Chipotle Lime Chicken - ridiculously delicious and juicy grilled chicken recipe with chipotle chili, lime juice, garlic and cilantro!

2 - 2.5 lbs. (1 kg-1.2 kg) skin on chicken thighs, deboned
1/2 cup fresh lime juice
1 teaspoon fresh lime zest
1/4 cup olive oil
3 tablespoons fresh cilantro leaves, roughly chopped
1 jalapeño, chopped finely
2 teaspoons chipotle chili powder, or more to taste
5 garlic cloves, minced
1 1/2 tablespoons honey
2 teaspoons salt or to taste
Lime wedges, for serving

Steps:

  • Leave the skin on the chicken thighs but remove the bones by cutting two slits along the sides of the bone. Rinse the chicken with cold water and pat dry with paper towels. Set aside.
  • In a big bowl, whisk all the Marinade ingredients until well combined. Save some of the Marinade for basting. Add chicken to the Marinade, make sure to stir and coat the chicken evenly. Marinate for at least 2 hours.
  • Fire up the grill, brush a little bit of the Marinade plus the garlic, cilantro and jalapeno on top of the chicken and grill them until they turn golden brown and charred on both sides. Serve immediately with some fresh lime wedges.

1/4 cup fresh lime juice
1/4 cup olive oil
2 1/2 tablespoons chipotle Tabasco
3/4 teaspoon salt
6 large skinless boneless chicken thighs (2 1/2 lb total)
2 teaspoons mild honey

Steps:

  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas).
  • While coals are lighting, stir together lime juice, oil, Tabasco, and salt in a liquid-measuring cup. Put chicken in a large sealable bag and add 1/3 cup marinade (reserve remainder in cup). Seal bag, forcing out excess air, and marinate chicken at room temperature, about 15 minutes. Stir honey into remaining marinade until dissolved to make sauce.
  • Grill chicken (discarding marinade in bag) on lightly oiled grill rack, covered only if using a gas grill, turning chicken over occasionally and moving it to avoid flare-ups if necessary, until just cooked through, 8 to 10 minutes total.
  • Brush both sides of chicken with some of reserved sauce, then continue to grill, turning over once, until lightly browned, about 1 minute more. Serve chicken drizzled with remaining sauce.

2 garlic cloves, peeled
3/4 teaspoon salt
1 tablespoon lime juice
1 tablespoon minced chipotle pepper in adobo sauce
2 teaspoons adobo sauce
1 teaspoon chili powder
4 bone-in chicken thighs (about 1-1/2 pounds)

Steps:

  • Place garlic on a cutting board; sprinkle with salt. Using the flat side of a knife, mash garlic. Continue to mash until it reaches a paste consistency; transfer to a small bowl., Stir in the lime juice, pepper, adobo sauce and chili powder. Gently loosen skin from chicken thighs; rub garlic mixture under skin. Cover and refrigerate overnight., On a lightly oiled grill rack, grill chicken, covered, over medium-low heat for 20-25 minutes or until a thermometer reads 170°-175°, turning once. I created this stir fry when my husband was on a chipotle kick. It is healthy with lean protien, fiber, and veggies. I've substituted baby corns for the canned corn with success as well. You could use fresh jalapenos instead of the canned chilis too! Make it as hot as you want with the chipotle pepper!

1 cup canned corn
1/2 cup canned black beans
1 (4 1/2 ounce) can chopped green chilies
1 lime
10 grape tomatoes or 10 cherry tomatoes, halved
1/8-1/4 teaspoon dried chipotle powder
1 teaspoon chili powder
1 teaspoon sea salt (optional)
2 tablespoons taco seasoning
fresh cilantro (to garnish)
sour cream
cheese
tortilla
lettuce
tortilla chips

Steps:

  • Spray a short burst of non-stick olive oil in a large skillet.
  • In a medium bowl, combine corn, beans, chilis, tomatoes, and seasonings.
  • Cut lime and save 2 quarters for garnish. Squeeze the rest into the bowl and mix.
  • Cook chicken until almost done. Add other ingredients and stir fry until it bubbles, then simmer until evenly hot.

4 tablespoons fresh lime juice
1 1/2 teaspoons crushed chipotle chilies*
6 teaspoons olive oil
9 green onions (white and pale green parts only), thinly sliced
1/2 cup canned low-salt chicken broth
18 radishes, trimmed, halved, thinly sliced crosswise, and 20 radish leaves, thinly sliced, reserved
2 tablespoons chopped fresh cilantro
Lime wedges
12 hot corn tortillas

Steps:

  • Combine chicken, 1 1/2 tablespoons lime juice, and crushed chipotles in large bowl. Sprinkle with salt and pepper; toss to blend. Let stand 10 minutes. Heat 4 teaspoons oil in large nonstick skillet over high heat. Add chicken mixture and sauté 3 minutes. Stir in green onions and broth; cover and cook 3 minutes. Uncover and stir until chicken is cooked through and most liquid evaporates, about 2 minutes longer. Stir in 1 1/2 tablespoons lime juice. Season to taste with salt and pepper. 1/2 red onion
2 medium sized carrots
1 red pepper (or 1/2 red and 1/2 yellow)
2 limes
1 tablespoon vegetable oil
2 large garlic cloves, minced
2 tablespoons fresh ginger, finely minced or 2 teaspoons bottled ginger, minced
1/2 teaspoon hot red chili pepper flakes
2 tablespoons soy sauce

Steps:

  • Cut chicken into 1/2-inch bite-size strips.
  • Slice onion into thin wedges.
  • Peel and cut carrots lengthwise, then slice on the diagonal,.
  • Core and seed pepper, then cut thin julienne strips.
  • Finely grate peel from half a lime. Squeeze out 3 tablespoons juice from the limes.
  • Heat oil in wok or large frying pan set over high hear. Add chicken, garlic, ginger, and chili flakes. Stir-fry until chicken is golden, about 3-4 minutes.
  • Add onion, carrots, and soy sauce. Stir-fry for 2 more minutes.
  • Add peppers, lime juice and peel, then stir-fry until pepper is tender-crisp, about 2 minutes. Great over noodles.

4 boneless skinless chicken breasts
2 Tablespoons olive oil
½ cup lime juice
¼ cup soy sauce
¼ cup fresh cilantro (chopped)
2 teaspoons chipotle chili powder
2 teaspoons minced garlic
3 Tablespoons honey
½ teaspoon salt
2 limes

Steps:

  • In a medium size bowl, mix together the olive oil, lime juice, soy sauce, cilantro, chipotle chili powder, minced garlic, honey, and salt until well combined.
  • Set about 1/2 cup of the marinade aside.
  • Place the chicken breasts in the marinade and let soak for about 2-6 hours in the refrigerator.
  • Heat grill to medium-high heat, and place chicken on.
  • Baste grilling chicken with the half cup of marinade that was set aside.
  • Grill until the chicken is done all the way through, and the outsides are dark golden brown.
