Chicken Stuffed With Savory Duxelles (Mushroom Stuffing) image

Moist and richly flavorful chicken. I make this stuffing ahead of time so I'm not rushing at dinner and can make some yummy sidedish

2 tablespoons olive oil
1 teaspoon garlic, minced
1 shallot, minced
1 lb button mushroom, finely chopped
salt
pepper
1/4 cup dry white wine
1/4 cup parsley, chopped
2 whole chicken breasts, with skin, split

Steps:

  • Preheat oven 400 degrees.
  • In skillet, heat 1 T oil.
  • Saute garlic and shallot 1 minute.
  • Add mushrooms, cook 4 minutes.
  • Add salt, pepper and white wine, cook 10 minutes.
  • Remove from heat and add parsley.
  • Pull back chicken skin, leaving attached at one end.
  • Salt and pepper each breast, then mound 1/3 c stuffing on each.
  • Pull the skin back over the stuffing and secure with toothpicks.
  • Place in roasting pan and drizzle with 1 T olive oil over the the top.
  • Roast until skin is golden brown, about 35 minutes.

1/4 cup olive oil
1/4 cup dry sherry
3/4 pound diced fresh mushrooms
4 medium shallots, finely minced
2 cloves garlic, minced
1 teaspoon minced fresh thyme
dash cayenne pepper
1/2 cup ground almonds
dash salt and pepper
4 whole boneless, skinless chicken breasts, halved
paprika
1/2 cup low-fat sour cream

Steps:

  • 1. In a large skillet over medium heat, heat the olive oil and sherry. Add the mushrooms, shallots, garlic, thyme, and cayenne pepper. Cook, stirring often, until mushrooms turn dark.2. Add the ground almonds, salt, and pepper and sauté for 2-3 minutes. Divide the mixture into 8 portions and place each portion in the center of each chicken breast half. Fold edges over, roll up, and place in a baking dish, seam side down, 1 inch apart.3. Place about 1 tablespoon of sour cream over each chicken roll and sprinkle with paprika. Bake at 350°F for 25-30 minutes or until the chicken is tender.
