The 1lb thin spaghetti
The ½ cup of soy sauce
¼ cup sesame oil
1/3 cup sugar
3 green onions (thinly sliced)
¼ cup sesame seed Chinese chicken-
The ¼ cup of soy sauce
¼ cup teriyaki sauce
2 garlic cloves (minced)
¼ cup brown sugar
1 teaspoon fresh ginger (chopped)
4 boneless skinless chicken breasts (sliced into 1inch chunks)
sesame oil (for sautéing)

Steps:

  • In a large bowl mix together ¼ cup soy sauce, ¼ cup teriyaki sauce, garlic, ¼ cup brown sugar, and ginger. Mix well and make sure the sugar has dissolved. Add the chicken and coat the chicken with the sauce. Cover and place into the refrigerator for 2-3 hours.
  • To prepare sesame noodles-bring a large pot of lightly salted water to a boil. Cook noodles according to package directions. Drain and rinse the noodles. In a jar or sealable container add ½ cup soy sauce, ¼ cup sesame oil, and 1/3 cup sugar. Shake until well blended and the sugar has dissolved. Pour sauce over the pasta and toss to combine. Cover and set aside while the chicken is cooking.
  • Remove the chicken from the marinade and discard the marinade. Heat sesame oil in a large fry-pan or wok. Add the chicken and stir-fry in batches for about 10 minutes or until the chicken is fully cooked (the internal temperature has reached 165 degrees). Add more sesame oil as needed.
  • Remove the chicken from the pan and serve the chicken over the sesame noodles. Garnish with sesame seeds and sliced green onions.

  • In a large skillet brown chicken in oil, stirring constantly until juices run clear.
  • Add the onion, broccoli, carrots and peas. Cover skillet and steam for 2 minutes.
  • Add the Chinese noodles and teriyaki sauce. Stir noodles into chicken/vegetable mixture, making sure they are coated with sauce. When the noodles wilt, serve.

2 cloves garlic, finely minced
1 tablespoon oil
1 1/2 cups store-bought or homemade chicken broth
1/2 cup water
4 fresh shiitake mushrooms, sliced
4 slices carrot
4 baby bok choy
1 dash white pepper
salt to taste
4 oz. (115 g) chicken, boiled, cooked, and hand-shredded into pieces

Steps:

  • Prepare your noodles first by boiling the noodles al dente. Rinse the noodles with running water, drain and set aside.
  • Prepare the garlic oil by stir-frying the garlic in the oil until they turn light to golden brown. Set aside.
  • Prepare the broth by bringing the chicken broth and water to boil. Add the mushrooms, carrot, baby bok choy, white pepper, and salt to taste. Once they are cooked, turn off the heat.
  • To serve, add the noodles in a bowl, and top with the shredded chicken on top. Ladle the soup on top of the noodles and top with the garlic oil. Serve immediately. If you like, you can serve it with cut red chilies in soy sauce.

1 small onion, diced
1 (10.75 ounce) can low-fat cream of mushroom soup
1 (10.75 ounce) can water
¼ teaspoon garlic salt, or to taste
ground black pepper to taste
1 roasted chicken, bones and skin removed, meat cut into cubes
1 (8.5 ounce) package chow mein noodles
1 (4 ounce) jar pimentos

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a casserole dish with cooking spray.
  • Heat olive oil in a saucepan over medium heat; cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add soup and water; stir. Season the mixture with garlic salt and pepper.
  • Layer chicken into the bottom of the prepared casserole dish; top with chow mein noodles and pimentos. Pour the mixture from the saucepan over the layers to cover.
  • Bake in preheated oven until completely heated through, 20 to 30 minutes.

For my home version, I crisp up the noodles in a pan - much healthier, less mess, just as fast and definitely just as tasty!

1 tbsp oyster sauce
2 tbsp Chinese cooking wine ( (shoasing wine) (sub Dry Sherry, Mirin, Note 1))
1.5 tbsp soy sauce (, light or all purpose (not dark soy))
1/4 tsp sesame oil
1 tsp sugar
White pepper (, one dash)
3/4 cup (185ml) chicken stock / broth (, low sodium)
3 tbsps cornflour / corn starch
200 g / 8 oz fresh chow mein noodles ((Note 2))
4 tbsp water (, separated)
2 tbsp peanut oil ((or vegetable or canola))
150 g / 5 oz chicken (, thinly sliced)
1 tbsp peanut oil (, if needed (or vegetable or canola))
2 garlic cloves (, finely chopped)
1/2 onion (, sliced)
1 carrot * (, small, halved lengthwise then sliced on diagonal)
1 bok choy * (, stems and leaves separated with stems cut vertically into sticks)
2 shallots/scallions * (, cut into 5cm/2" pieces)
2 cups cabbage * (, cut into 2.4cm / 1" squares)
1/2 cup (125ml) water

Steps:

  • Mix the Sauce ingredients EXCEPT cornflour and chicken broth/stock.
  • Remove 1 tbsp Sauce and mix through chicke. Leave to marinate 10 minutes+.
  • Mix cornflour into Sauce until lump free.
  • Turn oven onto low (to keep noodles warm while you cook the topping).
  • Divide noodles into 2 then shape into 20cm/8" rounds. Keep them tangled - this holds them together while cooking.
  • Heat 1 tbsp oil in skillet over medium high heat. Place 1 noodle cake into pan then drizzle over 2 tbsp water.
  • Wait until the water evaporates (steam cooks the noodles), then pat down lightly and let the noodles cook for a further 1 to 2 minute until the bottom of the noodles are golden brown (lift up with a spatula to check).
  • Slide noodles onto a plate, then flip upside down back into the pan. Cook for a further 1 1/2 - 2 minutes until golden brown, then transfer to tray and place in oven to keep warm.
  • Repeat with remaining noodle cake.
  • Add an extra 1 tbsp oil if needed, increase heat to HIGH. Add garlic and onion, cook for 30 seconds.
  • Add chicken and cook until it changes from pink to white (still raw inside)
  • Add the carrot and bok choy stems, cook 30 seconds.
  • Add cabbage and leaf of buk choy, cook for 1 minute until they start to wilt.
  • Add chicken broth, water, then Sauce and stir. Let it simmer for 1 - 2 minutes until the Sauce thickens to a syrup consistency (see video).
  • Place a noodle cake on the plate, then spoon over the stir fry onto the middle of the noodles (leave edges crispy) being sure to use up all the sauce so it soaks the noodles. Serve immediately!

¼ tsp pepper powder
1/8 tsp salt ((or as needed))
1 tsp soya sauce ((naturally brewed or organic))
½ to 1 tsp five spice (or garam masala powder)
150 grams Noodles ((or 2 packs))
1 tsp oil ((optional))
salt ( if needed (optional))
1 to 2 tsp oil ((to coat))
2 tbsp oil ((sesame oil or use any))
2 cloves garlic ((chopped finely))
2 tbsps spring onion (( whites chopped))
¼ cup bell pepper (( or capsicum julienned))
¼ cup carrots ( julienne)
¼ cup cabbage ( (optional))
¼ cup spring onion ((greens))
1 ½ tbsp chilli sauce ((or use any))
1 tbsp water ((to mix with sauce))
1 tbsp soya sauce
salt (if needed)

Steps:

  • Marinate chicken with pepper, salt , soya sauce and spice powder or garam masala. Cover and set aside until the noodles are boiled.
  • Bring 2 to 2 1/2 liters of water to a boil in a large pot.
  • Add noodles to the boiling water. Please follow the instructions on the noodles pack for timings. If the instructions insist, then add 1 tsp oil and salt to the boiling water.
  • Meanwhile wash and cut all the veggies. Set these aside.
  • When the noodles are cooked to al dente, drain them to a colander. Do not overcook them as they turn sticky and mushy.
  • Immediately add 1 tsp to tbsp oil and smear it well to the noodles. Set these aside.

2 bone-in skin-on chicken thighs ((or boneless skinless thighs) (*footnote 2))
4 cloves garlic (, smashed)
1 " ginger (, sliced)
1 green onion (, halved)
1/2 teaspoon cumin seeds
1/2 teaspoon Sichuan peppercorns ((or black pepper))
1 teaspoon Shaoxing wine ((or dry sherry))
4 cups chicken broth ((or low-sodium chicken broth))
1/2 bunch cilantro (, including leaves and stems (about 1 cup packed))
1 bay leaf
1/2 teaspoon soy sauce ((or to taste))
3 oz dried noodles ((or 4 oz thick fresh noodles))
1 carrot (, sliced)
3 baby bok choy (, cut into 6 pieces lengthwise)
2 tablespoons fresh cilantro (, chopped)

Steps:

  • Heat the oil in a 3.5 qt pot or dutch oven over medium heat until hot. Add the chicken thighs. Cook undisturbed for a minute or until the bottom turns light golden.
  • Flip the chicken thighs. Add the garlic, ginger, green onion, cumin, and Sichuan peppercorns. Cook for 1 minute, stirring occasionally, until the spices release fragrance.
  • Add the Shaoxing wine, stock, cilantro, and bay leaf. Bring to a boil over medium-high heat, then reduce to a simmer. Cook covered for 20 minutes.
  • Meanwhile, cook the noodles in a separate pot according to package directions. (*Footnote 3)
  • Remove the chicken with a pair of tongs and transfer it to a plate. Use two forks to remove and discard the chicken skin. Then use the forks to shred the chicken meat.
  • Use a mesh colander to remove the solid ingredients and discard them.
  • Add the soy sauce and taste the broth to adjust the seasoning. Heat over medium-high heat again, to return to a boil.
  • Add the carrots and cook for 3 minutes. Add the bok choy for another minute or until it reaches the desired texture. Add back the shredded chicken and give it a stir, so it warms up again.
  • Transfer the noodles, the broth and vegetables to serving bowls. Garnish with a sprig of cilantro and serve hot.

6 scallions, thinly sliced on the bias

Steps:

  • Mix soy sauce, mirin, 1 teaspoon of the sesame oil, garlic, ginger, sugar, vinegar, and chile paste in a small bowl.
  • Heat the broth in a medium saucepan. Add the soy sauce mixture, the chicken, and the vegetables and bring to a boil. Simmer for two minutes or until chicken is cooked through. Add the remaining 1 teaspoon sesame oil. Taste and adjust seasonings.
  • Pour over prepared Chinese noodles. Garnish with cilantro and scallions.

2 trees of Bok Choy
1 tsp. salt

1 tbsp. finely chopped scallion

Steps:

  • Make a chicken stock. Then shred the leg meats into shreds.
  • Pour enough water in a pot and then cook the noodles as instructed. At the last minute, add the Bok Choy leaves in.
  • At the same time, prepare two serving bowls, add salt, white pepper and scallion in bottle. Pour 1 cup of hot chicken stock. Mix well.
  • Transfer the noodles to serving bowls, top with shredded chicken and pour the extra stock to cover the noodles.

What is essential, therefore, is to have a wok to get the flavor and texture of this oriental recipe. So the first step is to add a little oil to the wok and put it over a medium heat; while it's heating up, cut the onion, pepper and garlic into small pieces and sauté in the wok.
  • Season the chicken breast with a little salt and ginger, and when you see the onion begin to become transparent, add the chicken and stir-fry for a few minutes. When it is half done, add the soy and oyster sauce so the meat will have the intense flavor of both sauces.
  • When you see the chicken is almost done, add the broth to the wok and leave to boil. Add the noodles to the broth and cover the wok with a lid to simmer for about 5 or 10 minutes, the time required for the noodles how you like them; if you like them soft leave it a little longer until it is to your liking.
  • When the noodles are to your liking, turn off the heat and leave covered for about 2 or 3 minutes to finish picking the perfect consistency for our recipe.
