken stock to a boil; cook chicken breasts at a boil until no longer pink in the center, 15 to 20 minutes. Remove chicken, cool, and cut meat from bone; keep chicken stock at a low simmer.

- Fill a large pot with 14 cups water, chicken pieces, backbone, wings, parsley, thyme, bay leaf, salt, and peppercorns. Bring to a boil. Skim foam, reduce heat, and gently simmer for 25 minutes. Remove chicken (except wings); continue simmering while you discard skin and remove meat from bones. Cover meat and refrigerate; return bones to pot and simmer 3 1/2 hours more.
- Strain broth through a fine-mesh sieve and discard solids, including bones and wings. Skim fat and transfer broth to a clean pot. Add onions, carrots, fennel, and tomatoes. Bring to a boil, reduce heat, and simmer until vegetables are very tender, 25 minutes.

EASIEST CHICKEN NOODLE SOUP
The majority of shortcut chicken soup recipes use rotisserie chicken. It's a convenient hack, but cooked chicken doesn't absorb flavors very well. On the other hand, sautéing ground chicken in olive oil with garlic, coriander and celery seeds (or fennel seeds and rosemary, or herbes de Provence) creates a deeply complex base. Add the vegetables, then the stock and the noodles for a complete meal that cooks in 30 minutes. You can use egg noodles, cavatelli or alphabet noodles, but you may want to adjust the amount of stock to taste, since they'll each absorb a different amount of liquid.
