Best Basic Sweet Bread image

This easy, basic, yeast, sweet-bread recipe uses only eight ingredients and can be made into dinner rolls, cinnamon rolls or sticky buns.

1 cup milk
⅓ cup white sugar
⅓ cup butter
1 tablespoon active dry yeast
4 cups all-purpose flour
½ teaspoon salt
2 eggs
2 tablespoons vegetable oil

Steps:

  • In a small saucepan over medium heat, combine the milk, sugar and butter. Heat until slightly warm to the touch then remove from heat and stir in the yeast. Let stand until foamy, about 10 minutes.
  • In a large bowl, stir together the flour and salt. Mix in the eggs, oil and the yeast mixture. Mix until dough pulls away from the sides of the bowl. Turn dough out onto a floured surface and continue to knead until the dough is smooth and elastic, about 10 minutes. Grease a large bowl with 1 tablespoon of oil. Place the dough into the bowl and turn once to coat. Cover and let stand in a warm place until double in size, about 1 hour.
  • Use remaining oil to grease a cookie sheet or 9x13 inch pan. For plain rolls, punch down dough and divide into 12 equal pieces. Roll the pieces into balls and place them into the greased pan side by side. Let dough rise for 20 to 25 minutes, or until almost double. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 20 to 25 minutes in the preheated oven, until rolls are golden brown.

This is a great bread dough recipe for making a variety of final products. I use it as my base for cinnamon rolls, caramel rolls, monkey bread, dinner rolls with pork, etc. Since so many people have asked me for my recipe over the years, I'm finally posting it online. Enjoy!

1/2 cup unsalted butter
1/2 cup milk
1/2 cup cold water
2 1/4 teaspoons active dry yeast (1 packet)
1/4 cup warm water (~110 degrees F)
4 1/2-5 cups all-purpose flour
1/4 cup sugar
1 egg, beaten
1 1/2 teaspoons salt

Steps:

  • Put butter and milk in a small saucepan and heat until you first see bubbles, stirring occasionally to keep milk from burning. Then remove from heat and add the cold water. [We're scalding the milk and then cooling it back down to not kill the yeast].
  • Meanwhile, in a large mixing bowl, combine the yeast and warm water, then let sit for about 10 minutes.
  • Once the yeast is activated and the milk mixture is under 130 degrees F, add the milk mixture to the yeast and also the sugar, egg, salt, and 2 cups of the flour. Beat with electric mixer on low speed until moistened and then mix on medium speed for two minutes. Then switch to a mixing spoon and add another 2 cups of flour. Finally, turn dough out on floured board and knead in additional flour to make a moderately stiff, soft dough. If you have a stand mixer, do all this mixing the easy way and use your dough hook.
  • Place dough in a lightly greased bowl, turn once to grease surface, cover and let rise in a warm place until doubled in size--about one hour.
  • The next step is to shape according to your desired final product, then cover and let rise again for about 45 minutes, then bake.
  • For basic dinner rolls, divide dough into 16 pieces, roll each between your hands to make a ball. These will need to bake at 350 degrees F for about 15-18 minutes. For the more sugary products, use your favorite methods and fillings and increase your baking time as needed, temperature should be fine for most.

After several experiments, I created this cross between a bread and pastry dough that works perfectly for making filled buns. I generally fill with a BBQ filling, but you can be creative.

½ cup white sugar
1 cup warm milk (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
4 cups bread flour
2 eggs, beaten (divided)
6 tablespoons vegetable oil
2 teaspoons salt
2 teaspoons water
1 teaspoon sesame seeds for garnish (divided)

Steps:

  • Whisk the sugar and milk together in a large mixing bowl until the sugar is dissolved. Stir in the yeast, and let stand until a frothy layer forms on the milk, about 10 minutes. Stir in the flour, most of the beaten eggs (reserve about 1 tablespoon of egg in a small bowl for later), vegetable oil, and salt, mixing well until thoroughly combined.
  • Turn the dough out onto a well-floured work surface, and knead until smooth and elastic, about 10 minutes. The dough should be slightly sticky. Place the dough into a large oiled bowl, cover with a damp cloth or plastic wrap, place the bowl in a warm spot, and let rise until doubled, 2 to 3 hours.
  • Line a baking sheet with parchment paper.
  • Remove the dough from the bowl, and knead it briefly to punch down, about 1 minute. Roll the dough out into a rope, and cut it into 12 equal-sized pieces. Roll each piece into a ball, and use your fingers to flatten each ball into a disc about 5 to 6 inches in diameter.
  • Place about 2 tablespoons of your favorite bun filling in the center of the dough circle, and bring the edges of the dough up over the filling. Pinch and twist the top together to seal in the filling. Make sure there are no open spots. Place each filled bun seam-side down on the parchment paper while you finish making the rest of the buns. Cover the filled buns with plastic wrap, and let them rise for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat the 1 tablespoon of reserved beaten egg with the water to make an egg wash, and brush the top of each bun with the egg mixture. Sprinkle each bun with a few sesame seeds, and bake in the preheated oven until the tops are browned and shiny, turning the baking sheet around halfway through baking, for 20 to 30 minutes. Serve warm.

  • Gather Tools. Before you rush out to buy ingredients, make sure you have all the essential tools. Many can be improvised, but the scale is a MUST because all measurements will be given by weight for accuracy.
  • Gather Ingredients. Get all your ingredients ready. You can weigh everything before hand or tare your scale as you add each new ingredient to the mixing vessel (this won’t work for the eggs though).
  • Prepare the Roux. Weigh out the flour and water for the roux and mix well in a small saucepan. Cook over low to medium heat and use a whisk to stir continuously until it reaches 65 °C.
  • Prepare the Dough. In the large mixing bowl, combine the bread flour, sugar, salt, and instant yeast. (If you are not using dry active yeast instead of instant, let it dissolve in the milk and add it to the dough with the liquids).
  • Proof the Dough. Form the dough into a tight ball (see step 8 for tips on this) and place it seam down in a lightly oiled proofing container which you have weighed ahead of time!
  • Shape the Dough. After the dough has doubled in size, carefully remove the cover and with the dough still in the proofing container, punch it down with your knuckles.
  • Bake the Dough and Eat! Gently peel off the towel/plastic sheet. The buns should have now doubled in size and are ready for baking. Traditionally, Chinese buns are brushed with an egg wash to get that nice glossy look, so beat an egg and apply with a pastry brush.
  • Additional Ideas and Tips. Kneading By Hand. There are many methods for kneading dough, but for this recipe, I use what i consider to be the most basic one.

  • Ingredients. For this delicious sweet bread: 5 cups bread flour (all purpose flour will also work: the kneading time will need to be increased though)
  • Making the Tangzhong. These are some simple steps to make the tangzhong: Mix the 1/3 cup of flour and water together. Whisk until the flour is completely dissolved there are no lumps.
  • Combine and Kneading. Combine the flour, salt, sugar and instant yeast in a bowl. Make a well in the center of the dry ingredients. Add in all wet ingredients (milk, eggs and the tangzhong).
  • Creating the Form. Knead the dough into a ball shape. Take a large bowl and grease with oil. Place dough into the greased bowl and cover with a wet towel.
  • Alternative Shapes. Place the dough into a greased pan. Throughout this entire process, you can have fun with it! I formed my dough into rolls, a regular loaf, and even a funky small combination of rolls, as shown int the second picture.
  • Proofing the Rolls in the Pan. Now it's time to place each of the rolls into the bread pan. After, put a wet towel over the rolls and let them rise until they are double the size, which is about 50 minutes.
  • Finish! You finally accomplished making Asian Sweet Bread (otherwise known as Hong Kong Pai Bao or Hokkaido Milk Bread). Don't they look great?!
