This Chicken with Blush Sauce Pasta is one of the first 30 minute recipes I shared here. It's a tasty, creamy and cheesy pasta dinner that not only is ready in 30 minutes, but it's a crowd pleaser. Loaded with chicken and bacon, a delicious cheesy blush sauce, this pasta recipe is indulgent and delicious.

½ pound pasta (such as rigatoni, penne, bow tie, etc., cooked according to package instructions)
6 slices bacon (cut into small ¼ inch pieces.)
1 medium chicken breast (boneless, skinless, cut into small pieces)
1 medium onion (chopped)
2 cloves garlic (minced)
14 ounce diced tomatoes ((1 whole can))
2 tablespoon fresh basil (chopped)
2 tablespoon hot sauce (or ¼ tsp red pepper flakes)
½ cup sour cream
1 cup mozzarella cheese (shredded)
¼ cup Parmesan cheese (grated)

Steps:

  • Cook Pasta: Cook the pasta in a large salted pot of boiling water according to package instructions, until al-dente. Reserve ½ cup of pasta water. Drain, rinse with cold water and set aside.
  • Make the sauce: In a large skillet, add the bacon and cook it until it starts rendering some fat. Add the chicken, onion, garlic and cook until chicken is no longer pink and is cooked through. Add diced tomatoes, pasta water, basil, hot sauce, and cook for 10 minutes. Add sour cream and stir. Taste for seasoning and adjust with salt and pepper as needed.
  • Finish the dish: Stir in the pasta, add the mozzarella cheese and toss it all together to make sure all pasta is covered in the cheese and sauce.
  • Garnish with Parmesan and serve: Garnish with fresh Parmesan cheese and serve warm.

1 package (16 ounces) penne pasta
2 tablespoons butter
1 medium onion, halved and thinly sliced
2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 teaspoon salt
1-1/2 cups half-and-half cream, divided
1/2 cup white wine or reduced-sodium chicken broth
1 tablespoon tomato paste
2 tablespoons all-purpose flour
1/2 cup shredded Parmigiano-Reggiano cheese, divided

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions. Drain; return to pot., Meanwhile, in a large nonstick skillet, heat butter over medium heat; saute onion until lightly browned, 8-10 minutes. Add herbs and salt; cook and stir 1 minute. Add 1 cup cream, wine and tomato paste; cook and stir until blended., Mix flour and remaining cream until smooth; gradually stir into onion mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in 1/4 cup cheese. Stir into pasta. Serve with remaining cheese.

This pasta has a beautiful blush colour and the taste is fabulous. A little gem I found in the Taste of Home. Had to estimate the amount of pasta as it called for 1/2 package. I have also added shrimp or mussels to this on occasion.

1 (350 g) box penne pasta
1/2 cup onion, sliced thin
1 tablespoon butter
1 tablespoon thyme
2 tablespoons basil
1 teaspoon salt
3/4 cup half-and-half cream (divided 1/4 C)
1/4 cup chicken broth
3 tablespoons tomato paste
1 tablespoon flour
1/4 cup parmesan cheese, shredded

Steps:

  • Cook penne as per package directions.
  • In large skillet over medium heat, cook onions in butter for 8-10 minute
  • Add thyme, basil, salt and cook 1 minute longer.
  • Add 1/2 C cream, broth and tomato paste.
  • Cook and stir until well blended.
  • Combine flour and remaining 1/4 C cream until smooth.
  • Gradually stir into onion mixture.
  • Bring to boil, cook and stir continuously for 2 minutes to thicken.
  • Stir in the Parmesan cheese.
  • Toss with noodles and additional Parmesan.
