4 cups fresh basil
1 cup grated parmesan cheese
½ cup pine nuts
2 cloves garlic
½ lemon, juiced
salt, to taste
pepper, to taste
½ cup olive oil

3 zucchinis
1 cup cherry tomato
2 boneless, skinless chicken breasts, chopped

Steps:

  • In a food processor, combine the basil, Parmesan, pine nuts, garlic, lemon juice, salt, pepper, and olive oil. Pulse until smooth texture. Set aside.
  • With a vegetable peeler, shave ribbons of the zucchini until you reach the seeds. Set aside.
  • Slice the cherry tomatoes and set aside.
  • Heat a 4-quart jumbo cooker over medium-high. Add a little oil, the chicken breasts, and sprinkle with salt and pepper. Cook until the chicken is cooked through and browned on all surfaces.
  • Turn off the heat and add the cherry tomatoes, pesto, and zucchini ribbons. Toss until well combined and heated through.

1 lbs Chicken, boneless thigh or breast, small diced
1/2 lbs Pasta, tubular pasta such as penne or farfalle
1 Zucchini, diced to half moons
1 Cup Cherry Tomatoes
1/4 Bunch Fresh Herbs, such as parsley or basil, optional, for serving.
1 tbsp Cooking Oil
1 tsp Garlic, 1-2 cloves, minced
1/2 tsp Salt and Black Pepper, half and half
1/2 Cup Basil Pesto, to make fresh, check recipe link in notes.
1/2 Cup Cream, half and half
1/2 tsp Chili Flakes
1 tbsp Lemon, juice
1/3 Cup Parmesan Cheese, grated
1/4 Cup Water, use Chicken Stock for more flavor

Steps:

  • Bring pot of water to rolling boil. Season with salt. Add pasta and cook boiling until pasta is al-dente (about 10-12 minutes) For best results, check pasta package for al-dente cooking time.
  • Heat oil in a large heavy bottom skillet to medium-high heat. Add garlic and chili flakes. Cook stirring often for 20-30 seconds or until garlic is fragrant. Don't let garlic burn. Add diced chicken. Sprinkle generous pinch of salt on chicken before stirring. Stir cook chicken for 2-3 minutes or until chicken is no longer pink and develops some color. Transfer chicken to a plate.
  • In, now empty, same pan on medium heat, add basil pesto. You don't need more oil since pesto has oil in it. Cook pesto for 30 seconds to 1 minute or until it is fragrant. Add cream half and half, water (or stock if using). Bring to boil then lower heat to medium. Mix in half of the parmesan cheese. Add chicken back into the sauce with cherry tomatoes and zucchini. Cook for 3-5 minutes or until Pesto Sauce thickens and chicken is fully cooked. Once sauce thickens, mix in lemon juice and salt. Taste and adjust salt and black pepper.
  • Add cooked and drained pasta to chicken with pesto. Sprinkle remaining parmesan cheese on the top of pasta. Now, coat the pasta in the sauce. Add 2-3 tbsp of the chopped fresh herb of your choice. Serve Chicken Pesto Pasta while still hot. Enjoy.

2 boneless skinless chicken breasts
1 medium onion
10 mushrooms
6 ounces marinated artichoke hearts
4 medium zucchini
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon vegetable oil
3 garlic cloves
1 tablespoon Dijon mustard
3/4 tablespoon low sodium soy sauce (I prefer tamari)
1/3 cup white wine or 1/3 cup white zinfandel wine
1/2 cup light sour cream
3/4 lb angel hair pasta
1 tablespoon butter or 1 tablespoon margarine
salt, to taste
freshly ground coarse black pepper, to taste
2 red pepper flakes (optional)
2 green onions, sliced on a diagonal (both white & green parts)

Steps:

  • Fill a large pot with water and begin to heat for pasta.
  • Cut chicken breasts into thin slices, then into 1 inch pieces.
  • Peel and quarter onion, then slice thinly.
  • Trim stems off of mushrooms and slice thinly.
  • Drain artichoke hearts and cut into small pieces.
  • Trim zucchini and cut into 1/4 inch pieces.
  • Place in a microwaveable dish and set aside.
  • Place 1 tablespoon butter & 1 tablespoon vegetable oil in a wide frying pan or wok over medium high heat.
  • Press garlic and add; add red pepper flakes, too.
  • Then add chicken pieces and cook for 1-2 minutes.
  • Microwave zucchini on high for 6 minutes.
  • To pan with chicken, add onion slices and cook 1 minute more.
  • Add mushroom slices and artichoke pieces.
  • Continue cooking until chicken pieces are no longer pink (approximately 4 minutes) and remove pan from heat.
  • Reduce burner temperature to low.
  • Put pasta in boiling water and cook 1-2 minutes or until done.
  • Add Dijon mustard, wine, & tamari to chicken mixture and stir carefully.
  • Place pan back on burner and add light sour cream.
  • Stir gently until sauce forms.
  • Remove from heat.
  • Remove zucchini from microwave.
  • Season lightly with small amount of butter or margarine, salt, if using, black pepper, if using,
  • Drain pasta in a large colander.
  • Serve Chicken Dijon over pasta accompanied by fresh zucchini and green onions.
  • Serve with bread sticks, a salad of European greens with raspberry vinagrette, and White Zinfandel wine.

6 skinless, boneless chicken breast halves
¼ cup butter
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup white wine
1 (10.75 ounce) can condensed golden mushroom soup
4 ounces cream cheese with chives
1 pound angel hair pasta

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.

¼ teaspoon fresh ground black pepper
¼ teaspoon paprika
1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces
2 tablespoons olive oil
1 clove garlic, minced
¼ cup butter, divided
1 cup dry white wine
⅓ cup chicken broth
¼ cup fresh lemon juice
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 (8 ounce) package angel hair pasta, cooked and drained

Steps:

  • Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Heat olive oil in a large skillet over medium-high heat; stir and cook the garlic until light brown, about 1 minute. Remove the garlic from the skillet and set aside.
  • Place 2 tablespoons of butter into the skillet with the olive oil. Cook the chicken pieces in the oil and butter over medium-high heat until brown, about 5 minutes per side. Remove the chicken from the pan and set aside.

1/4 cup all-purpose flour
8 thin chicken cutlets (about 1 1/2 pounds total)
2 tablespoons olive oil
1 cup reduced-sodium chicken broth
1 can (14 ounces) artichoke hearts packed in water, rinsed, drained, and quartered
2 tablespoons rinsed and drained capers
2 tablespoons butter
8 ounces angel-hair pasta
1/2 cup parsley leaves

Steps:

  • Set a large pot of salted water to boil. Place flour in a shallow dish, and season with salt and pepper. Dredge cutlets, shaking off excess. In a large skillet, heat 1 tablespoon oil over medium-high. Cook chicken in batches, adding remaining oil as needed, until light golden, 1 to 3 minutes per side; transfer to a dish.
  • Add broth to skillet, and bring to a boil; cook until reduced by half. Add artichokes, capers, and the chicken with any juices. Gently swirl to combine, and bring just to a boil. Remove skillet from heat. Swirl in butter, and cover to keep warm.
  • Add pasta to boiling water. Cook until al dente; drain. Serve chicken and sauce over pasta, topped with parsley.
