Healthier chicken tenders cooked in a simple delicious sauce. The chicken tenderloins turn out so tender, juicy, succulent, and flavorful.

1 tablespoon olive oil
2 tablespoon butter (divided)
1 pound (450g) chicken tenderloins (chicken mini fillets)
2 teaspoons paprika
½ teaspoon salt
¼ teaspoon ground black pepper
4 cloves garlic (minced or crushed)
1 teaspoon Italian seasoning
1 tablespoon fresh parsley (chopped - for garnish)

Steps:

  • Add olive oil and melt 1 tablespoon of butter in a pan/skillet over medium heat.
  • Add the chicken tenders, season with paprika, salt, and pepper.
  • Cook for 3 minutes on each side (season each side as you cook).
  • Make room for the garlic, melt the remaining butter, and add the garlic. Cook for 30 seconds or until the garlic becomes fragrant.
  • Season with Italian seasoning, and cook for one more minute.
  • Add 2 tablespoons of water to the pan to deglaze it, and scrape off any bits stuck to the bottom of the pan (that's where all of the good flavor is).
  • Garnish with chopped fresh parsley or basil leaves, and serve warm.

1 tablespoon butter
1 onion, sliced
1 clove garlic, crushed
6 boneless skinless chicken breasts
1 red bell pepper, finely chopped
1 green pepper, finely chopped
250 g button mushrooms, sliced
1/3 cup apple juice
1/2 cup chicken stock
150 ml sour cream
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
2 teaspoons french/english mustard
2 teaspoons lemon juice
2 tablespoons fresh parsley, finely chopped
1 tablespoon flour
salt and pepper

Steps:

  • Heat butter and fry onion and garlic until soft.
  • Cut the chicken breasts into strips and brown lightly.
  • Add green and red peppers and mushrooms and stir fry until just done.
  • Add apple juice and stock, reduce heat, and simmer until meat is tender and done.
  • Stir in sour cream, tomato paste, Worcester sauce, mustard, lemon juice and parsley and mix.
  • Blend the flour with a little water to form a paste and stir in.
  • Heat until the mixture comes to a boil.
  • Season with salt and pepper.
  • Serve with pasta or rice.
