FRESH FIG CHUTNEY

Number Of Ingredients 11

1 3/4 teaspoons salt
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 1/4 pounds firm, slightly underripe fresh figs, rinsed, stems removed and halved
2 1/2 cups red wine vinegar
1/2 pound light brown sugar
1 onion, chopped
1/4 cup chopped fresh ginger
1 1/2 teaspoons yellow mustard seeds
1/4 lemon, zested
1/2 cinnamon stick

Steps:

  • In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes.
  • Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.)

1 cup red wine
3 cups fresh figs, top stems removed, roughly chopped
1 cup orange juice
2 tablespoons honey
Pinch of cayenne
1 sprig fresh rosemary
1 piece star anise
Kosher salt and freshly cracked black pepper

Steps:

  • In a small saucepan, bring the red wine to a simmer and cook until reduced by half, about 10 minutes. Add the figs, orange juice, honey, cayenne, rosemary and star anise and bring back to a simmer. Season with salt and pepper. Cook until the figs soften and the mixture thickens, about 30 minutes, stirring occasionally to prevent scorching on the bottom. Cool to room temperature before removing the anise and rosemary.

POACHED TIGER PRAWNS WITH CLAMS, BOK CHOY, AND SHIITAKE MUSHROOMS



Poached Tiger Prawns with Clams, Bok Choy, and Shiitake Mushrooms image

4 cups chicken broth
1 tablespoon soy sauce
1 teaspoon ginger
1 teaspoon star anise
1 teaspoon fish sauce
1 teaspoon grated orange peel
1 baby bok choy, halved
1 tablespoon sliced green onion
1 cup shiitake mushrooms
1 sheet nori paper
1 tablespoon vegetable oil
4 extra-large (U-10) shrimp, peeled and deveined
12 littleneck clams

Steps:

  • Make the poaching liquid: In a medium pot, over medium heat, add the chicken broth. Bring to a boil and add the soy, ginger, star anise, fish sauce, and orange peel. Reduce the heat and simmer until the broth absorbs the seasonings, about 15 minutes. Strain and keep the broth over low heat.
  • Bring a large pot of salted water to a boil over medium heat. Add the bok choy and blanch for no more than 1 or 2 minutes. Remove the bok choy from the water and immediately plunge it into a bowl of ice water to shock it and stop the cooking. When cool, drain and set aside. Finely chop the green onion and cut the shiitake mushrooms into julienne slices. Slice the nori into thin strips.
  • Put a medium skillet over medium-high heat and add the vegetable oil. Add the shrimp to the hot oil for about 1 minute per side, just until they turn pink. Put the shrimp and clams into the hot poaching liquid and poach them for about 2 minutes. Add the bok choy and mushrooms and cook for 1 minute more.
  • Remove shrimp and clams from the broth and put them into a shallow bowl. Surround them with the bok choy and shiitakes. Pour 1 or 2 ladles of broth over the dish and garnish with chopped green onion and nori strips.

This stir-fry is full of flavour and can be served up in a matter of minutes. The dish was inspired by all the cheap and cheerful seafood places in Hong Kong that I visited, where some of the most amazing seafood was served! I was particularly taken with a garlic prawn dish I ate - the prawns were butterflied (cut in half down the middle of the spine), topped with generous amounts of butter, garlic and spring onions and steamed. My tangy chilli and garlic prawns is inspired by that memorable dish. Make sure you buy raw tiger prawns because if you buy cooked, they will be too chewy when cooked again in this dish.

2 tablespoons groundnut oil
5 cloves garlic, finely chopped
1 medium red chile, finely chopped
7 ounces raw Tiger (jumbo shrimp) or King prawns (langoustines), shelled and deveined
1 tablespoon Shaohsing rice wine or dry sherry
Juice of 1 lime
3 ounces French beans (green beans), chopped into 1/2-inch lengths
Pinch sea salt
1 teaspoon dried chile flakes

Steps:

  • Heat a wok or pan over a high heat, and add the groundnut oil. Add the garlic, and chiles, and stir-fry for a few seconds. Then, add the prawns, rice wine or sherry, and the lime juice, and stir-fry until the prawns start to turn pink.
  • Add the French beans, and mix together. When the prawns have all turned pink, season with the salt, and chile flakes, and serve immediately.

2 lbs large raw tiger shrimp, in their shells, thawed if frozen
1/2 cup butter
1 tablespoon vegetable oil
6 garlic cloves, smashed
2 limes, juice and zest of
1 bunch fresh coriander, chopped
warm tortilla, to serve
lemon slice, for the finger bowls

Steps:

  • Rinse the prawns in a colander, remove their heads and leave them to drain.
  • Heat the butter and oil in a large frying pan, add the garlic and fry over a low heat for 2 to 3 minutes (Cook the prawns in a large frying pan or cast iron flamproof dish that can be taken directly to the table, so that they retain their heat until they are served).
  • Add the lime rind and juice.
  • Cook, stirring constantly, for 1 minute more.
  • Add the prawns and cook them for 2 to 3 minutes until they turn pink.
  • Remove them from the heat, sprinkle with coriander and serve with the warm tortillas.
  • Give each guest a finger bowl filled with water and a slice of lemon, for cleaning their fingers after shelling the prawns, and provide lots of paper napkins!

BROILED LEMON AND GARLIC TIGER PRAWNS

1 ½ pounds tiger prawns, peeled and deveined
1 cup butter
1 teaspoon minced garlic
1 ½ tablespoons lemon juice
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven on broiler setting. With a sharp knife, remove tails from prawns, and butterfly them from the underside. Arrange prawns on broiler pan.
  • In a small saucepan, melt butter with garlic and lemon juice. Pour 1/4 cup butter mixture in a small bowl, and brush onto prawns. Sprinkle Parmesan cheese over shrimp.
  • Place broiler pan on top rack, and broil prawns for 4 to 5 minutes, or until done. Serve with remaining butter mixture for dipping.
