quick weeknight dinners work for me! 3/25/08- this was made for freezer tag in the OAMC forum and they asked me to post the following, "To freeze: Prepare recipe as directed through step 3. Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."

1/4 cup hoisin sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 teaspoons cornstarch
2 teaspoons water
1 pinch salt
1 pinch garlic powder
1 pinch ground ginger
1 pinch five-spice powder
1 pinch black pepper
4 boneless skinless chicken breasts
cooking spray

Steps:

  • Preheat broiler. combine hoisin, honey, vinegar, sesame oil, in a saucepan, bring to a boil.
  • Combine cornstarch and water and add to mixture, stirring.
  • Cook 1 minute, remove from heat and set aside. mix spices and rub evenly over both sides of chicken. Spray a broiler pan with non stick spray, add chicken, broil 5 minutes.
  • Brush with hoisin mixture and cook for 5 minutes more. turn over and brush with sauce, broil 5 minutes, basting often, until done.

4 chicken breasts, skin on with drummette
1/2 cup hoisin sauce
1 tablespoon sambal
1 bunch chopped scallions
1/2 cup red wine
1/4 cup minced garlic
1/4 cup minced ginger
1 teaspoon black pepper
1/2 cup fish sauce
1/2 cup rice wine vinegar
1/2 tablespoon chile flakes
1/2 bunch basil chiffonade
1/2 tablespoon sugar
Salt and black pepper to taste
3 cups napa cabbage chiffonade
1 cup carrots shredded
1 cup bean sprouts
1/2 cup scallions chopped

Steps:

  • Mix all ingredients together and marinate chicken, covered and refrigerated at least 4 hours, preferably overnight. On a hot grill, season chicken and cook through, about 8 minutes a side. Be careful not to burn the skin.
  • SLAW: In a bowl, whisk together fish sauce, vinegar, chile flakes, basil and sugar. Toss together the vegetables together and add to vinaigrette. Toss well and check for seasoning. This should rest for 10 minutes before serving.

1/2 kg chicken piece (1 lb.)
2 tablespoons garlic, Minced
1 teaspoon sesame paste
2 tablespoons honey
3 tablespoons sherry wine
1/2 teaspoon hot chili sauce (non sweet)
2 tablespoons hoisin sauce
1 teaspoon soy sauce
1 teaspoon five-spice powder
2 tablespoons cornflour, mixed with 3 Tbsp. Water to thicken sauce (cornstarch)
3 tablespoons water

Steps:

  • Combine ingredients for sauce and simmer for 5 minutes over very low heat. Let sauce stand for at least 1 hour for the flavours to blend.
  • Pierce chicken with fork in several places.
  • Marinate chicken in refrigerator for several hours with 1/2 the sauce. Roast chicken in 190 C (375 F) oven for 45 minutes turning regularly, or until juices run clear, basting several times with the remaining sauce. Alternate cooking method is to BBQ for about 45 minutes, turning and basting regularly.
  • Serve with rice and stir fried vegetables.
