Incredible Chicken Strawberry Spinach Salad image

This is a very harty salad that is packed full of flavor and nutrition. My husband and I love to make this and enjoy it with a nice glass of white Zinfandel. You'll be hooked after you try it!

Number Of Ingredients 8

1 bag prewashed spinach
4 strips turkey bacon
2 hard-boiled eggs
1 cup sliced strawberry
1/4 cup slivered almonds
3 -4 boneless chicken breasts
1/3 cup fat-free Italian salad dressing
1/2 cup spinach salad dressing (name brand in a jar)

Steps:

  • cut chicken up into small cubes and place in frying pan.
  • Add 1/3 cup of the italian dressing and cook until chicken is no longer pink in separate frying pan (or in microwave) cook bacon.
  • Cut into smaller pieces when done and set aside.
  • Slice strawberries and set aside.
  • slice hard boiled eggs and set aside.
  • in large bowls divide the spinach leaves and top with the chicken, bacon, strawberries, egg, and almond slices.
  • Drizzle the spinach salad dressing or other type of dressing over and enjoy!

4 medium chicken breast halves, skinless, boneless (1 1/4 lb)
1 cup low sodium chicken broth
6 cups spinach, fresh, torn
2 cups strawberries, quartered
1/4 cup pecans, toasted
salt
pepper

Steps:

  • Sprinkle chicken breast with salt and pepper.
  • Pour chicken broth in large skillet and bring to a boil.
  • Add chicken; reduce heat, cover and simmer until chicken is tender and no longer pink, turning once halfway through cooking time.
  • Remove chicken from broth with slotted spoon; discard broth.
  • Thinly slice the cooked chicken.
  • In large bowl, toss together spinach chicken and strawberries.
  • Drizzle with Warm Citrus Dressing Recipe #422552 and nuts.
  • Add salt and pepper to taste.
  • Serve immediately.

2 teaspoons corn oil
1 skinless, boneless chicken breast half - cut into bite-size pieces
½ teaspoon garlic powder
1 ½ tablespoons mayonnaise
½ lime, juiced
½ teaspoon ground ginger
2 teaspoons milk
2 cups fresh spinach, stems removed
4 fresh strawberries, sliced
1 ½ tablespoons slivered almonds
freshly ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Place chicken in skillet, season with garlic powder and cook 10 minutes on each side or until juices run clear. Set aside.
  • In a bowl, mix mayonnaise, lime juice, ginger and milk.
  • Arrange spinach on serving dishes. Top with chicken and strawberries, sprinkle with almonds and drizzle with dressing. Season with pepper to serve.

1 cup green grape

2 tablespoons sliced almonds, toasted

Steps:

  • Arrange spinach on 4 chilled plates.
  • Place chicken onto spinach and top with strawberries.

Steps:

  • In a small heavy saucepan or skillet, melt butter.

1/4 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into thin strips

DRESSING:
1/2 cup white vinegar
1/3 cup sugar
1 teaspoon dried minced onion
1 teaspoon ground mustard
1/2 teaspoon salt
1 cup canola oil
1 tablespoon poppy seeds
SALAD:
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

Steps:

  • In a large bowl, combine limeade concentrate and pepper; add the chicken. Cover and refrigerate for 2 hours., Drain and discard marinade. In a large skillet, saute chicken in oil until no longer pink., Meanwhile, in a blender, combine the vinegar, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream.
