20 fresh chicken drumettes or wings
1/4 cup mayonnaise
CHIPOTLE SEASONING RUB
1 tablespoon brown sugar
2 teaspoons salt
1 1/2 teaspoons chili powder (can more if desired)
1/2 teaspoon black pepper
1/2 teaspoon Old Bay w/ Blackening seasoning (optional, but yum!)
2 teaspoons chipotle powder (add more if you like heat)
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
3/4 teaspoon paprika
1/2 teaspoon cumin
can also add a bit of dried cilantro if desired
Juice of 1 lime
Fresh cilantro (garnish)
AVOCADO SAUCE
1 avocado
5 Tablespoons sour cream
2 Tablespoons fresh cilantro (chopped)
3 cloves of garlic (minced)
Juice of 1 lime
salt and pepper (to taste)

Steps:

  • Brush wings with mayonnaise.
  • Mix together chipotle seasoning spices.
  • Sprinkle spice mixture generously over chicken. Use your hands to really work the spices into the chicken.
  • Cover and refrigerate for an hour.
  • Preheat oven to 450.
  • Arrange chicken on a foil-lined baking sheet brushed lightly with oil.
  • Bake for 20 minutes.
  • Drain off the juice.
  • Return chicken to oven and broil to crisp up the skin. Watch carefully, this only takes a few minutes.
  • Arrange chicken on a platter and garnish with fresh cut cilantro and the juice of 1 fresh lime.
  • Make the avocado sauce by pureeing avocado and sour cream. Add in cilantro, garlic and enough water to thin it out (if desire) Puree until smooth. Stir in lime juice. Add salt and pepper to taste.

1/4 cup chili sauce
2 tablespoons honey
1 tablespoon soy sauce
2 chipotle chilies in adobo sauce (from 7-ounce can), chopped
2 teaspoons adobo sauce from can
1/4 teaspoon garlic powder
1/8 teaspoon coarsely ground pepper
2 pounds chicken drummettes (20 to 24)
1 medium ripe avocado, peeled and pitted
2 tablespoons mayonnaise or salad dressing
1/4 cup chopped fresh cilantro
1 teaspoon lime juice
Dash of salt

Steps:

  • Mix all ingredients except drummies and Avocado Mayonnaise in shallow dish. Add drummies; turn to coat. Cover and refrigerate 30 minutes to marinate.
  • Heat oven to 375°. Line jelly roll pan, 15 1/2x10 1/2x1 inch, with aluminum foil. Spray foil with cooking spray. Remove drummies from marinade; place in pan. Brush with remaining marinade. Bake 30 to 35 minutes or until chicken is no longer pink when centers of thickest pieces are cut.
  • Meanwhile, make Avocado Mayonnaise. Serve with warm drummies.
  • Method for Avocado Mayonnaise: Mash avocado in small bowl. Stir in remaining ingredients until well blended. Refrigerate until serving.

  • In a large bowl, mix together chipotle in adobo sauce, water, and lime juice and zest, and season with salt and pepper. Pour mixture over chicken wings and stir to coat.

2 garlic cloves, minced

Steps:

  • Heat oven to 375°F. Line 13x9-inch pan with foil. Arrange drummettes in single layer in foil-lined pan.
  • In small microwave-safe bowl, combine all remaining ingredients; mix well. Microwave on HIGH for 1 minute or until sugar is dissolved, stirring once halfway through cooking. Pour sauce over drummettes to cover.
  • Bake at 375°F. for 30 minutes. Turn drummettes over; bake an additional 20 to 30 minutes or until drummettes are glazed, fork-tender and no longer pink next to bone.
