TEXAS CHILI FRIES

Steps:
- Place onion and carrot in a 5-qt. slow cooker. Toss beef with 2 tablespoons flour. In a Dutch oven, heat oil over medium heat; brown beef in batches. Transfer meat to slow cooker. , Drain tomatoes; reserving liquid. In a small bowl, whisk drained liquid, chili seasoning and remaining flour until blended; pour over beef. Stir in the tomatoes, beans and peppers. Cook, covered, on low until meat is tender, about 6 hours., Prepare fries according to package directions. Serve chili over fries; sprinkle with cheese. If desired, top with sour cream and jalapeno slices.

BAKED SMOKED CHILI FRIES
Steps:
- Preheat oven to 450 degrees F. Place potatoes, chili powder, salt, pepper, and oil in plastic bag. Shake vigorously to coat potatoes evenly with all ingredients. Spread out on a cookie sheet. Do not over crowd or overlap potatoes or they will steam. Bake 20 to 25 minutes, turning once, until golden and cooked through.
- Remove from oven and let stand 5 minutes. They will come off tray easily.

AMERICAN CHILI CHEESE FRIES RECIPE BY TASTY
Here's what you need: oil, ground beef, kosher salt, black pepper, ground cumin, chili powder, smoked paprika, cayenne, large yellow onion, red bell pepper, garlic, chipotle peppers in adobo sauce, tomato paste, chopped tomato, beef broth, black beans, red kidney bean, french fries, shredded cheddar cheese, sour cream, green onion

Steps:
- Heat the oil in a large pot over medium-high heat. Add the beef and stir to break up. Season with the salt, pepper, cumin, chili powder, paprika, and cayenne. Stir and cook until deep brown in color, 10-15 minutes.
- Add the onion, bell pepper, garlic, chipotles, and a pinch of salt. Cook until the vegetables are softened, about 10 minutes.
- Add the tomato paste and cook until it darkens, becomes aromatic, and starts sticking to the bottom of the pan, 10 minutes.
- Add the chopped tomatoes, beef broth, black beans, and kidney beans. Stir to incorporate, then bring to a boil. Cover, reduce the heat to low, and simmer for at least 30 minutes or up to 2 hours.
- Ladle the chili over the fries and top with cheddar cheese, sour cream, and green onions.
- Enjoy!

This is an easy way to make one of my favorite snacks, chili cheese fries.

Steps:
- Prepare french fries as directed on the package.
- Stir cornstarch and water in a small cup until cornstarch dissolves; set aside. Bring milk and margarine to a boil in a saucepan, stirring constantly. Reduce the heat and whisk the cornstarch mixture into the milk mixture, bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth. Add the cheese to the milk mixture and stir until the cheese has melted and is well combined.
- Prepare chili as directed on the can. Pour the cooked chili and the cheese sauce over the top of the cooked french fries.

CHUNKY RUSTIC-STYLE HOME FRIES
Again this recipe comes from a favorite cookbook of mine "A Real American Breakfast: The Best Meal of the Day, Any Time of the Day" by Cheryl Alters Jamison and Bill Jamison. Please Note: If you don't have leftover potatoes for the Home Fries, you can make equally good home fries from scratch. Starting with raw potatoes means a longer cooking time, but they require little more than an occasional stir while you're preparing the rest of your breakfast and figuring out your going to do with the rest of your day.

Steps:
- Warm the butter in a 10- to 12-inch cast-iron skillet over medium-low heat.
- Stir in the potatoes, and when coated with a bit of butter, season them with salt and pepper and cover the skillet.
- Cook for 20 minutes, during which you should hear only a faint cooking sound.
- Uncover the potatoes and cook for 30 minutes longer, turning them at 10 minute intervals and patting them back down.
- When you turn them the first time, stir in the onion, bell peppers, and chili powder if desired.
- As the potatoes soften, pat them down more lightly, bringing as much of their surface in contact with the skillet as possible without mashing them.
- Cook the potatoes for about 20 minutes longer, turning them at 5-minute intervals.
- During the last 10 minutes, bring the heat up to medium and, if you wish, add more salt and pepper.
- The home fries are ready when the potato cubes are richly browned and clearly crisp with tender, melting centers.
- Plate them up immediately, scatter with chives if you wish, and serve.
