3 boneless chicken breasts, skin-on
4 to 5 ounces garlic-and-herb goat cheese (recommended: Montrachet
3 sun-dried tomatoes, julienned
Good olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the chicken breasts on a sheet pan. Loosen the skin from the meat with your fingers, leaving 1 side attached. Cut the goat cheese into 1/2-inch-thick slices and place 1 or 2 slices plus 1/3 of the julienned sun-dried tomatoes under the skin of each chicken breast. Pull the skin over as much of the meat as possible so the chicken won't dry out. With your fingers, rub each piece with olive oil, and sprinkle them very generously with salt and pepper. Bake the chicken for 35 to 40 minutes, until the skin is lightly browned and the chicken is just cooked through. Serve hot or at room temperature.

4 boneless chicken breast halves
Dash salt
Dash pepper
For the Goat Cheese Sauce:
1 tablespoon extra-virgin olive oil
3 tablespoons dry white wine
1 cup chicken broth
1 teaspoon fresh parsley
4 ounces herbed goat cheese
Dash salt (or to taste)
Dash pepper (or to taste)
Optional: 1/2 teaspoon garlic herb seasoning
For the Roasted Red Pepper Puree:
1 jar (12 ounces) roasted red peppers (drained)
2 tablespoons extra virgin olive oil
1 clove garlic (chopped)
Dash Tabasco (or other hot sauce to taste)
Dash salt (or to taste)

Steps:

  • Gather the ingredients.
  • Put each chicken breast half between two sheets of plastic wrap; pound lightly to flatten evenly. Salt and pepper both sides of the chicken pieces.
  • Lightly oil the grill or grill pan. Grill over medium coals or medium-high heat for about 3 to 5 minutes on each side, or until cooked through.*
  • If desired, place a few spoonfuls of the red pepper puree (recipe below) on the plate, place the chicken breast on top of the puree, and spoon the herbed goat cheese sauce (recipe below) over the chicken. *The minimum safe temperature for chicken is 165 F / 74 C.
  • Gather the ingredients.
  • Combine 1 tablespoon of olive oil, wine, and chicken broth in a saucepan; bring to a boil. Continue cooking over medium heat until reduced by about half.
  • Add the parsley, goat cheese, salt and pepper, and garlic herb seasoning, if using. Continue simmering, stirring frequently, until the sauce is thickened.
  • Gather the ingredients.
  • Combine the roasted red peppers , garlic, hot sauce in a blender or food processor. Process until smooth. Force it through a mesh sieve, if desired.
  • Taste and season, as needed, with salt and freshly ground black pepper.

1/4 teaspoon salt
1/8 teaspoon pepper

1 cup cut fresh asparagus (1-inch pieces)

3 plum tomatoes, chopped
3 tablespoons 2% milk

  • Toss chicken with salt and pepper. In a large skillet, heat oil over medium-high heat; saute chicken until no longer pink, 4-6 minutes. I really wanted my husband to try goat cheese, so the other night I asked him if he wanted scalloped potatoes in a cheese sauce; he said 'yes,' and this is what I made. Afterwards he said I would definitely need to make this again, as he had four helpings. When I told him that it was goat cheese all he could say was 'REALLY?' and kept eating. I would say this was a winner; how about you? Just pour finished sauce over your choice of pasta, potatoes, or whatever you like.

1/2 teaspoon salt
1/2 teaspoon black pepper
3 ounces goat cheese
1 teaspoon finely grated lemon rind
1 large firm apple, peeled, cored, and shredded
flour, for dusting
1 large egg
1 1/3 cups breadcrumbs
1/2 cup parmesan cheese
2 tablespoons unsalted butter
2 tablespoons olive oil

Steps:

  • Place chicken breast on a large sheet of waxed or plastic; cover with another sheet; pound chicken breast to 1/4 inch thickness, remove the top sheet and season with salt and pepper.
  • Combine the goat cheese, lemon rind, and apple; divide the apple mixture among the chicken breast and spread the mixture evenly over half the surface of each breast; fold each breast in half and press the edges together, forming a pocket.
  • Sprinkle the flour onto a sheet of waxed paper.
  • In a small bowl combine the egg and water; In a shallow bowl, combine the bread crumbs and Parmesan cheese.
  • Dust each chicken breast lightly with flour and dip into egg mixture, moistening all surfaces.

1 Tbsp. (15 mL) butter or oil
1/2 cup (125 mL) apple juice
1 cup (250 mL) chicken bouillon
2 apples, pealed, cored, and cut in thin slices
8 oz (160 g) creamy goat cheese
fresh parsley, chopped (to taste)

Steps:

  • Heat butter in a skillet over medium-high heat. Add chicken and brown each side for a few minutes. Add apple juice, chicken bouillon, and apples. Season to taste.Bring to boil and cook covered on low for about 5 minutes. Turn chicken and continue cooking for 10 minutes, or until the drippings are clear or until meat thermometer reaches inner temperature of 77° C (170° F).Remove chicken and set aside.   • Cut the prepared poblano chile into 1/4-inch-thick strips (rajas); set aside. Mash the garlic and about 1 teaspoon salt together with the side of knife to make a paste; set aside.
  • Season the chicken breasts with a little salt. In a large, heavy skillet, heat the oil over medium-high heat. Brown the chicken pieces lightly on both sides, 2 1/2 to 3 minutes per side. Decrease the heat to medium; add the garlic paste and sauté 30 seconds (do not let it burn). Stir in the green chile powder, oregano, and apple cider.
