INDIVIDUAL CHILI-CHEDDAR MEATLOAVES
This recipe is a "sight for sore eyes," in more ways than one! A traditional long lost comfort food favorite, this lightened version also offers the nutritional benefits of Lycopene (found richly in tomato-based foods), which many researchers believe aids in protecting healthy vision.

Steps:
- 1. Preheat oven to 350°F.
- 2. Coat a large nonstick skillet with cooking spray; place over medium heat. Add onion, bell pepper, and garlic; sautee 3 to 5 minutes or until tender. Combine onion mixture, 2 tablespoons chili sauce, ½ cup cheese and remaining ingredients in a medium bowl.
- 3. Spoon meat mixture into 4 muffin cups coated with cooking spray. Top evenly with remaining cheese. Bake at 350°F for 12 minutes; top with remaining 2 tablespoons chili sauce. Bake an additional 10 minutes or until a thermometer registers 160°F. Let stand for 5 minutes before serving.

Steps:
- In a large bowl, beat egg with a fork.
- Add bread crumbs, salt and pepper.
- Gently mix in ground beef.
- Set aside.
- In a large frying pan, heat oil on medium-high heat.
- Add onion; cook for 5 minutes or until softened.
- Add sweet pepper and chili powder.
- Cook for another 4 minutes.
- Let cool slightly and then add to beef mixture.
- Add kidney beans and salsa.
- Pack into an 8 by 4 inch loaf pan.
- Bake in preheated 350F (180C) degree oven for 60-75 minutes.
- Drain off fat.
- Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.
CHILI CHEESE MEATLOAF
This is a gift for all occasions, especially when there is a loss in someone's family. The gift can be eaten right away, cold or heated. It can frozen and warmed for another day. It is a little spicy but very comforting. It is a perfect gift for a neighbor at Christmas. There will be tons of cooking, cakes and pies but no one thinks of giving a meat loaf which could be used for another day. Especially during the preparation of the holiday season, when everyone is happy but tired and weary.

Steps:
- Preheat oven to 375 degrees Fahrenheit.
- Spray Pam in large meat loaf pan; set aside.
- In large mixing bowl add hamburger, beaten eggs, Rye bread pieces and evaporated milk. Mix well.
- Add white wine vinegar, chili pepper, cumin and olives pieces. Mix.
- Add neufchatel cheese pieces to meat mixture. Mix.
- Put in loaf pan and pat down. Make sure the cheese pieces are not sticking up. Cover them so they are inside of the meat loaf.
- Bake for 40 minutes or until sides come away from the loaf pan and top has risen.
- Take out of oven and cool.
- Wrapping: Place loaf in disposable foil loaf pan and cover with plastic wrap and bow.

- Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Using foil strips as handles, remove meat loaf to a platter., Freeze option: Cover and freeze leftover meat loaf slices in a greased 2-qt. shallow baking dish. NEW MEXICO GREEN CHILE MEATLOAF
Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
- Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
