CHICKEN & WILD RICE STUFFING

Number Of Ingredients 16

3 cups cubed whole wheat or sourdough bread
1 1/2 cups cooked wild rice
3/4 - 1 cup chopped onion
3/4 - 1 cup chopped celery (include the leaves)
2 cups sliced fresh mushrooms
2 - 3 cloves garlic, peeled & chopped
10 oz. cooked spinach (I used frozen, thawed), with juices
1/4 cup melted grass-fed butter or olive oil
3 fresh sage leaves, chopped or 1/2 teaspoon ground
3 fresh basil leaves, chopped or 1/2 teaspoon dried
Salt & freshly ground pepper, to taste
1/2 - 1 cup chicken broth (or juices from cooking the wild rice)
2 Tablespoons grass-fed butter or avocado oil
About 3 lb. chicken pieces (I used leg quarters)
Trader Joe's 21 Seasoning Salute (or your favorite unsalted seasoning blend)
Salt & freshly ground pepper

Steps:

  • Preheat oven to 350 F. In a large mixing bowl, stir together all the stuffing ingredients except the broth. Taste and add salt & freshly ground pepper to your liking. Pour the broth over top and stir to mix it in. Set aside.
  • Season both sides of the chicken pieces with seasoning, salt & pepper. In a large saute pan over medium heat, melt the butter or add oil, then sear the chicken pieces until golden brown on both sides.
  • Remove the chicken and set it on a plate. Pour any excess fat out of the pan, then add the stuffing to the bottom of the pan, spreading it evenly. Nestle the chicken pieces on the stuffing.
  • Cover the pan and bake for 30 minutes to an hour (depending on how large your chicken pieces are ... mine were large so I baked covered for an hour) or until the chicken looks fairly well cooked. Uncover and bake for 15 - 30 minutes longer or until the internal temperature of the chicken is 165 F. Remove from the oven, cover and let sit for 20 - 30 minutes for the chicken to absorb the juices. Serve hot and enjoy!

One 5- to 6-pound chicken, giblets removed
2 tablespoons olive oil
1 teaspoon dried marjoram
1/2 teaspoon smoked paprika
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 medium yellow onion, halved
2 tablespoons orange marmalade or apricot preserves
2 teaspoons cider vinegar
3/4 cup wild rice
2 tablespoons olive oil, plus more for greasing the baking dish
1 medium yellow onion, chopped
2 stalks celery, finely chopped
2 cloves garlic, finely chopped
1/2 cup mixed dried fruit, such as pitted prunes and apricots, chopped
1/2 teaspoon dried marjoram
1/2 baguette (4 ounces), preferably day-old or lightly toasted, cut into 1/2-inch cubes
1 2/3 cups low-sodium chicken broth
2 tablespoons chopped fresh parsley

Steps:

  • For the roast chicken: Preheat the oven to 350 degrees F. Pat the chicken dry and place breast-side up in a large roasting pan fitted with a wire rack. Mix together the olive oil, marjoram, smoked paprika, salt and pepper in a small bowl. Gently loosen the skin over the breast of the chicken and rub a little of the mixute under the skin. Rub the remainder of the mixture all over the outside and inside of the chicken. Put the halved onion inside the chicken cavity and tie the legs together with butcher's twine. Tuck the wings underneath the chicken.
  • Roast until an instant-read thermometer inserted into the thickest part of the thigh not touching bone registers 165 degrees F, or until the juices run clear when the tip of a knife is inserted into the thickest part of the thigh, 1 hour 45 minutes to 2 hours, basting the chicken with pan juices a few times during the last hour of roasting.
  • Mix the marmalade and vinegar together and brush over the chicken. Roast for an additional 5 minutes to set the glaze. Let the chicken rest for 30 minutes.
  • For the wild rice dressing: While the chicken roasts, make the dressing. Cook the rice according to package directions, drain off any excess water, if necessary, and transfer to a large bowl. Heat the olive oil in a large skillet over medium heat and add the onions, celery and garlic. Cook, stirring, until the vegetables are tender, about 7 minutes. Add the dried fruit, marjoram, 1/2 teaspoon salt and some pepper. Cook until the fruit softens, 3 to 4 minutes. Remove from the heat and add to the bowl with the wild rice. Add the bread cubes and toss to combine. Add the chicken broth, parsley and 3/4 teaspoon salt and some pepper to taste. Stir until combined.
  • Lightly grease a 2-quart baking dish with olive oil. Transfer the dressing mixture to the dish and level the top. When the chicken comes out of the oven, put the dressing in the oven, uncovered, and bake for 30 minutes. The dressing should be golden brown and heated through.
  • Serve the chicken with the dressing on the side.

My mother passed this recipe on to her daughters as it was passed on to her from her mother. It is a delicious alternative to traditional bread stuffing, and my family always requests it when a chicken or turkey is on the menu. It will be a stunning addition to your Sunday night dinner table. As with any good recipe, adjust the seasonings to your taste. This recipe quantity is for an approximately 5-pound chicken.

2 tablespoons butter
1 onion, finely chopped
3 cups water
2 teaspoons dried dill weed, or to taste
2 teaspoons poultry seasoning, or to taste
1 tablespoon dried parsley
ground black pepper to taste
2 tablespoons chicken bouillon, or more to taste
1 ½ cups long grain white rice

Steps:

  • Heat butter in a large saucepan over medium heat. Stir in onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add water, dill weed, poultry seasoning, parsley, ground black pepper, chicken bouillon, and rice; bring to a boil. Reduce heat to medium-low, cover, and simmer until water is absorbed and rice is just slightly undercooked, 12 to 14 minutes. Stir, taste, and adjust seasonings if desired. Cool completely before using to stuff a chicken.

Turkey giblets
4 cups water
1 package (6 ounces) long grain and wild rice mix
1 celery rib, chopped
1 small onion, chopped
1/2 cup butter
2-1/2 cups crushed seasoned stuffing
1-1/2 cups chicken broth

Steps:

  • Remove liver from giblets if desired. Place giblets and water in a saucepan. Cover and simmer for 2 hours or until tender. , Meanwhile, prepare rice according to package directions. In a small skillet, saute celery and onion in butter; add to rice. Drain and dice giblets. Stir stuffing, broth and giblets into rice., Spoon into an ungreased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

My daughter found this recipe on another food network and used it to stuff a baked chicken. We all loved it and since then I have fixed it to good reviews from all the family except the grandsons (was probably a little to different for them) The taste is rich and the texture moist, My daughter changed it some as it was intended for a goose, rather than chicken and called for roasted chestnuts, but we prefer mushrooms. Great for that special dinner for friends or family.

1 cup wild rice, cooked as per instructions
2 tablespoons butter, plus extra for coating chicken
1 onion, diced
2 garlic cloves, minced
2 carrots, diced
2 tablespoons marjoram leaves, plus extra for coating chicken
2 tablespoons fresh sage, torn in pieces, plus extra for coating chicken
2 cups dry red wine
2 cups rye bread cubes, dried
1 cup portabella mushroom, diced
salt and pepper
1 egg
1 tablespoon caraway seed
1 cup chicken broth

Steps:

  • Melt butter in a skillet over medium heat.
  • Add onion, garlic, carrot and herbs.
  • Sauté for 5 minutes, then add the wine.
  • Simmer for about 10 minutes to reduce the wine to a tight paste.
  • Add the wild rice, rye bread and mushrooms.
  • Stir and season with salt and pepper.
  • Scrape the skillet mixture into a large bowl, blend in the egg, caraway seed and 1 ladle full of chicken broth.
  • Mix thoroughly until evenly moistened.
  • Stuff chicken, and bake as desired until done.
  • Any extra stuffing place in baking dish, and cook in preheated oven at 350°F for 20 minutes.

6 tablespoons unsalted butter, divided
1 lb Italian sausage, casings removed and broken up
1 medium white onion, diced
1 large carrot, diced
2 celery stalks, diced
1 ½ teaspoons kosher salt, divided
3 cloves garlic, mixed
1 tablespoon fresh thyme, leaves picked
5 leaves fresh sage, minced
½ teaspoon freshly ground black pepper
1 ¼ cups dried unsweetened cranberry
1 cup pecan pieces, toasted
½ cup parmesan cheese
4 cups wild rice medley, cooked
1 ¼ cups chicken stock
2 large eggs
1 large egg yolk

Steps:

  • Preheat the oven to 375°F (190°C). Grease a 9 x 13-inch (22.5 x 32.5 cm) baking dish with 1 tablespoon of butter.
  • In a medium pot over medium-high heat, cook the sausage until browned and cooked through, about 8 minutes. Using a slotted spoon, transfer the sausage to a bowl, leaving the rendered fat behind in the pan. Set aside.
  • Lower the heat to medium and melt the remaining 5 tablespoons of butter in the pan with the sausage fat. Once the butter begins to bubble, add the onion, carrot, celery, and ½ teaspoon of salt. Cook for 5-8 minutes, until the onion is translucent and the carrots begin to soften.
  • Add the garlic, thyme leaves, sage, and black pepper and cook for 2-3 minutes, until the garlic is fragrant. Mix in the dried cranberries, pecans, Parmesan, rice, and sausage and stir well to combine. Remove the pot from the heat.
  • Transfer the stuffing mixture to the prepared baking dish.
  • In a liquid measuring cup, use a fork to whisk together the chicken stock, eggs, egg yolk, and remaining teaspoon of salt.
  • Pour the stock mixture evenly over the stuffing and stir to incorporate. Cover the dish with foil.
  • Bake the stuffing for 40 minutes. Remove the foil and bake for another 10 minutes, until slightly crispy on top. Remove the stuffing from the oven and let cool for 15-20 minutes before serving.
  • Serve warm.

1/2 cup slivered almonds
5 tablespoons olive oil
2 medium onions, coarsely chopped
4 celery ribs, chopped into 1/2-inch pieces
5 large cloves garlic, finely minced
2 tablespoons finely chopped fresh rosemary
2 tablespoons finely chopped fresh sage
Salt and freshly ground pepper
1/4 cup coarsely chopped fresh flat-leaf parsley
8 ounces sweet fennel sausage, casings removed
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
1/2 cup Calvados, or white wine
6 cups cooked wild rice
4 cups cooked white rice
20 dried apricot halves, quartered
12 dried pitted prunes, halved
Unsalted butter, for baking dish

Steps:

  • Heat oven to 375 degrees. Spread almonds on a baking pan, and toast until golden, 5 to 7 minutes. Remove pan from oven, and set almonds aside to cool.
  • Heat 3 tablespoons olive oil in a large saute pan set over medium heat. Add onion, celery, and garlic. Cook, stirring occasionally, until tender, about 7 minutes.
  • Increase heat to high, and add rosemary and sage; season with salt and pepper. Continue cooking until vegetables are golden, 2 to 3 minutes. Remove pan from heat; stir in parsley. Transfer vegetables to a large bowl, and set aside. Return pan to heat.
  • Crumble sausage, separating meat. Add 1 tablespoon olive oil to saute pan. Add sausage, and cook, stirring and breaking up meat until well browned, 2 1/2 to 3 minutes. Transfer sausage to bowl with reserved vegetables. Return pan to heat.
  • Add remaining tablespoon olive oil to pan. Add apple, and cook, stirring occasionally, until browned, 2 to 3 minutes. Add Calvados. Using a wooden spoon, scrape up any brown bits on bottom of pan. Cook until most of the liquid has evaporated, about 1 minute.
  • Remove pan from heat, and transfer mixture to bowl with sausage and vegetables. Add wild and white rice, apricots, prunes, and reserved toasted almonds. Season with salt and pepper. Transfer to a buttered baking dish and bake at 375 degrees until browned and heated through.

Add a splash of chicken broth if you need to loosen the stuffing up a bit. Taste then add salt and pepper if necessary, and then serve.
