CHICKEN BACON RANCH QUESADILLAS (CHILI'S COPYCAT) RECIPE

This bacon ranch quesadilla Chilis copycat recipe makes a 30-minute cheesy treat! Guaranteed to satisfy your Mexican food cravings.

4 cups pre-roasted, (can be dark or white meat), shredded chicken
2½ cups or sharp cheddar, grated and divided monterey jack cheese
2 cups smoked bacon
1 cup ripe, diced heirloom tomatoes
5½ oz sliced white onions
2 tbsp vegetable oil
2 cloves sliced garlic
¼ cup (see Recipe Notes for Recipe) ranch dressing*
4 large tortilla wraps
to taste salt and ground black pepper
cooking spray
(see Recipe Notes for Recipe) pico de gallo**
¼ cup ranch dressing
¼ cup sour cream
chopped cilantro

Steps:

  • Heat up oil in a wide skillet over medium heat. Add the onions and sauté for roughly 5 to 8 minutes, until caramelized.
  • Add the garlic and tomatoes. Sauté briefly, then transfer into a mixing bowl.
  • Add the chicken, pre-cooked bacon, ½ cup of cheese, then season with salt and pepper. Add ¼ cup of ranch dressing, then mix to combine.
  • Grease a clean skillet with cooking spray and place it over medium heat.
  • Place the tortilla wrap and add roughly 1½ cups of the chicken mixture to half of the wrap.
  • Sprinkle roughly ½ cup of the cheese, then fold the other side over and press so that the cheese makes it stick closed. Heat for 3 to 5 minutes to further melt the cheese and turn the exterior golden brown.
  • Flip and do the same on the other side. Repeat until you have done all 4 tortillas.
  • When done, cut into four and serve with ranch dressing, sour cream, and pico de gallo. Garnish with cilantro.
  • Serve and enjoy!

I love chicken bacon ranch pizza and melts so I thought I would try a quesadilla . It turned out really good! You can add sauteed sweet onions also!

4 flour tortillas
1/4 cup chicken, shredded and seasoned with fajita seasoning
1/4 cup bacon, cooked and crumbled
4 tablespoons ranch dressing, low fat is ok
red pepper flakes (optional)
monterey jack cheese or monterey and colby mix cheese

Steps:

  • Spread 2 tbsp ranch dressing on 2 tortillas.
  • Put cheese, chicken, and bacon on top of the ranch. Sprinkle red pepper flakes on each one (optional). Top with remaining tortilla.
  • Heat pan. Spray with Pam. Place quesadilla in pan. Cook each side 1-2 minutes until cheese melts and tortilla in slightly browned.

2 packages Tortillas Flour
1 package Shredded Cheddar Cheese
1/2 cup Ranch Dressing
4 Chicken breasts
1 package Bacon

Steps:

  • First, cooking chicken and then cook bacon until it's crispy brown. Leave them aside to cool. Then chop them into small pieces to fill them in the tortillas for quesadillas.
  • Now, prep the ranch dressing for the quesadillas. Spray the pre-heated griddle using a cooking spray. Then, heat the tortillas over griddle until they're brown. Brush the tortilla with ranch on one side using a basting brush.
  • Now, spread chicken and bacon over tortillas using a spoon. Add shredded cheese and lay another tortilla on top. Flip it and let it brown on the other side. Remove it and cut it into small triangular sections like a pizza and enjoy.
