Chinese Restaurant-Style Sautéed Green Beans Recipe image

This quick side dish of green beans glazed with a sweet, garlicky soy sauce makes a fabulous partner for any takeout-at-home-type main course, including Kung Pao Chicken, Salt-and-Pepper Shrimp, and Fried Rice. Choose young, fresh green beans that are all about the same size for this dish. I think it's easiest to start out stirring the beans with tongs and then switch to a heatproof spatula to add the garlic and sauce.

1 Tbs. less-sodium soy sauce
1 Tbs. honey
1 Tbs. unsalted butter
2 Tbs. extra-virgin olive oil
12 oz. green beans, trimmed
Kosher salt
1 Tbs. minced garlic

Steps:

  • Combine the soy sauce, honey, and 1 Tbs. water in a small dish and set near the stove. Set a shallow serving dish near the stove, too. In a 10-inch straight-sided sauté pan, heat the butter with the olive oil over medium-high heat. When the butter is melted, add the green beans and 1/2 tsp. salt and toss with tongs to coat well. Cook, turning the beans occasionally, until most are well browned, shrunken, and tender, 7 to 8 minutes. (The butter in the pan will have turned dark brown.) Reduce the heat to low, add the garlic, and cook, stirring constantly with a heatproof rubber spatula, until the garlic is softened and fragrant, 15 to 20 seconds. Carefully add the soy mixture (you'll need to scrape the honey into the pan). Cook, stirring, until the liquid reduces to a glazey consistency that coats the beans, 30 to 45 seconds. Immediately transfer the beans to the serving dish, scraping the pan with the spatula to get all of the garlicky sauce. Let sit for a few minutes and then serve warm.

1 lb string bean
1 tablespoon garlic
1 teaspoon ginger
3 scallions, chopped
4 oz shiitake mushrooms
½ lb ground pork
4 dried red chilies
1 tablespoon chili paste
2 tablespoons soy sauce
1 tablespoon rice wine
white pepper, dash

Steps:

  • In a large pan or wok, heat the oil over high. Fry the string beans until they start blistering. Remove the string beans.
  • In the same pan or wok, add the garlic, ginger, and scallions. Fry until fragrant.
  • Add the mushrooms and ground pork. Fry until the pork is mostly done. Stir in the the dried red chilies and chili paste.
  • Add the string beans back the pan/wok. Toss to combine everything. Add the soy sauce, rice wine, and a dash of white pepper. Serve!

1/2 lb fresh green beans
1/4 teaspoon sesame oil
1/4 teaspoon garlic powder
2 tablespoons light soy sauce
1/2 teaspoon gingerroot, peeled, minced
1 teaspoon brown sugar
1 teaspoon lemon juice
1 tablespoon butter

Steps:

  • Rinse green beans and trim ends off. Leave beans in long lengths.
  • Blanche beans for 4 minutes in hot water. Immediately immerse into bowl of ice water to stop cooking and retain bright color. Remove and pat dry.
  • In a small bowl, mix all remaining ingredients except butter. Place beans in a saucepan with butter. Add mixture and sautee green beans for 2 minutes. Shake pan to gently let beans roll.

This Chinese green bean stir-fry may seem simple, but it's truly delicious! We wok sear the green beans for flavor and stir-fry with crispy ground pork.

8 ounces ground pork ((225g, can substitute ground chicken or beef))
1 tablespoon Shaoxing wine
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
2 tablespoons water
2 tablespoons ginger ((minced))
1/2 teaspoon sugar
1 teaspoon cornstarch
3 tablespoons oil ((divided))
1 pound green beans ((450g, chopped to ½-inch pieces))
2 tablespoons garlic ((minced))
1/2 red bell pepper ((diced finely))
4 red chilies ((chopped, optional))
1/4 teaspoon sugar
1 teaspoon sesame oil
1 tablespoon light soy sauce
1/4 teaspoon ground white pepper
1/8 teaspoon salt ((a pinch, or to taste))
2 tablespoons water

Steps:

  • Combine the ground meat with all the marinade ingredients. Stir until any standing liquid has been absorbed by the meat. Marinate for 15-20 minutes.
  • Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped green beans. Stir and spread the beans into a single layer. Cook for 30 seconds. Then stir and repeat the spreading step several times until the green beans are slightly charred, wilted, and cooked through. Turn the heat lower if needed to avoid burning. It takes about 5-8 minutes to cook the green beans this way. (To speed up the cooking, add a few drops of water each you stir, to create some steam.) Transfer the cooked green beans to a dish and set aside.
  • Now add 1 tablespoon oil to the wok, with the heat turned up to high. Add the ground meat and brown it. Don't stir too much; give the meat a chance to brown and crisp. Once the meat has browned, reduce the heat to medium.
  • Next, add the garlic, bell pepper and chilies. Stir-fry for 1 minute. Add in the cooked green beans, ¼ teaspoon sugar, 1 teaspoon sesame oil, 1 tablespoon light soy sauce, ¼ teaspoon ground white pepper, a pinch of salt (to taste), and 2 tablespoons water. With the heat all the way up on high, stir-fry for a final 10-15 seconds and serve.

These Chinese-style garlic green beans are the perfect side dish. The green beans are flash fried, which gently blisters the outer skin but keeps the center tender and lightly crisp. Serve with my pork and cabbage potstickers and jasmine rice!

1 pound green beans (rinsed, and dried (see note 1))
1/2 cup safflower or vegetable oil ((see note 2))
2 1/2 tablespoons minced garlic (about 5 to 6 plump cloves)
1/4 teaspoon garlic salt or kosher salt
red pepper flakes
toasted sesame seeds

Steps:

  • Snap off the tough ends of the green beans. If your green beans are very long, snap them in half.
  • Heat the oil in a wok over medium-high heat. To check to see if the oil is hot enough, stick bamboo chopsticks into the wok so that the tips of the chopsticks are touching the bottom. You want to see tiny bubbles rapidly forming around the chopsticks. Alternatively, you can throw a green bean into the wok. If bubbles start to form around the bean immediately, the oil is ready for frying.
  • Working in batches, fry the green beans for about 2 minutes, until the green beans start to wrinkle on the outside. You don't need to cook the green beans for too long. Use a spider strainer to strain the oil from the beans and then transfer them to a plate lined with paper towels. Repeat until all the beans are fried. Turn off the heat. If you want the beans to be less greasy, blot them with paper towels.
  • Carefully pour the used frying oil into a bowl. If you do not want to handle hot oil, let the oil cool completely in the wok. Don't bother wiping the wok at this point because you'll be using it to fry the garlic next, and you can use the residual oil in the wok for that.
  • Heat the wok over medium-high heat. Add the minced garlic and cook it for about 30 seconds to 1 minute, until fragrant. Add the green beans back to the wok, along with the salt. Stir to combine. Cook for another minute. Turn off the heat and transfer the green beans to a serving plate. Garnish the beans with red pepper flakes and toasted sesame seeds, if you like.
  • Serve the green beans with my egg fried rice, chicken chow mein, or pork potstickers!
