PICKLE ROLLUPS

A quick finger food that everybody loves, and you can vary the meat according to your taste. My friends like salami or corned beef best.

Number Of Ingredients 3

16 ounces sliced pastrami
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) jar dill pickles, cut into strips lengthwise

Steps:

  • Spread cream cheese over a meat slice to cover. Place a pickle piece on one end, and roll the meat up. Repeat with remaining ingredients. Cut into 1 1/2 inch pieces, and chill until ready to serve.

8 medium pickle, dill
1 pkg esskay chipped beef
16 oz cream cheese, whipped

Steps:

  • 1. Lay out all the pickles on paper towels. This helps get the moisture off.
  • 2. Take one piece of dried beef and coat with cream cheese. Remember to get the whipped type, this makes it much easier to spread. Then place another piece of dried beef just so the bottom of the coated piece is covered by the top of the uncoated piece of dried beef. Then coat the second piece of dried beef with cream cheese as well.
  • 3. Place the pickle at one end and wrap away. Repeat for all pickles.
  • 4. Let them set in a container in the refrigerator overnight.
  • 5. Slice into bit size pieces.

½ (8 ounce) package cream cheese, softened
8 slices corned beef
4 medium dill pickles

Steps:

  • Spread cream cheese over the corned beef. Line up two slices, overlapping the ends to seal them together. Place a pickle over the cream cheese on one end and roll up. Repeat with remaining pickles and corned beef. Cut each roll into slices to serve.

The filling for this recipe is also how we make our cheeseball (just ball it up and add a coating of roasted chopped pecans!) I decided today to try it in a tortilla rollup. They were a huge hit at my Mary Kay party!

1 pkg cream cheese
1 envelope original ranch dressing mix
1 jar(s) armor dried beef (found near canned meat)
5-6 large flour tortillas

Steps:

  • 1. Soften your cream cheese and add the ranch dressing mix. Chop your dried beef in a food processor until the slices are small pieces. Add to cream cheese mixture and mix well.
  • 2. Warm each tortilla in microwave for about 10 seconds. Spread cream cheese filling over the tortilla all the way to the edges. Start at one end and roll the tortilla up tightly. Repeat with remaining tortilla shells.
  • 3. Refrigerate for about an hour or so. Remove from refigerator and slice into 1/2 to 1 in slices. Serve on a pretty platter!

1-1/2 pounds boneless beef round steak
1/4 cup chopped onion
1/4 cup butter, melted
2 cups fresh bread cubes
1/2 cup chopped celery
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
1 cup all-purpose flour
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups water
3/4 teaspoon browning sauce, optional

Steps:

  • Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. Roll in flour. , In a large skillet, brown roll-ups in oil. In a small bowl, combine the soup, water and browning sauce if desired; pour over roll-ups. Cover and simmer for 2 hours or until meat is tender, turning occasionally.

1 (8 ounce) package cream cheese
1 tablespoon prepared horseradish
stuffed olives, minced
scallion, minced
crabmeat, flaked, chopped

Steps:

  • Cream cheese and horseradish until smooth and creamy.
  • Spread mixture over each slice of dried beef.
  • Roll up then refrigerated for a couple hours.
  • When ready to serve, cut each roll diagonally, making each cut about 1 inch long For variations: mix minced pimento stuffed olives with basic mixture.
  • Mix minced green onions with basic mixture or crabmeat.
  • This recipe can be frozen and prepared days in advance.

  • Drain all of the juice from the pickles, and pour pickles into a bowl. Use a paper towel to gently remove any access juice from the pickles.
  • Take a small amount of cream cheese on a butterknife and spread it across one side of a piece of the dried beef, spread enough cream cheese to evenly coat the entire side of the beef.
  • Add a baby dill pickle to the center of the cream cheese and gently roll up both sides of the dried beef using the cream cheese like a 'glue', overlappig the beef if possible.
