Provided by Ree Drummond : Food Network

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 16

6 chicken breast fillets, flattened to 1/4-inch-thick
3 tablespoons olive oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon Italian seasoning
2 tablespoons salted butter
1 tablespoon olive oil
1/2 large onion, finely diced
3 cloves garlic, minced
1 jar (15.5 ounces) roasted red peppers, drained and roughly chopped
1 to 2 cups vegetable or chicken broth
1/2 teaspoon kosher salt, more to taste
Freshly ground black pepper
1/2 cup heavy cream (or more to taste)
One 4-ounce chunk Parmesan, to shave
2 tablespoons finely minced parsley

Steps:

  • For the chicken: Put the chicken in a resealable bag. Add the olive oil, salt, pepper and Italian seasoning to the bag and smush everything together. Seal and refrigerate.
  • For the red pepper sauce: Melt the butter and add the olive oil in a large skillet over medium-high heat. Add the onion and garlic and saute for 2 to 3 minutes or until starting to soften. Add the red peppers and cook for 2 to 3 minutes, until hot.
  • Add the broth (if you like a thicker sauce only add 1 cup broth, for a thinner sauce add 2 cups broth), salt and pepper and stir until heated. Splash in the cream.
  • Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers). You can serve the sauce right away or cool it and bag it up.
  • When ready to cook, heat a grill pan over medium-high heat and grill the chicken until cooked through, about 4 minutes a side.
  • Heat up the red pepper sauce in a pan. Serve everyone a piece of chicken, spoon some sauce over each piece, and garnish with Parmesan shavings and a sprinkling of parsley. Serve with roasted vegetables alongside.

CHINESE SALT AND PEPPER CHICKEN WINGS

Chinese Salt and Pepper Chicken Wings image

Chinese Salt and Pepper Chicken is a restaurant takeout favorite and it's easy to make at home. I love this spicy version with Szechuan peppercorns and stir-fried hot chile peppers and garlic.

Provided by Robin Donovan

Categories     Appetizer Recipes

Time 55m

Number Of Ingredients 14

For the chicken
¾ cup Shaoxing wine (see note for substitutions)
1 tablespoon minced ginger
3 garlic cloves, minced
1 teaspoon kosher salt
2 ½ pounds chicken wings
1 cup potato starch (see note for substitutions)
Oil for frying (2 to 3 cups)
For the chile topping
4 to 6 chiles (like serrano, red or green or a combination), thinly sliced
3 to 4 garlic cloves, thinly sliced
1 tablespoon butter
1/8 teaspoon ground white pepper
¼ to ½ teaspoon Szechuan pepper-salt (see note)

Steps:

  • In a large bowl, combine the wine, ginger, minced garlic, and salt and stir to mix. Add the chicken and toss to coat. Let marinate for at least 20 minutes or overnight (cover and refrigerate if more than 20 minutes).
  • In a large, heavy skillet, heat the oil until it shimmers (about 350°F).
  • Remove the chicken from the marinade (discard the marinade) and toss it with the potato starch, coating well.
  • Shake excess potato starch off of the chicken pieces and drop them into the hot oil. You can do 5 to 7 pieces of chicken at a time, but don't crowd the skillet. Plan to cook the chicken in 2 or 3 batches. Cook for about 5 minutes, until the bottoms of the chicken pieces are golden brown. Turn the chicken over and cook for about 5 minutes more, until golden brown on the second side. Transfer the cooked chicken pieces to a paper towel-lined plate to drain. Cook the remaining chicken pieces in the same manner.
  • Once all of the chicken has been fried, heat a heavy skillet over medium-high heat. Add the butter and let it melt. Once it is sizzling and begins to foam, add the chiles and garlic and cook, stirring frequently, until the chiles begin to brown, 1 to 2 minutes.
  • Put the fried chicken on a serving platter and then dump the fried chiles and garlic over the top. Sprinkle with the white pepper and the pepper-salt and serve immediately.

KILLER CHICKEN WITH MUSHROOM, ASPARAGUS, AND RED BELL PEPPER

Killer Chicken with Mushroom, Asparagus, and Red Bell Pepper image

Simple and delicious, this Asian-style chicken recipe is one I've refined over years. I used to spice it up as I love hot food, but this recipe just works better when you let the fresh flavors speak for themselves. You can also leave out the chicken and just make it with two eggs if you want a vegetarian option.

Provided by globalmitch

Categories     World Cuisine Recipes     Asian

Time 1h10m

Yield 4

Number Of Ingredients 16

2 cups basmati rice
4 cups water
1 tablespoon vegetable oil
1 red onion, cut into 1/2-inch slices
3 ½ pounds skinless, boneless chicken thighs, cut into 2-inch strips
1 tablespoon minced fresh ginger root
6 cloves garlic, minced
3 cups cremini mushrooms, cut in half
12 fresh asparagus, trimmed and cut into 2-inch pieces
2 small red bell peppers, cut into 1/2-inch strips
1 tablespoon fish sauce
1 egg
2 cups fresh basil leaves
1 cup fresh cilantro leaves, chopped
2 tablespoons sesame seeds, for garnish
tamari soy sauce to taste

Steps:

  • Bring the rice and water to a boil together in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 35 to 40 minutes.
  • When the rice is nearly done cooking, heat the oil in a large skillet over high heat. Cook the onion in the hot oil until softened, 2 to 3 minutes. Add the chicken, garlic, and ginger to the skillet and continue cooking and stirring until the chicken is completely browned, 7 to 10 minutes. Fold the mushrooms, asparagus, bell peppers, and fish sauce into the chicken mixture; continue cooking just until hot, about 5 minutes. Crack the egg, and scramble it into the mixture. Add the basil leaves to the mixture; cook until the leaves wilt slightly, about 30 seconds. Remove pan from heat immediately. Serve over the basmati rice; garnish with the cilantro and sesame seeds and a drizzle of the tamari soy sauce.

Provided by Rhonda Parkinson

Categories     Dinner     Entree

Time 25m

Yield 4

Number Of Ingredients 16

1 pound skinless, boneless chicken breasts (cut into bite-sized pieces)
2 teaspoons light soy sauce
1 teaspoon dark soy sauce
3 teaspoons Chinese rice wine or dry sherry (divided)
Freshly ground black pepper, to taste
4 teaspoons cornstarch (divided)
4 tablespoons chicken broth or water
1 teaspoon granulated sugar
1/2 teaspoon Asian sesame oil
3 tablespoons peanut or vegetable oil for stir-frying (divided)
1 teaspoon finely chopped ginger
1 garlic clove (peeled, finely chopped)
1/2 medium onion (peeled, finely chopped)
1/2 green bell pepper (diced)
1/2 red bell pepper (diced)
1 green onion (finely chopped)

Steps:

  • In a bowl, marinate the chicken with the light soy sauce, dark soy sauce, 1 1/2 teaspoons rice wine or dry sherry, pepper, and 3 teaspoons cornstarch, adding the cornstarch last. Let the chicken stand while preparing the other ingredients.
  • In a small bowl, combine the chicken broth or water, 1 1/2 teaspoons rice wine or dry sherry, sugar, and sesame oil. Whisk in 1 teaspoon cornstarch.
  • Heat a wok over medium-high heat and add 2 tablespoons oil. When the oil is hot, add half the ginger and garlic. Stir for about 10 seconds until aromatic, then add the chicken. Stir-fry the chicken for 2 to 3 minutes, until it turns white and is nearly cooked. Splash a bit of rice wine or dry sherry over the chicken while stir-frying if desired. Remove from the wok and drain in a colander or on paper towels. Clean out the wok.
  • Heat 1 tablespoon oil in the wok. Add the remainder of the ginger and garlic and stir for about 10 seconds until aromatic. Add the onion and green bell pepper. Stir-fry for a minute, then add the red bell pepper. Continue stir-frying for another minute, adding a bit of rice wine or dry sherry, chicken broth or water if the vegetables start to dry out.
  • Push the vegetables to the side and add the chicken. Stir briefly, then push to the sides. Re-stir the sauce and add it into the middle of the wok, stirring quickly to thicken. Stir to mix everything together. Stir in the green onion and serve hot over rice.
