1 tablespoon olive oil
1-inch thick piece pancetta, cut into small dice
3 cloves garlic, finely chopped
3 tablespoons all-purpose flour
6 to 7 cups whole milk, heated
4 large egg yolks, lightly whisked
2 teaspoons finely chopped fresh thyme leaves
1 teaspoon cayenne pepper
2 cups freshly grated Asiago cheese, plus more for the top
1 1/2 cups Irish white Cheddar, plus more for the top
1 1/2 cups Mountain Valley Cheddar, plus more for the top
1 cup grated Fontina cheese, plus more for the top
1/2 cup freshly grated Parmigiano Reggiano, plus more for the top
Salt and freshly ground black pepper
1 pound elbow macaroni, cooked just under al dente
1/2 cup coarsely chopped flat-leaf parsley

Steps:

  • Preheat oven to 350 degrees F. Butter the bottom and sides of a 3 quart baking dish and set aside.
  • Heat the oil in a large saute pan over medium heat. Add the pancetta and cook until golden brown on all sides. Remove with a slotted spoon to a plate lined with paper towels.
  • Add the garlic to the pan and cook until lightly golden brown. Whisk in the flour and cook for 1 to 2 minutes. Whisk in 6 cups of the hot milk, increase the heat to high and cook, whisking constantly until thickened, 3 to 5 minutes. Whisk in the eggs until incorporated and let cook for 1 to 2 minutes. Remove from the heat and whisk in the thyme, cayenne, and all of the cheese until completely melted, season with salt and pepper. If the mixture appears too thick, add some of the remaining milk 1/4 cup at a time.
  • Place the cooked macaroni in a large bowl, add the cheese sauce, reserved pancetta and parsley and stir until combined. Transfer the mixture to the prepared pan. Combine together additional Asiago, Cheddars, Fontina, and Parmesan in a bowl and sprinkle evenly over the top of the macaroni. Bake in the oven until heated through and the top is lightly golden brown, 12 to 15 minutes. Remove from the oven and let rest 10 minutes before serving.

¾ cup dry bread crumbs
2 tablespoons melted butter
8 ounces macaroni
2 tablespoons butter
1 small onion, minced
1 tablespoon all-purpose flour
salt and pepper to taste
¼ teaspoon dry mustard
1 ½ cups milk
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish. Place the bread crumbs into a small bowl and mix well with the melted butter; set aside.
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain, then place into prepared casserole dish.
  • While the pasta is cooking, melt 2 tablespoons butter in a saucepan over medium heat. Stir in the minced onion and cook until the onion softens and turns translucent, about 5 minutes.
  • Stir in the flour, pepper, salt, and dry mustard until incorporated, then pour in the milk and bring to a simmer. Simmer, stirring constantly until the milk has thickened, about 10 minutes. Take the milk off of the heat and stir in the Cheddar cheese until melted. Pour cheese sauce over the macaroni, then sprinkle evenly with buttered bread crumbs.
  • Bake until the top is golden and bubbly, about 20 minutes.

12 slices bacon, chopped
3 cups fresh coarse breadcrumbs
1 cup packed finely grated parmesan cheese (about 4 ounces)
1/2 cup chopped fresh Italian parsley

3 tablespoons all-purpose flour
6 cups whole milk
6 large egg yolks
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 350*F.
  • Butter 13X9X2 inch baking dish.
  • Cook macaroni in a heavy large pot of boiling salted water until just tender but still firm to bite.
  • Drain, rinse and drain again.
  • Cook bacon in a large heavy pot over medium heat until crisp.
  • (10 minutes) Transfer bacon and 1/4 cup pan drippings to a large bowl.
  • Add breadcrumbs, 1/4 cup of the Parmesan cheese and 1/4 cup parsley.
  • Toss together.
  • Add minced garlic to remaining pan drippings and saute over mdedium heat until fragrant, about 30 seconds.
  • Add flour and whisk 3 minutes.
  • Gradually whisk in whole milk, then egg yolks, salt and pepper.
  • Cook until mixture thickens, whisking constantly, about 12 minutes.
  • Add 2 cups Fontina cheese and remaining 3/4 cup Parmesan.
  • Whisk to melt cheese.
  • Remove from heat.
  • Stir in remaining 1 1/2 cups fontina, peas and macaroni.
  • Pour into prepared dish.
  • Sprinkle breadcrumb mixture over top and bake just until topping is golden, about 15 minutes.
  • Let stand 15 minutes before serving.

1 1/2 teaspoons salt

Steps:

  • Preheat oven to 350°F Butter 13x9x2-inch baking dish. Cook macaroni in heavy large pot of boiling salted water until just tender but still firm to bite. Drain. Rinse and drain again.

This is one of my favorite recipes for a macaroni casserole, it's even good enough to serve to guests. I most always add in about 1-1/2 cups frozen peas. This casserole makes enough to serve 8 people, to serve more just double and make in two separate dishes. I have used different cheeses in the past, but I strongly advise you to use only Fontina cheese for this casserole.

3 1/2 cups macaroni noodles
3 cups coarse fresh breadcrumbs
10 -13 slices bacon, strips
1/4 cup grated parmesan cheese
1/3 cup parsley, chopped
2 -3 minced fresh garlic cloves
3 tablespoons all-purpose flour
3 cups full-fat milk
3 cups half-and-half
6 large egg yolks
salt and black pepper
3 1/2 cups packed Fontina cheese, shredded
1 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • In a skillet cook the bacon until crisp, then chop finely (reserve the bacon drippings).
  • Butter a 13 x 9-inch baking dish.
  • Cook macaroni in salted boiling water until JUST firm-tender and still firm to the bite (do not overcook!) drain and rinse with cold water.
  • In a large bowl toss together chopped cooked bacon, 1/4 cup reserved bacon drippings, add in breadcrumbs, 1/4 cup Parmesan cheese and 1/4 cup Parmesan cheese, toss to combine well and set aside.
  • To the skillet with the remaining bacon drippings add in the fresh garlic; saute for about 1 minute.
  • Add in the flour and whisk for about 3 minutes.
  • Gradually add in full-fat milk, half and half cream, egg yolks and black pepper (do not add in any salt until later) cook whisking until mixture thickens (whisking constantly for about 5-7 minutes).
  • Add in 2 cups Fontina cheese and 1 cup grated Parmesan cheese; whisk until the cheeses melt; remove from the heat and season with salt if desired.
  • Mix in the cooked macaroni (if you are adding in peas, then add them in at this point, you can also add in about 2 tablespoons chopped fresh parsley also if desired).
  • Stir in the remaining 1-1/2 cups Fontina cheese; mix to combine.
  • Transfer the macaroni/cheese mixture to a prepared baking dish.
  • Bake for about 25-30 minutes.
  • Remove from the oven and sprinkle the reserved bread crumb mixture over the casserole and return to the oven for another 15-20 minutes, or until the topping is golden.
  • Let stand for 20 minutes before serving.
  • Delicious!

1 teaspoon Worcestershire sauce
¾ teaspoon salt
1 dash hot pepper sauce

3 ½ cups shredded Cheddar cheese, divided
½ cup bread crumbs
2 tablespoons butter, melted
½ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • Heat the milk in a small saucepan. Stir in mustard, Worcestershire sauce, salt, and hot sauce. Set aside.
  • Stir 1 1/2 tablespoons butter and 3 cups cheese into the drained macaroni. Pour the hot milk mixture over the cheese and macaroni. Transfer to prepared baking dish. Sprinkle remaining 1/2 cup cheddar on top. Combine the bread crumbs with the melted butter, and spread over the top. Sprinkle with paprika.
  • Bake in preheated oven for 30 minutes, and then place under the broiler for 1 to 2 minutes.
