This Chile Relleno Casserole has everything you love about chile rellenos baked into one easy casserole. Enjoy your favorite mexican flavors of chile peppers, chicken, and cheese in this easy to make dinner.

2 lbs boneless (skinless, chicken breast)
8 oz cream cheese (softened)
8 oz Monterey jack cheese (shredded)
3/4 lb poblano peppers (about 2 peppers, thinly sliced)
1/2 tsp garlic
1/2 tsp cumin
1/4 salt
1/4 tsp pepper
Garnish (optional)
Chopped cilantro

Steps:

  • Preheat the oven to 375˚F.
  • Place the chicken breast flat in a casserole dish. Season the chicken with the garlic, cumin, salt, and pepper.
  • In a small bowl, mix the cream cheese and half of the monterey jack cheese then spread it evenly over the chicken. Top with the poblano pepper strips and then bake, uncovered, for 30 minutes. Then top with the remaining jack cheese and return to oven for an additional 10-15 minutes or until the chicken is cooked through (165˚F internal temp)
  • Garnish with cilantro and serve hot. Enjoy!

A friend of mine made something similar to this a few years back for breakfast. It was so good I had to have the recipe. This is definitely one of my savory favorites. Thanks Linda for sharing your recipe.

2 cups half-and-half cream
4 eggs
2/3 cup flour
2 (27 ounce) cans whole green chilies, drained
2 cups monterey jack cheese, shredded
2 cups cheddar cheese, shredded
2 (8 ounce) cans tomato sauce

Steps:

  • Preheat oven 375°F.
  • Beat half & half, 4 eggs and flour until smooth.
  • Split whole chilis open, clean seeds off and drain on paper towl.
  • Mix cheese, reserving 3/4 cup for top.
  • Make alternate layers chilies first, remaining cheese, and egg mixture in a deep 1-1/2 qt baking dish or a 9x13 casserole dish and repeat. Pour tomato sauce over top.
  • Sprinkle with reserved cheese.Cover with foil, bake at 375°F for 1 hour and 15 min without foil or until cooked in center.
  • Let rest 10 minutes to set before serving.

My grandmother's delicious original recipe for a cheese-stuffed chile relleno casserole... with an Italian twist. The recipe may be cut in half, and baked in an 8 x 8 baking dish.

1 (27 ounce) can whole green chilies (or 12 fresh roasted)
24 ounces monterey jack cheese, divided
1/3 cup flour
4 tablespoons powdered parmesan cheese
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon dried basil
1/4 teaspoon crushed dried rosemary
8 large beaten eggs
1 1/4 cups whole milk
1 (14 ounce) jar pizza sauce
monterey jack cheese (4 ounces of reserved )

Steps:

  • SET oven rack to the center position; PREHEAT oven to 350°F; BUTTER a 3-quart baking dish.
  • DIVIDE an 8 ounce block of Monterey Jack cheese in half; cut each half into 6 equal slices, for a total of 12 cheese slices (if using a large brick of cheese, cut 1/2" slices into diagons). Shred the remaining 16 ounces cheese (or use pre-shredded Monterey Jack cheese).
  • DRAIN one 27-ounce can whole green chiles; BLOT chilies well; PLACE into buttered baking dish,.
  • STUFF 12-16 green chiles with one wedge of cheese; ARRANGE stuffed chiles single-layer, overlapping if necessary (arrange wide ends of chiles beside narrow ends of following chile until all chiles are used).
  • BLEND the dry ingredients of the batter first in a medium bowl (1/3 cup flour, 4 tablespoons powdered parmesan cheese, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon crushed dried basil, and 1/4 teaspoon crushed dried rosemary; WHISK in 8 beaten eggs with 1 1/4 cups milk until batter is smooth.
  • STIR the saute mixture into the batter; POUR the batter over chiles in baking dish; SPREAD 12 ounces (3 cups) shredded cheese evenly over the batter mixture.
  • BAKE casserole uncovered in a 350°F oven for 35 minutes; LEAVE oven on.
  • REMOVE casserole from oven; SPREAD one 14-ounce jar pizza sauce evenly over the top; SPRINKLE evenly with the remaining 4 ounces (1 cup) shredded cheese; RETURN to oven and continue baking uncovered for 10 minutes.
  • ALLOW to cool and set for 5-7 minutes before cutting.
  • SLICE, serve and enjoy!

I received this recipe years ago from a gal named Marti. Because of the texture of this casserole it tastes more like the single chili rellenos that most Tex-Mex resturants make. Easy too!

1 lb cheddar cheese
1 lb monterey jack cheese
2 (8 ounce) cans of diced chilies (Anaheim variety)
3 cups milk
3 eggs
1 cup Bisquick

Steps:

  • Combine milk, eggs, and bisquick in a bowl.
  • Layer in a greased 9 x 13 baking dish/pan the items in the following order once only.
  • Cheddar Cheese, 1 can of chilis, jack cheese, 1 can of chilis, egg mixture.
  • Bake 350 degrees for about 50 minutes.

This is a Mexican-style casserole made with hamburger and green chile peppers. It produces a much simpler version of chile rellenos, which are simply stuffed chile peppers.

1 pound lean ground beef
1 onion, chopped
2 (4 ounce) cans whole green chile peppers, drained
1 ½ cups shredded Cheddar cheese, divided
4 eggs
¼ cup all-purpose flour
1 ½ cups milk
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, combine the ground beef and onions and saute for 5 to 10 minutes, or until browned; drain excess fat.
  • Arrange 1 can of the chile peppers on the bottom of a 7x11 inch baking dish. Sprinkle with half the cheese and top with the meat mixture. Sprinkle the meat mixture with the remaining cheese, followed by the next can of chile peppers.
  • In a medium bowl, combine the eggs, flour and milk, whisking until smooth. Pour this into the baking dish over the chile peppers. Season with salt and pepper to taste.
  • Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes. Let cool for about 5 minutes before cutting.
