3 chicken breast halves
1 teaspoon vegetable oil or 1 teaspoon coconut oil
3 cups green cabbage, shredded
1 tablespoon cornstarch (I think this is more to thicken, could probably opt out)
1/2 teaspoon ground ginger
1/4 teaspoon garlic powder
1/2 cup water
1 tablespoon soy sauce

Steps:

  • Cut chicken breasts into strips.
  • Heat oil in a frying pan.
  • Add chicken strips and stir fry over medium-high heat, turning constantly until done.
  • Add cabbage and sauté 2 minutes until cabbage is crisp-tender.
  • Mix cornstarch and seasonings; add water and soy sauce, and mix until smooth.
  • Stir sauce into chicken/cabbage mixture.
  • Cook until sauce has thickened and chicken is coated, about 1 minute.
  • Refrigerate leftovers within 2 hours.

4 skinless, boneless chicken breast halves, cut into bite-size pieces
1 tablespoon Cajun seasoning blend (such as Tony Chachere's®), or to taste
1 ¼ cups chicken broth
1 tablespoon cornstarch
4 teaspoons soy sauce, divided
2 tablespoons olive oil, divided
2 cups shredded cabbage
25 sugar snap peas, chopped
10 small spears fresh asparagus, trimmed and cut into bite-size pieces
3 stalks celery, chopped
½ red bell pepper, cut into thin strips
2 green onions, chopped
1 (8 ounce) can sliced bamboo shoots, drained
½ cup cashews
1 pinch paprika, or to taste

Steps:

  • Sprinkle chicken pieces with Cajun seasoning.
  • Whisk chicken broth, cornstarch, and 3 teaspoons soy sauce together in a bowl until completely blended.
  • Heat 1 tablespoon olive oil in a deep frying pan or wok over high heat. Cook and stir chicken in hot oil until cooked through, 6 to 10 minutes. Remove chicken from pan and drain any accumulated liquids.
  • Heat remaining 1 tablespoon olive oil in the frying pan or wok over high heat. Stir fry cabbage, snap peas, asparagus, celery, red bell pepper, green onions, and bamboo shoots for 1 minute. Stir in 1 teaspoon soy sauce. Continue cooking until vegetables are tender but still crisp, about 3 minutes.
  • Stir chicken into cabbage mixture. Pour chicken broth mixture over chicken mixture, reduce heat to medium, and simmer until sauce thickens, about 1 minute. Reduce heat to low; add cashews and cook until heated through, 1 minute. Sprinkle with paprika.

1 tablespoon cornstarch
1 1/4 cups low sodium chicken broth
1/3 cup mango chutney
3 tablespoons mango chutney
4 1/4 teaspoons low sodium soy sauce
1 teaspoon Chinese five spice powder
1 teaspoon garlic, minced
1 1/4 lbs chicken tenderloins, cut into thin strips
7 teaspoons sesame oil, divided
1 large sweet red pepper, julienned
1 1/2 cups fresh snow peas
6 cups green cabbage, shredded

Steps:

  • In a small bowl, combine cornstarch and broth until smooth; stir in the chutney, soy sauce, five spice powder and garlic. Set aside.
  • In a large skillet or wok, saute chicken in 3 tsp sesame oil for 6-8 minutes or until no longer pink; remove and set aside on a plate.
  • In same skillet or wok, saute red pepper and snow peas in 2 tsp sesame oil for 2-3 minutes or until crisp-tender.
  • Stir soy sauce mixture and add to skillet. Bring to a boil, cook and stir for 2 minutes or until thickened. Add chicken back to skillet and heat through on low heat.
  • Meanwhile in a large non-stick skillet coated with cooking spray, saute cabbage in remaining 2 tsp sesame oil for 5 minutes or until crisp tender.
  • To serve place cabbage on plate and top with chicken mixture.

1 green bell pepper, seeded and cubed
1 red bell pepper, seeded and cubed
¼ cup sliced sweet onions
¾ pound skinless, boneless chicken breast, cut into strips
2 ½ teaspoons Caribbean jerk seasoning
½ cup plum sauce
1 tablespoon soy sauce
¼ cup chopped roasted peanuts

Steps:

  • Heat the oil in a large skillet over medium-high heat. Cook and stir the bell pepper and onion in the oil until slightly tender, 5 to 7 minutes. Remove pepper and onion from the skillet and set aside. Add the chicken to the skillet; season with jerk seasoning; cook and stir chicken until no longer pink inside. Pour the plum sauce in with the chicken; add the bell peppers and onions; toss to combine. Cook until the peppers and onions are heated completely, 3 to 5 minutes. Sprinkle with soy sauce and chopped peanuts to serve.
