CREAMY SAUTEED CHICKEN AND SPINACH
An interesting lowfat spinach saute under cooked chicken breast. Another great recipe for dieters from Betty Crocker's New Choices Cookbook!

Steps:
- Spray a large skillet with nonstick spray.
- Heat the skillet on medium heat.
- Cook the chicken 2 minutes per side.
- Reduce heat to med-low.
- Add milk, chicken broth, and the onion.
- Cook 5 minutes, turning the chicken on occasion, until the onions are tender.
- Add the spinach and cook 3-4 minutes, stirring occasionally, until the spinach is wilted and the juices of the chicken run clear.
- Remove the chicken from the skillet, and keep it warm.
- Increase heat to medium.
- Cook the spinach mixture until most of the liquid has evaporated, about 3 minutes.
- Stir in salt, pepper, and nutmeg.
- Serve the chicken on top of the spinach.
CLASSIC LEMON CHICKEN WITH SAUTEED SPINACH
Steps:
- Squeeze the juice from one and a half lemons and reserve. Cut the remaining half lemon into very thin slices. Remove seeds and set the lemon slices aside.
- Season the chicken scallopini with salt and pepper. Dredge in flour, coating both sides, and tap the excess flour off. Heat 3 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add as many scallopini into the pan that will fit without touching, and cook until golden brown, approximately 3 minutes. Flip and cook second side until lightly browned, about 2 minutes. Remove scallopini and drain on paper towel.
- When done with the scallopini, wipe off the fat from the skillet with paper towels. Add the remaining 3 tablespoons of olive oil, butter, garlic, and lemon juice and slices to the skillet. Cook, scraping the bottom until garlic is golden brown, about 3 minutes. Scoop out the lemon slices and set aside. Add the caper berries and olives and cook, stirring gently for about 4 minutes. Pour in wine and bring to a boil. Cook until the wine is reduced by half. Add the chicken stock and boil until slightly syrupy. Return the scallopini to the skillet and coat each piece in the sauce. Add parsley and swirl into sauce.
- Divide scallopini onto separate plates. Spoon the sauce over, and add the caper berries and olives around scallopini. Add some of the spinach on the side. Finish by decorating each plate with reserved lemon slices on top of the scallopini.
- Heat olive oil in large skillet over medium heat. Crush garlic cloves with the side of the knife and add to the oil. Cook until golden brown, approximately 2 minutes. Add the spinach in handfuls, and season lightly with salt and pepper, and cover pan. Cook until spinach releases its liquid. Uncover pan, and cook stirring until spinach is wilted and water has evaporated. Taste and season with additional salt and pepper.
SAUTEED CHICKEN BREAST WITH FRESH SPINACH PASTA
Steps:
- Bring a large pot of salted water to a boil, add linguine and cook until a little less than al dente, about 8 minutes. Season chicken breasts with salt and pepper. Heat a deep skillet over medium-high heat. Add oil and 1 tablespoon of butter, heat until the butter is melted. Then add the chicken breasts, skin side down and cook for 2 to 3 minutes on each side, or until lightly colored.
- When done, transfer chicken breasts to a plate and set aside. Discard any fat from your skillet. Now, to the skillet add 2 tablespoons of butter, heat until butter is melted. Add onion, celery, carrots and salt and pepper. Cook, stirring until vegetables are softened, about 3 minutes. Return chicken to the skillet, add rosemary, and bay leaf and cook, covered over moderately low heat for 5 minutes more or until chicken is cooked through but still slightly springy to the touch. Again, remove chicken from the skillet and transfer to a plate, pouring any remaining juice into the skillet and set aside. Now, prepare the sauce. To the same skillet add madeira and chicken broth, cook until reduced by half. Then add heavy cream and reduce until sauce is lightly thickened. Drain and pat dry linguine and transfer to a serving plate and toss with remaining tablespoon of butter. Top with chicken breasts. To the sauce add minced fresh herbs, taste for seasoning, adding salt, pepper and lemon juice to taste. Gently pour sauce over linguine and chicken, making sure to evenly coat the entire surface. Serve immediately.
CREAMY CHICKEN WITH SPINACH
This is super-simple chicken dish in a cream sauce with spinach and sun-dried tomatoes. Serve over pasta or rice.

- Heat olive oil in a large skillet over medium-high heat and cook chicken until no longer pink in the middle, 5 to 10 minutes. Transfer to a plate and set aside.
- Pour cream and chicken broth into the skillet. Add garlic powder, Italian seasoning, and Parmesan cheese. Whisk over medium-high heat until sauce starts to thicken, about 5 minutes. Add spinach and sun dried tomatoes and simmer until spinach starts to wilt, 3 to 5 minutes.
- Return chicken to sauce in the skillet and heat through, about 3 minutes. Season with salt and pepper.

SAUTEED CHICKEN WITH SPINACH

- Season chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Add chicken; cook until browned, turning once, 8 to 10 minutes.
- Add 1/4 cup water. Reduce heat to medium-low; cover, and simmer until chicken is cooked through, 4 to 6 minutes. Transfer chicken to a plate; cover to keep warm.
- Make mustard sauce: Add minced shallot to same pan; cook over medium heat, stirring occasionally, until soft, about 3 minutes. Stir in mustard and vinegar; cook 1 minute. Remove from heat. Add butter; swirl pan until incorporated. Stir any accumulated chicken juices into sauce.
- In a medium bowl, toss spinach with half the mustard sauce. Place chicken on a serving plate; drizzle with remaining sauce. Serve spinach on the side.

- In a shallow bowl, combine the flour, salt and pepper. Flatten chicken to 1/2-in. thickness; coat with flour mixture. In a large skillet, cook chicken in oil over medium heat for 5-6 minutes on each side or until no longer pink. Remove and keep warm. , In a small bowl, whisk the cream, eggs and mustard; stir into the pan drippings. Steps:
- season chicken cutlets with salt, pepper, and poultry seasoning.
- dredge the chicken in flour.
- in a small bowl, beat the eggs and egg yolk with milk or half-and-half.
- heat a large skillet over medium-high heat.
- add 2 tablespoons of EVOO and 2 tablespoons of butter to skillet.
- when heated add the crushed garlic, fry until aromatic.
- coat the chicken in the egg and milk mixture and fry on both sides for about 7-8 minutes.
- transfer chicken to plate and keep warm.
- add wine to the skillet, reduce for 1 minute.
- add the remaining tablespoon of butter, and parsley to the pan.
- pour sauce over chicken.
- bring skillet back to heat and add remaining 2 tablespoons of EVOO.
- add garlic and saute for about 1 minute.
- add the spinach, toss to coat with the oil, keep tossing until spinach becomes wilted.
- add nutmeg, salt and pepper to taste.
- server chicken along side the spinach.
- pass crusty bread around.

SAUTEED CHICKEN OVER WILTED SPINACH WITH KUMQUAT SAUCE

- Separately cut kumquats and shallot crosswise into thin slices, discarding any kumquat seeds. Season chicken with salt and pepper. In a skillet heat butter over moderately high heat until foam subsides and sauté chicken, skin sides down, until skin is golden and crisp, about 5 minutes. Turn chicken over and cook over moderate heat until just cooked through, about 5 minutes more. Transfer chicken to a plate and keep warm, covered.
- Add shallot to fat remaining in skillet and cook, stirring frequently, 1 minute. Sprinkle sugar over shallot and cook, undisturbed, until sugar is melted and golden. Immediately stir in kumquats, water, vinegar, and red pepper flakes and simmer, stirring, until sugar is dissolved. Stir in parsley and salt to taste and, if sauce is too liquid, simmer until thickened to desired consistency, about 1 minute.
- Transfer two thirds sauce to a small bowl and to remainder add spinach and salt to taste, turning with tongs until just wilted.
- Divide spinach between 2 plates and top with chicken. Spoon sauce over chicken.
LEMON CHICKEN WITH SAUTEED SPINACH
This is a healthier and simpler version of one of my favorite recipes, chicken piccata. Usually I eat this dish with rice pilaf, but when I've overindulged, I save calories by skipping the breading and serving it on spinach. Even though I've never been a big spinach fan, it's yummy when you mix it with the lemon sauce.

- Cut each chicken breast in half lengthwise and season with salt and pepper. Coat a large sauté pan with cooking spray and place over medium-high heat. Add the chicken and cook for 5 minutes on each side, or until lightly browned.
- Combine the bouillon and cornstarch in a small bowl and slowly stir in the water until smooth. (If you put all the water in at once, the cornstarch will get lumpy.) Pour the mixture into the pan and cook over medium heat, stirring occasionally, for 10 minutes, or until the mixture starts to thicken. Add the lemon juice and cook for 2 to 3 minutes, until the sauce just begins to boil.
- Meanwhile, place about 1/2 inch of water in a small saucepan and bring to a boil. Add the spinach and cook, stirring occasionally, for 5 minutes, or until hot. (Alternatively, if you have a microwave, place the spinach in a microwave-safe bowl and microwave on high heat for 5 minutes, or until hot. Carefully remove the plastic wrap.) Press with the back of a spoon and drain off the water.
- Divide the spinach between four plates, arrange the chicken over the spinach, and top with the sauce. Serve immediately.
- I couldn't believe that this dish clocked in at an incredibly low 175 calories per serving. If you don't think it will be filling enough for you, add a cup of cooked rice and it's still only 335 calories. Or double the amount of chicken and it's only 290 calories. I've always loved this dish, but now I like it even better!
