4 boneless skinless chicken breasts
salt, to taste
pepper, to taste
onion powder, to taste
garlic powder, to taste
1 medium onion, diced
1 (14 1/2 ounce) can Italian-style diced tomatoes (undrained)
1/2 cup chicken broth
1 cup mozzarella cheese, shredded
1/3 cup grated parmesan cheese
1/3 cup grated romano cheese

Steps:

  • Preheat oven to 375 degrees.
  • Season chicken with salt and pepper and powders.
  • Heat oil over medium-high heat.
  • When pan is hot, add chicken and saute 2 minutes each side.
  • Remove chicken.
  • Saute onions in pan for 4 minutes.
  • Add tomatoes and broth and cook for approximately 8 minutes to blend flavors.
  • Place reserved chicken in pan and stir to combine.
  • Transfer chicken w/mixture to a 9x13 baking dish.
  • Mix cheeses together and sprinkle over chicken.
  • Bake for about 15 minutes.

1 large sweet onion, thinly sliced
1 teaspoon olive oil
4 large fresh button mushrooms, thinly sliced
2 tablespoons tomato paste
2 tablespoons chopped fresh basil
1 teaspoon chopped fresh oregano
1 cup chicken broth or stock
2 boneless skinless chicken breasts (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium zucchini, thinly sliced

Steps:

  • Prepare grill for medium heat or preheat oven to 450°. In a large skillet, cook onion in oil over medium-high heat until crisp-tender, 4-5 minutes. Add mushrooms; cook until tender, 4-5 minutes. Stir in tomato paste, basil and oregano; cook until tomato paste starts to caramelize, 6-8 minutes. Stir in broth, stirring to loosen browned bits from pan. Bring to a boil; cook until sauce has thickened, 8-10 minutes. Remove from heat; cool slightly. , Cut each chicken breast into 3 long strips. Divide chicken strips between two 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil; sprinkle with salt and pepper and top with zucchini. Spoon tomato mixture over zucchini. Fold foil around mixture, sealing tightly., Place packets on grill or in oven; cook until chicken is no longer pink, 15-20 minutes, turning once. Open packets carefully to allow steam to escape. If desired, top with additional basil.

Onion powder and garlic powder, salt & pepper
4 Tbsp olive oil
1 medium onion, diced
1 can (14.5 oz.) Italian seasoned diced tomatoes
1/2 cup chicken broth
1 cup Kraft Shredded Mozzarella Cheese
1/3 cup Kraft Grated Parmesan
1/3 cup Kraft Grated Romano

Steps:

  • Preheat oven to 375ºF. Season chicken with powders, salt and pepper. Heat oil over medium-high heat in an oven-safe pan. When pan is hot, add chicken and sauté 2 minutes each side. Remove chicken. Sauté onions in pan for 4 min. Add tomatoes and broth and cook 8 minutes to blend flavors.
  • Place reserved chicken in pan, stir to combine. Mix cheeses together and sprinkle over chicken.
  • Bake about 15 minutes. Serve with rice or pasta (I recommend Angel Hair).
