Here's what you need: bean chili, tomato sauce, tortillas, shredded cheddar cheese

15 oz bean chili, 1 can
8 oz tomato sauce, 1 can
8 tortillas
2 cups shredded cheddar cheese

Steps:

  • In a bowl, add the chili and tomato sauce and stir to combine.
  • Add a layer of the chili mixture to the bottom of a 9x9-inch (23x23-cm) baking pan. Top with a layer of tortillas, a layer of chili, and sprinkle with cheese.
  • Repeat until all ingredients are used, making sure the top layer is cheese.
  • Cover and refrigerate for at least 3 hours, up to overnight.
  • Preheat oven to 350˚F (180˚C).
  • Remove the casserole from the refrigerator and let sit for 10 minutes on your counter.
  • Poke three toothpicks in the casserole, and cover with tin foil, so that the foil doesn't touch the cheese layer.
  • Bake for 30-40 minutes, or until cheese is melted.
  • Cut and serve.

This breakfast dish was inspired by the Mexican dish, chilaquiles. By using baked tortilla chips, a mixture of eggs and egg whites and just a bit of sharp Cheddar and pepper jack, the fat is low while the flavor is high.

Nonstick cooking spray
4 cups baked tortilla chips, 2 1/2 ounces
6 egg whites
4 large eggs
1/4 cup skim milk
3/4 teaspoon ancho chili powder
1/8 teaspoon freshly ground black pepper
1 (4-ounce) can mild chopped green chiles
1 tablespoon chopped fresh cilantro leaves, plus whole leaves for garnish
1/2 cup shredded sharp Cheddar cheese, about 2 ounces
1/2 cup shredded pepper jack cheese, about 2 ounces
1/2 cup prepared green salsa verde
Reduced-fat sour cream, optional

Steps:

  • Preheat the oven to 375 degrees F. Lightly coat a rectangular 2-quart baking dish with nonstick cooking spray. Coarsely crush the chips by hand and spread half of them into the bottom of the baking dish.
  • Whisk the egg whites, eggs, milk, ancho powder, and pepper in a large bowl until well combined. Stir in the chopped chiles, chopped cilantro, and 1/4 cup each of the Cheddar and pepper jack cheeses; pour into the pan. Sprinkle the remaining chips over the egg mixture. Bake until the casserole is set around the edges but a little loose in the center, 20 to 25 minutes.
  • Sprinkle with the remaining 1/4 cup of each cheese and continue to bake until the cheeses are melted and the casserole is set in the center, about 10 minutes. Let stand 10 minutes. Serve with the salsa and, sour cream, if using. Garnish with whole cilantro leaves.

¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the beef and onion for 5 to 10 minutes, or until meat is browned and onion is tender; drain fat. Add the celery, chili, tomatoes, taco sauce and corn. Heat thoroughly, reduce heat to low and allow to simmer.
  • Meanwhile, prepare the noodles according to package directions. When cooked, place them in a 9x13 inch baking dish. Pour the meat mixture over the noodles, stirring well. Top with the cheese.

6 oz monterey jack cheese (grated)
8 oz sharp cheddar cheese (grated)
7 oz canned mild chopped green chiles
2 tbsp flour
1/2 cup milk
8 eggs
Salt & pepper to taste

Steps:

  • Preheat the oven to 350˚F.
  • Mix the cheeses and then sprinkle 1 cup of the cheese (about 2/3) in the bottom of a casserole dish. Then dollop the green chiles evenly over the cheese.
  • Place the flour in the bottom of a bowl and use a whisk to slowly mix in a little of the milk to make a paste, then continue to pour the milk in while whisking until it is all smoothly combined. Then add the eggs into the milk, season with salt and pepper, and use the whisk to combine well. Pour the mixture into the casserole dish over the cheese and chiles.
  • Top the casserole with remaining cheese and then bake on the middle rack of the oven for 25-35 minutes or until eggs are set in the middle.
  • Remove from oven and let sit for 5 minutes then serve hot. Enjoy!

2 14.5-ounce cans whole mild green chiles or fresh green chiles (roasted and skinned* )
1 lb monterey jack cheese (whole brick, cut into finger sized long strips)
1 lb cheddar colby jack cheese (shredded)
5 large eggs
1/4 cup flour
1 1/4 cup milk
1 teaspoon salt
1 teaspoon powdered dry mustard
Cooking Spray

Steps:

  • Preheat oven to 350 degrees and spray a large rectangular glass baking dish (9×13) with cooking spray.
  • Open and drain each can of chiles. Stuff each chili with finger sized pieces of monterey jack cheese and arrange in the bottom of the baking dish.
  • Sprinkle 1 ½ cups of shredded cheddar colby jack over chiles.
  • In a separate medium size mixing bowl combine eggs, flour, milk, salt, and dry powdered mustard and whisk until most of the clumps are gone (some may remain).
  • Pour egg mixture over chiles.
  • Bake uncovered for 40 minutes. Add remaining cheese to the top of the casserole and return to 350F degree oven for an additional 5 minutes or until firm.
  • Remove and allow to sit for 5 minutes before serving.

8 hot dogs
1 can crescent rolls ((8-ct.))
8 slices American cheese
2 cans chili ((15-oz.))
2 tbsp salted butter
½ tsp garlic salt ((or garlic powder))
Fresh parsley (for garnish)

Steps:

  • Preheat the oven to 375°F.
  • Remove crescent rolls from packaging and roll them out/separate into individual triangles.
  • Place one slice of American cheese followed by 1 hot dog onto the widest end of the crescent roll.
  • Roll the cheese and hot dog into the crescent roll and set aside.
  • Arrange wrapped crescent dogs in a 9x13 glass baking dish. (see notes below about the baking dish) You may only be able to fit 7 dogs if you wish to keep them in one line as we did. Leave a ½" or so between each dog to allow room for the dough to puff.
  • Spread chili in the available space around the crescent dogs. You may not use both full cans of chili and can heat any leftovers and serve alongside baked chili cheese dogs.
  • Melt butter in a small dish and stir in garlic salt/powder. Use a pastry brush to brush the butter mixture over the tops of the exposed crescent rolls.
  • Bake approximately 30 minutes or until crescents appear browned on both the top and the bottom.
  • Sprinkle baked chili cheese dogs with a bit of chopped parsley and serve immediately.
