6 slices thick-cut hickory smoked bacon
2 tablespoons agave nectar
1 tablespoon southwest chipotle seasoning, mix (Mrs. Dash, Tones, Konriko or homemade)
1/4 teaspoon cayenne pepper (optional)

Steps:

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil. Arrange slices on baking sheet; bake until almost crisp (8-9 minutes). Drain the drippings from baking sheet and discard.
  • In small bowl, combine agave nectar, chipotle seasoning and pepper. Brush bacon with the chipotle mixture; bake until glazed (8-10 minutes).
  • Cool.

2 (8 ounce) packages cream cheese, softened
½ pound cooked bacon, crumbled
8 jalapeno peppers, diced, or more to taste
¼ cup shredded processed cheese (such as Velveeta®)
4 green onions, chopped
3 tablespoons hot sauce (such as Tabasco® Chipotle Pepper Sauce)
1 egg
2 tablespoons water
1 (16 ounce) package wonton wrappers

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Combine cream cheese, bacon, jalapenos, shredded cheese, green onions, and hot sauce in a bowl. Mix well.
  • Whisk egg and water together in a small bowl.
  • Place 1 tablespoon cream cheese mixture on a wonton wrapper. Brush the edges of the wonton wrappers with the egg mixture using a small pastry brush. Fold wonton into a triangle; pinch shut. Repeat with the rest of the wonton wrappers.
  • Place wontons carefully in the oil, working in batches. Fry until golden brown and crispy, about 6 minutes.

2 jalapenos, seeded and finely minced
1 cup yellow cornmeal
3/4 cup self-rising flour
1/2 teaspoon cayenne pepper
1 tablespoon smoked paprika
1/2 small onion, grated
1/4 cup chives, chopped
2 cups sour cream, divided
1 egg, beaten
1/2 cup cheddar cheese, grated
1/4 cup TABASCO® brand Chipotle Pepper Sauce
1 lime, juice and zest
peanut oil, for frying

Steps:

  • Preheat oil in a deep-fryer or Dutch oven to 350 degrees F.
  • In bowl, combine bacon, jalapeno, cornmeal, flour, cayenne, paprika, onion, chives, 1 cup sour cream, egg and cheese.
  • Mix well to combine.
  • Drop heaping tablespoon-sized amounts of the mixture into the hot oil. Fry in batches for 2 to 3 minutes each.
  • Remove from the oil to paper towels to drain and season immediately with salt and pepper.
  • Transfer to a serving platter or bowl and serve with the dip.
  • For the dip:
  • Combine remaining cup of sour cream, Chipotle Tabasco, and lime juice and zest. Mix well to combine.
