CHINESE PEPPER STEAK



Chinese Pepper Steak image

A delicious meal, served with boiled white rice, that's easy and made from items that I've already got in my cupboards! My mother clipped this recipe from somewhere and it became a specialty of mine; however, I've been unable to find the original source.

1 pound beef top sirloin steak
¼ cup soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
½ teaspoon ground ginger
3 tablespoons vegetable oil, divided
1 red onion, cut into 1-inch squares
1 green bell pepper, cut into 1-inch squares
2 tomatoes, cut into wedges

Steps:

  • Slice the steak into 1/2-inch thick slices across the grain.
  • Whisk together soy sauce, sugar, cornstarch, and ginger in a bowl until the sugar has dissolved and the mixture is smooth. Place the steak slices into the marinade, and stir until well-coated.
  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat, and place 1/3 of the steak strips into the hot oil. Cook and stir until the beef is well-browned, about 3 minutes, and remove the beef from the wok to a bowl. Repeat twice more, with the remaining beef, and set the cooked beef aside.
  • Return all the cooked beef to the hot wok, and stir in the onion. Toss the beef and onion together until the onion begins to soften, about 2 minutes, then stir in the green pepper. Cook and stir the mixture until the pepper has turned bright green and started to become tender, about 2 minutes, then add the tomatoes, stir everything together, and serve.

Thinly sliced steak is stir-fried with colorful vegetables in a spicy sauce in this Hunan beef. A take-out classic that's surprisingly simple to make in the comfort of your own home!

1 tablespoon vegetable oil
1 pound flank steak thinly sliced
salt and pepper to taste
1 cup broccoli florets cut into 1 inch pieces
1/2 cup celery thinly sliced
1 medium red bell pepper cored, seeded and diced
1 cup canned baby corn drained and halved
1 1/2 teaspoons minced garlic
1/2 cup beef broth
2 tablespoons soy sauce
2 tablespoons oyster sauce
2 teaspoons rice vinegar
1 teaspoon honey
2 teaspoons chili paste such as sambal oelek
2 teaspoons cornstarch

Steps:

  • In a large pan over high heat, heat the vegetable oil.
  • Season the steak with salt and pepper to taste and place it in a single layer in the pan.
  • 3-4 minutes per side, or until browned. If necessary, cook in multiple batches.
  • Place the beef on a plate after removing it from the pan. Keep warm by covering.
  • Toss in the broccoli, celery, and bell pepper. Cook, stirring occasionally, for 4-5 minutes, or until the vegetables are tender. Season to taste with salt and pepper. Add the baby corn and mix well. Cook for 30 seconds more after adding the garlic.
  • Return the beef to the pan with the vegetables.
  • Whisk together the beef broth, soy sauce, oyster sauce, rice vinegar, honey, chili paste, and cornstarch in a small bowl.
  • Bring the sauce to a simmer over the steak and vegetables. Cook for 1-2 minutes, or until the sauce thickens. If desired, serve immediately over rice.

2 slices gingerroot, peeled and finely chopped
3 stalks spring onions, finely chopped
1 tablespoon chinese rice wine
7 tablespoons water
4 tablespoons soy sauce
1 lb steak fillet, cut across the grain 1/4 inch thick slices
1 pint vegetable oil
1 tablespoon flour
1 1/2 tablespoons cornstarch
1/2 teaspoon salt
white pepper
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
4 tablespoons sugar

Steps:

  • Mix together the ginger, half the spring onions, the wine, 3 tablespoons water, soy sauce. Add the beef slices, mix well together and leave to marinate for 15-20 minutes.
  • Heat the oil in a wok to 350 degree.
  • Mix together the plain flour and half the cornstarch.
  • Remove the beef from the marinade, dust with the flour and deep-fry for about 30 seconds. Remove from the oil and drain on paper towels.
  • Pour off most of the oil from the wok, leaving about 1 tablespoon. Reheat the wok, and add salt. Stir-fry for about 1 1/2 minutes then remove and arrange in a ring on a serving dish.
  • Heat another tablespoon of oil in the wok and add the remaining soy sauce, the tomato ketchup, Worcestershire sauce and sugar. Blend the remaining cornstarch with the remaining water and add to the wok to thicken the sauce. Bring to the boil then add the beef slices. Sprinkle with the remaining spring onions and serve.

Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours

3-4 tbsp olive oil
6 garlic cloves, thinly sliced
good thumb-size piece fresh root ginger, peeled and shredded
1 bunch spring onions, sliced
1 red chilli, deseeded and thinly sliced
1 ½kg braising beef, cut into large pieces (we used ox cheek)
2 tbsp plain flour, well seasoned
1 tsp Chinese five-spice powder
2 star anise (optional)
2 tsp light muscovado sugar (or use whatever you've got)
3 tbsp Chinese cooking wine or dry sherry
3 tbsp dark soy sauce, plus more to serve
500ml beef stock (we used Knorr Touch of Taste)
steamed bok choi and steamed basmati rice, to serve

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
  • Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
  • Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.
