Warm Shredded Lamb Salad with Mint and Pomegranate image

1 lamb shoulder (approximately 5 1/2 pounds)
4 shallots, halved but not peeled
6 cloves garlic
1 carrot, peeled and halved
Maldon or other sea salt
2 1/4 cups boiling water
Small handful freshly chopped mint
1 pomegranate

Steps:

  • Preheat the oven to 250 degrees F.
  • On the stovetop, brown the lamp, fat-side down, in a large roasting pan. Remove when nicely browned across its middle (you won't get much more than this) and set aside while you fry the shallots, garlic and carrot briefly. Just tip them into the pan - you won't need to add any more fat - and cook them, sprinkled with the salt, gently for a couple of minutes. Pour the water over and then replace the lamb, this time fat side up. Let the liquid in the pan come to a boil, then tent with foil and put in the preheated oven.
  • Now just leave it there while you sleep. I find that if I put the lamb in before I go to bed, it's perfect by lunchtime the next day. But the point is, at this temperature, nothing's going to go wrong with the lamb if you cook it for a little less or a little more.
  • If you want to cook the lamb the day you're going to eat it, heat the oven to 325 degrees F and give it 5 hours or so. The point is to find a way of cooking that suits you: you know what sort of pottering relaxes you and what makes you feel constrained; how much time you've got, and how you want to use it. Don't let the food, the kitchen or the imagined expectations of other people bully you.
  • With the homily over, about 1 hour before you want to eat, remove the lamb from the pan to a large plate or carving board - not that it needs carving; the deal here is that it's unfashionably overcooked, falling to tender shreds a the touch of a fork. This is the best way to deal with shoulder of lamb: it's cheaper than leg, and the flavor it deeper, better, truer, but even good carvers, which I most definitely am not, can get unstuck trying to slice it.
  • To finish the lamb salad, simply pull it into pieces with a couple of forks on a large plate. Sprinkle with more sea salt and some freshly chopped mint, then cut the pomegranate in 1/2 and dot with the seeds from 1 of the halves. This is easily done; there's a simple trick, which means you never have to think of winkling out the jeweled pips with a safety pin ever again. Simply hold the pomegranate 1/2 above the plate, take a wooden spoon and start bashing the curved skin side with it. Nothing will happen for a few seconds, but have faith. In a short while the glassy red, juicy beads will start raining down.
  • Take the other 1/2 and squeeze the preposterously pink juices over the warm shredded meat. Take to the table and serve.
  • What I do with the leftovers is warm a pita bread in the microwave, and then spread it with a greedy dollop of hummus, then take the chill off the refrigerated lamb in the microwave and stuff the already gooey pita with it. Add freshly chopped mint, black pepper and whatever else you like; raw, finely chopped red onion goes dangerously well.

Warm Lamb Salad with Pomegranate
serves 6 to 8 -
Ingredients
1 (5-pound) boneless lamb shoulder, cleaned and tied
4 shallots, unpeeled, halved
6 garlic cloves
Coarse sea salt
2 cups chicken stock (preferably homemade), or half lamb and half chicken stock
2 heads arugula or watercress
Small handful of chopped fresh mint
1 pomegranate
2 tablespoons pomegranate molasses or POM juice (optional)
2 tablespoons pine nuts, toasted (optional)
3 tablespoons crumbled feta cheese (optional)
Pita bread, warmed, for serving

Steps:

  • Procedure 1. Preheat the oven to 325°F. 2. Heat a large ovenproof pot over medium heat. Add the lamb and brown ion all sides, 6 to 8 minutes total. Transfer the lamb to a platter. Add the shallots and garlic to the pot and cook, stirring, until they are soft and golden brown, about 4 minutes. Add a pinch of salt to the pot, then pour in the stock and bring the mixture to a boil. Return the lamb to the pot, cover, and transfer to the oven. 3. Roast the lamb for about 5 hours, until the lamb is literally falling apart. Take the lamb out of the oven and let it cool in the pot. 4. About an hour before you want to eat, take the lamb out of the pot. Cut and remove the twine. Remove as much of the fat as possible and shred the meat into uniform pieces with two forks. 5. Put the arugula on a platter and put the shredded lamb on top. Sprinkle with sea salt and the chopped mint. Cut the pomegranate in half. Hold one pomegranate half above the plate and hit the back of it with a wooden spoon to knock out the seeds. 6. Take the other half of the pomegranate and squeeze its juice over the salad. If you want a juicier, stronger, fruitier salad, add a couple of tablespoons of pomegranate molasses. Scatter the toasted pine nuts and feta cheese over the top, if desired. 7. Serve the salad while the lamb is still warm (cold lamb fat congeals unappetizingly), with warmed pita on the side.

This pomegranate braised lamb shoulder is about as seasonally appropriate as it gets, and one of the best things I've tasted in a long time.

3 pounds lamb shoulder blade chops
salt and freshly ground pepper to taste
1 tablespoon vegetable oil
1 onion, sliced
1 pinch salt
4 cloves garlic, sliced
2 cups pomegranate juice
⅓ cup aged balsamic vinegar
¼ teaspoon dried rosemary
8 fresh mint leaves
¼ teaspoon red pepper flakes
1 tablespoon honey, or more to taste
salt and ground black pepper to taste
2 tablespoons pomegranate seeds
1 tablespoon sliced fresh mint leaves
1 tablespoon pumpkin seeds

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Generously season lamb chops with salt and black pepper.
  • Heat vegetable oil in a Dutch oven over high heat. Place lamb chops in Dutch oven and cook until browned on all sides, about 8 minutes. Transfer lamb to a plate and reduce heat to medium.
  • Stir onion and a pinch of salt into the Dutch oven; cook until onions are slightly golden, about 3 minutes. Stir in garlic and cook for 30 seconds.
  • Pour pomegranate juice into the Dutch oven and scrape any browned bits off of the bottom of the pot. Pour in balsamic vinegar, increase heat to high, and bring to a boil.
  • Stir rosemary, mint leaves, and red pepper flakes into pomegranate juice mixture. Continue to boil until liquid is reduced by half, about 10 minutes. Return lamb and any accumulated juices to Dutch oven, spoon pomegranate mixture over lamb, and cover.
  • Cook in the preheated oven until meat is fork tender, about 2 hours. Transfer lamb to a plate and set Dutch oven on the stovetop over high heat. Bring pomegranate mixture to a boil; cook, skimming any fat that accumulates, until liquid is reduced by 1/3, about 5 minutes.
  • Stir in honey and season with salt and black pepper to taste. Return lamb to the Dutch oven; stir to combine. Garnish with pomegranate seeds, sliced mint leaves, and pumpkin seeds.

100g Greek yogurt
2 tbsp olive oil
400g lamb loin
2 tsp rapeseed oil
350g baby new potatoes
2 tbsp olive oil
40g pitted Kalamata olives , halved
50g Greek yogurt
2 tsp cider vinegar
peppery salad leaves , such as watercress and rocket, to serve

Steps:

  • Cook the potatoes in a pan of boiling, lightly salted water for 10-12 mins, then drain and transfer to a baking sheet to cool.
  • Now prepare the lamb. Mix the yogurt with the olive oil and some sea salt to taste. Rub the lamb loin with the yogurt mixture - make sure to cover all sides. Chill in the fridge for 1 hr.
  • Heat oven to 200C/180C fan/gas 6. Heat an ovenproof sauté pan and add the rapeseed oil. Sear the lamb on all sides until dark golden brown, then cook in the oven for 7-10 mins or until medium-rare. Remove and leave to rest for 5 mins.
  • To finish the potato salad, cut the cooled potatoes into thick slices. Heat the olive oil in a frying pan over a medium heat, add the potato slices and fry for 10 mins or until golden brown. Transfer the potatoes to a bowl, mix with the olives, yogurt and vinegar, and add salt to taste. Serve warm with the sliced lamb loin and the leaves.

Another Nigella Lawson gem , this is a perfect dish for a cheaper cut of an expensive meat as there is no carving, the meat is so tender it just shreds so there is no waste. She states it can be cooked for a shorter period of time, say 5 hours at gas mark 3 but I love the long low cooking as at a lower temp very little can go wrong, plus, the smell drives everyone wild for longer. (Save any liquid left from cooking as this is concentrated stock and can be frozen and used for gravy.)

  • Make a tent with tin foil and put in the preheated oven overnight
  • About an hour before you want to eat, transfer the lamb from the tin to a large plate
  • Just before serving, pull it to pieces with a couple of forks and transfer to a serving dish.
  • Sprinkle with more Maldon salt and some freshly chopped mint.
  • Cut the pomegranate in half and remove the seeds from one of the halves.

  • Squeeze the juice of the other half over the lamb.
  • Serve with green salad and couscous or quinoa.

4 tbsp pomegranate molasses
1 tsp ground cumin
juice 1 lemon
1 tbsp olive oil
2 garlic cloves, minced
1 onion, roughly chopped
1 shoulder of lamb, weighing about 1.6kg, lightly scored
seeds 2 pomegranates
handful flat-leaf parsley leaves
100g bag watercress
1 small red onion, finely diced
1 tbsp olive oil
flatbreads, to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. In a small bowl, mix the molasses with the cumin, lemon juice, olive oil and garlic. Scatter the onion over a casserole dish or a deep roasting tin. Place the lamb on top of the onions. Pour the glaze over the lamb. Rinse the bowl out with about 200ml water, then pour it around - not over - the lamb.
  • Cover the dish with a lid or the tin with a large piece of foil. Roast the lamb, undisturbed, for 3 hrs, then remove the lid or foil and continue to roast for 30 mins to give the lamb colour. When the lamb has had its time, pour off the juices, remove as much fat as possible, then pour the juices back over the lamb.
  • Just before serving, gently toss all the salad ingredients together. Serve the lamb with its sauce, the salad and some warmed flatbreads.

1 tablespoon cumin
1/2 teaspoon black pepper
1/2 teaspoon salt

  • Couscous:

  • Fluff with a fork.
  • Allow to cool a little.
  • Add the finely diced tomato, capsicum, lemon and mint then set aside.
  • Lamb:
  • Heat a pan over medium high heat, add the oil and cook the lamb backstraps until medium (about 5 minutes a side depending on thickeness).
  • Remove from the pan and allow to rest about 10 minutes before slicing on the diagonal to serve.
  • Divide the cous cous mix between 4 serving plates, arrrange the slices of lamb over that and drizzle a couple of teaspoons of pomegranate molasses over each serve.
  • Greek yoghurt could also be offered at the table.
