CHOCOLATE ORANGE BROWNIES

You know these squidgy chocolate cake squares with orange zest are going to be good!

200g butter, chopped
200g dark chocolate, roughly chopped
zest 1 large orange
4 large eggs
350g caster sugar
100g plain flour
50g cocoa powder
100g dark chocolate orange, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a 24 x 20cm brownie tin with baking parchment. Put the butter, dark chocolate and orange zest in a non-stick saucepan and very gently melt over a low heat, stirring every now and then, until smooth - take care not to overheat it. Cool.
  • Whisk the eggs and sugar together with an electric whisk until the mixture is pale, has doubled in volume and leaves a trail when the beaters are lifted. Gently stir into the cooled chocolate mixture. Sift over the flour and cocoa, stir in, then add the orange chocolate.
  • Pour into the lined tin and bake for 35-40 mins. Cool in the tin, then cut into squares.

This is a tribute to my "other Mother"...ya know, the one ya would've chosen, given the chance. The extra cocoa can be omitted but we like ours very chocolatey.

Number Of Ingredients 6

1 (18 ounce) box chocolate cake mix
2 eggs
1/2 cup orange juice
1/4 cup salad oil
2 -3 tablespoons cocoa
1 whole unpeeled orange

Steps:

  • In a large bowl mix cocoa into dry cake mix.
  • Chop well washed orange in 6-8 chunks, discard seeds, blitz orange til mushy.
  • In separate bowl whisk eggs, salad oil, orange juice til combined.
  • Pour wet ingredients into cake mix, add orange mush and beat all for 4-5 minutes. If it seems a litte dry add water a few drops at a time. Mixture should "ribbon" off beaters.
  • Pour into buttered and floured bundt pan, thump to settle.
  • Bake for 30-40 minutes at 350. Test before removing from oven.
  • Leave to cool before turning out.
  • Frost or glaze with choc orange frosting.

  • Pre-heat oven to 350F (180C), butter an 8x8 inch (20 x 20cm) square pan, then line the pan with parchment paper and lightly butter the parchment paper again.
  • In a small bowl over a pot with boiling water (make sure the water does not touch the bottom of the bowl), melt the chocolate and butter (stir gently until melted and smooth) set aside to cool.
  • In a large bowl add the sugar, eggs, milk, vanilla and the salt and beat on medium speed for 5-7 minutes or until thickened and pale. Then add the melted cooled chocolate and beat 30 seconds, then sift the flour, cocoa and baking powder directly into the bowl and zest, fold gently to combine.
  • Pour into prepared pan and bake 30-35 minutes or until it begins to pull away from the edges. Let cool and dust with powdered/icing sugar if desired. Enjoy!
