ASIAN CHICKEN SALAD IN CRISPY WONTON CUPS



Asian Chicken Salad in Crispy Wonton Cups image

A spicy, creamy, crunchy chicken salad, served in bite-sized crispy wontons that are baked in mini muffin tins.

2 cooked chicken breasts
1 tablespoon mayonnaise
2 tablespoons fish or soy sauce
Juice of 3 limes
1 tablespoon sriracha
1 clove garlic
3 small carrots
1/2 seedless cucumber (decrease to 1/4 depending on size)
2 shallots
1 tablespoon chopped cilantro
24 wonton wrappers

Steps:

  • Preheat oven to 400°F. Shred chicken.
  • In a small bowl, combine mayo, soy or fish sauce, juice from the 3 limes, and sriracha. Grate garlic with a microplane and add to the mixture. Pour dressing over chicken.
  • Thinly slice carrots, cucumber, and shallots and add to the chicken. Mix well.
  • Thoroughly coat the cups of a mini muffin tin with cooking spray. Press one wonton wrapper into each muffin cup, and liberally spray the tops and sides of the wonton wrappers with additional cooking spray. Bake at 400°F for 5-7 minutes or until wontons are crispy.
  • Add a spoonful of chicken salad to each individual wonton and serve immediately. Enjoy!

2 tbsp light soy sauce ((Note 1))
3 tbsp rice vinegar ((aka rice wine vinegar, or use cider vinegar))
1 tbsp sesame oil (toasted)
2 tbsp grapeseed oil ((or canola or any other neutral flavored oil))
1 tsp sugar
1 1/2 tsp fresh ginger (, grated or very finely chopped)
1 garlic clove (, minced)
1/2 tsp black pepper
4 cups Chinese cabbage ((Nappa Cabbage), finely shredded (Note 2))
1 1/2 cups red cabbage (, finely shredded)
1 cup carrot (, finely julienned (see video))
2 cups chicken (, shredded)
1/2 cup shallots / scallions (, finely sliced on the diagonal)
1/2 to 1 cup crunchy noodles ((I use Chang's) (Note 3))
1 - 2 tsp sesame seeds

Steps:

  • Combine the Dressing ingredients in a jar and shake. Set aside for 10 minutes or so for the flavours to meld.
  • Place the Salad ingredients together in a large bowl along with half the crunchy noodles. Drizzle over dressing then toss. (Note 4)
  • Divide between serving bowls. Top with more crunchy noodles and a good sprinkle of sesame seeds. Serve immediately!

Great for summer! Crispy fried wonton strips and grilled chicken top lettuce, almonds, sesame seeds, and mandarin oranges; finished with a delicious green onion-based dressing.

4 (6 ounce) skinless, boneless chicken breast halves
teriyaki marinade
8 green onions, chopped
1 teaspoon salt
1 teaspoon pepper
½ cup sugar
¾ cup rice vinegar
1 cup olive oil
½ (14 ounce) package wonton wrappers
oil for frying
1 head iceberg lettuce, chilled, and torn into bite-size pieces
1 (4 ounce) can sliced water chestnuts, drained
¼ cup toasted sesame seeds
½ cup toasted sliced almonds
1 (10 ounce) can mandarin orange segments, drained

Steps:

  • Place chicken breasts in a bowl, pour teriyaki sauce over them, and coat well. Cover, and refrigerate for 1 hour.
  • Preheat an outdoor grill for direct heat.
  • For the dressing, place green onions, salt, pepper, and sugar in a blender. Pour in olive oil and rice vinegar. Blend until smooth. Remove to a bowl, cover, and refrigerate until ready to serve.
  • Grill chicken, turning, until done. Remove to a cutting board, and cut into strips.
  • In a large skillet or wok, warm oil over medium-high heat. Cut wonton wrappers into strips. Fry wonton strips until crisp. Remove to paper towels.
  • In a large bowl, toss together lettuce, water chestnuts, sesame seeds, sliced almonds, and mandarin oranges. Pour dressing over salad, and toss gently. Top with fried wontons and grilled chicken strips.

Oil for deep-fat frying
3 cups cubed cooked chicken
1 head lettuce, shredded
4 green onions with tops, sliced
1/4 cup sesame seeds, toasted
DRESSING:
1/3 cup white wine vinegar
1/4 cup sugar
3 tablespoons canola oil
2 tablespoons sesame oil
1 teaspoon salt
1 teaspoon monosodium glutamate, optional
1/2 teaspoon pepper

Steps:

  • Deep-fry wonton strips in oil until brown and crisp. Drain on paper towels; set aside. , In a large salad bowl, gently combine the chicken, lettuce, green onions and sesame seeds. My wonton poppers allows us to enjoy one of our favorite appetizers without the guilt These little "poppers" are a great way to enjoy the taste of jalapeno poppers without all the fat and calories. -I used light mayonnaise and cream cheese to reduce fat. -Chicken for protein. & Wonton wrappers sprayed with a non stick cooking spray instead of deep frying.

10 wonton wrappers, cut into 1/4-inch strips
1/4 cup cider vinegar
3 tablespoons canola oil
3/4 teaspoon sesame oil
2 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon pepper
5 cups torn romaine
3 cups cubed cooked chicken breast
1 medium sweet red pepper, cut into 1/4-inch strips
1 medium sweet yellow pepper, cut into 1/4-inch strips
1/2 cup halved grape tomatoes

Steps:

  • Lightly spritz both sides of wonton strips with cooking spray; place on a baking sheet. Broil 4-6 in. from the heat for 2-3 minutes or until golden brown. Turn strips over; broil 2-3 minutes longer or until golden brown. Remove to wire racks to cool., For dressing, in a small bowl, whisk the vinegar, canola oil, sesame oil, sugar, salt and pepper; set aside.
