3 tablespoons extra-virgin olive oil
1/2 medium onion, finely chopped
1/2 red bell pepper, seeded and chopped
1/4 medium jalapeño pepper, seeded and chopped (optional)
1 garlic clove, chopped
1 1/2 cups long-grain white rice
1 cup frozen corn, thawed
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 1/4 cups chicken stock
1/4 cup chopped fresh cilantro
1 tomato, seeded and diced

Steps:

  • Heat the oil in a heavy, large saucepan over medium-high heat. Add the onion, red peppers and jalapeño and cook, stirring often, until soft and translucent, about 4 minutes. Add the garlic and cook until fragrant, 1 minute, being careful not to let it burn.
  • Add the rice and corn and saute 1 minute, stirring constantly to toast the rice and coat with oil. Sprinkle with the cumin and 1 teaspoon each salt and pepper. Pour in the chicken stock, raise the heat to high and bring to a boil. Reduce the heat to low, cover and cook until the rice is tender, 12 to 15 minutes.
  • Fluff the rice with a fork and carefully fold in the cilantro and diced tomatoes. Season with additional salt and pepper to taste.

1 cup uncooked long grain rice
1/2 pound sliced bacon, diced
1 cup diced carrots
1 cup diced celery
1/2 cup fresh or frozen peas
Soy sauce, optional

Steps:

  • Cook rice according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 3 tablespoon drippings. , In same skillet, saute carrots and celery in drippings until crisp-tender. Add the rice and peas; cook and stir until heated through. Stir in bacon. Serve with soy sauce if desired.

1/2 cup uncooked brown rice
1 1/2 cups sliced fresh mushrooms (4 ounces)
2 medium green onions, thinly sliced (2 tablespoons)
1 1/4 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups frozen broccoli, corn and red peppers, (from 1-pound bag), cooked and drained
1 tablespoon lemon juice

Steps:

  • Melt margarine in 10-inch nonstick skillet over medium heat. Cook rice, mushrooms and onions in margarine about 3 minutes, stirring occasionally, until onions are tender. Stir in water, salt and pepper. Heat to boiling, stirring occasionally; reduce heat.
  • Cover and simmer about 50 minutes or until rice is tender; drain if necessary. Stir in vegetables and lemon juice. Heat uncovered, stirring occasionally, until hot.

1 tablespoon olive oil
1 cup long-grain white rice
½ small onion, finely diced
2 cups low-sodium chicken broth
1 pinch garlic salt, or to taste

Steps:

  • Heat olive oil in a non-stick saucepan over medium-high heat nearly to smoking. Cook and stir rice in the hot oil quickly to toast the rice, 2 to 3 minutes. Stir the onion into the rice; cook and stir 1 minute more. Pour chicken broth over the rice mixture, season with garlic salt, and bring to a boil; reduce heat to low, place a cover on the saucepan, and cook until the broth is absorbed and the rice is tender, about 20 minutes. Remove from heat and allow to rest 5 minutes before lifting the lid.

1/2 cup diced red bell pepper
1/4 cup diced red onion
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/8 teaspoon ground black pepper
2/3 cup toasted chopped pecans

Steps:

  • Bring water to boil in medium saucepan. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes.
  • Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork.

4 cups good quality jasmine rice
1 yellow bell pepper, finely diced
1/2 cup small dried currant
1 yellow onion, chopped (Vidalia works best)
1 small eggplant, diced (or 1/2 of a large)
1 cup mushroom, chopped (portabello work best)
1/2 cup sun-dried tomato (chopped)
3 -4 fresh garlic cloves, minced
1/4 cup extra virgin olive oil
5 -6 sprigs of fresh mint, chopped (do NOT sub for dried!)
5 -6 sprigs fresh dill, chopped (do NOT sub for dried!)
salt and pepper

Steps:

  • Make the rice (according to the directions on the package) in an extra-large pot.
  • While the rice is cooking, sauté the yellow pepper, onion, mushrooms, garlic, currants, sun-dried tomatoes and the olive oil until golden brown.
  • Be sure to use an extra-large skillet and medium to medium-high heat.
  • When vegetables are finished, add them (along with the chopped fresh mint and dill) to the cooked rice and gently stir together until mixed evenly.
  • To give this dish an added "punch" of flavor, substitute vegetable or chicken broth for water when making the rice.

Add broth, tomato sauce and salt; bring to boil over medium-high heat. Boil uncovered until about half of broth is absorbed, stirring often, about 10 minutes.
  • Mix carrots, corn and peas into rice. Cover pot tightly with lid. Reduce heat to low and cook until rice is tender and liquid is absorbed, about 10 minutes longer. Remove from heat. Let stand covered 10 minutes before serving. (Can be made 2 hours ahead. Cover rice with paper towel and let stand at room temperature. Remove towel; rewarm rice over low heat, stirring often.)
