CHILLI-INFUSED MARGARITAS



Chilli-infused Margaritas image

2 cups water
1 cup sugar
4 red chillies (sliced in half from the stem down)
150 ml blanco tequila (silver)
150 ml triple sec
150 ml freshly squeezed lime juice
100 ml chilli-infused simple syrup
3 cups roughly crushed ice
3 limes (thinly sliced)

Steps:

  • To make the syrup, bring the ingredients to a boil and allow to bubble for 5 minutes until thickened slightly.
  • Remove from the heat and set aside to cool.
  • To make the Margaritas, combine all the ingredients in a large jug and allow to stand for 10 minutes before serving in tumblers with ice.

Chili infused tequila and a smoky chili salt rim make this margarita oh-so memorable!

4 tsp salt
1/2 tsp chili powder
1/4 tsp cayenne powder
Lime wedge
1 1/2 cups silver tequila
3 serrano chile peppers, sliced in half lengthwise
2 fresno chile peppers, sliced in half lengthwise
1 1/2 oz pepper infused tequila
Juice from 1/2 lime
1 oz Cointreau
3/4 oz agave
Ice

Steps:

  • Combine tequila and peppers in an airtight container. Allow the tequila to infuse for at least 5 to 8 hours (or more if you want it H-O-T).
  • When ready to make the margarita, stir together ingredients for chili salt in a small bowl. Rub a margarita or cocktail glass with the lime wedge, then rim with chili salt.
  • In a shaker filled with ice, combine chile infused tequila, lime juice, triple sec and agave. Shake vigorously.
  • Fill rimmed glass with ice. Strain margarita into the glass and serve.

A twist on the classic Mexican cocktail, this margarita gets an added kick from fresno chile, cayenne pepper and liquid smoke. Top each glass with beer and garnish with cucumber and lime for a refreshing finish.

1 fresh Fresno chile, thinly sliced into rounds
2 limes
1/2 teaspoon dehydrated lemon peel, optional
Kosher salt
1 teaspoon granulated sugar
2 ounces (4 tablespoons) tequila
1/2 cup club soda
2 dashes of cayenne pepper
4 small drops liquid smoke
One 12-ounce bottle Mexican beer
1 Persian or kirby cucumber, quartered lengthwise

Steps:

  • Cut 1 lime into wedges. Squeeze the juice from the second lime and set aside.
  • Mix the dehydrated lemon peel if using with 1 tablespoon salt in a small shallow bowl and set aside.
  • Wipe the rims of 2 glasses with a lime wedge to moisten. Dip the rim of each glass into the lemon-salt mixture to evenly coat.
  • Place 1/2 teaspoon sugar in each glass. Add 5 slices Fresno chile to each glass. Using the end of a wooden spoon, muddle the sugar and chile together.
  • Fill each glass with ice. Pour 1 ounce (2 tablespoons) of tequila into each glass. Top each with 1/4 cup club soda, 1 tablespoon lime juice, a dash of cayenne pepper and 2 small drops of liquid smoke. Stir gently to combine.
  • Top each glass with 1/2 bottle of beer. Garnish each with 1 cucumber spear and 1 lime wedge. Reserve remaining cucumber and lime for another use. Serve immediately.

The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

1 large ice cube

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.

This is delicious and easy! I like to make this on the weekends beause I can marinate the Chicken while I am busy doing other things. Serve with rice and black beans for a quick weekend meal, much cheaper than going out to eat too!

4 boneless skinless chicken breasts
1 cup liquid margarita mix
1 teaspoon garlic powder
fresh ground black pepper, to taste

Steps:

  • Pour margarita mix over chicken breasts, and marinate for 2 hours in refrigerator.
  • When ready to prepare, drain and dust chicken breasts with black pepper.
  • Grill on an outside grill (or George Foreman works) 3-4 minutes on each side.
  • If you do not have a grill use an iron skillet. Bring to medium high temperature and spray skillet with an oil coating. Braise the chicken breasts until done on each side. Place chicken breasts atop Black Beans.
  • Serve with a serving of your favorite Mexican rice and Pico de Gallo.
