HOT PEPPER SAUCE - A TRINIDADIAN STAPLE
Trinidadians LOVE their 'peppa' sauce, and this one is full of flavour and heat! Sooooo easy to make -- no cooking, just your blender to create this taste of the islands. Try using different peppers to vary the flavour and heat. Use over meats, in sandwiches and stews. Trinis use it in anything savoury!

Steps:
- Wearing disposable gloves, and being careful not to get any in your eyes or on your skin, roughly chop the habanero peppers. Place the habanero peppers, mango, onion, green onions, and garlic into a blender. Pour in the vinegar, lime juice, and vegetable oil, cover the blender, and pulse until the mixture is very finely chopped. Stop the blender, and add dry mustard powder, salt, curry powder, and lime zest. Blend again until the sauce is smooth. Pour into clean jars, and store in refrigerator.

- Season pepper mixture with curry powder and salt. Reduce heat to low and cook to let the flavors blend, 1 to 2 minutes.n
- Transfer pepper mixture to a blender; add mango cubes and blend until smooth.n
- Pour blended mango mixture into the saucepan, bring to a simmer, and cook until slightly thickened, 5 to 10 minutes.n

- Pour a dash over vanilla or chocolate ice cream! I haven't tried this yet myself, but some of my friends swear by adding hot sauce to their ice creams.
- Add it to your alfredo sauce. Mango Pepper Sauce adds a depth of flavor to your alfredo sauce, in addition to being buildable to your desired heat level.
- Pair it with mac & cheese, either on top or in the mixture itself! Basically anything that involves cheese and a bit of heat will be good, trust me.
- Make guacamole with it! Skip dicing spicy peppers and potentially rubbing your eye later to dangerous effect. Mash some avocado with cilantro, lime, and a bit of Mango Pepper Sauce and you're done!
- Make compound butter. This is one of my favorite kitchen projects. Take some sauce, old herbs, anything you can think of, mix it with softened butter then put the butter back in the fridge to harden.
- Use it to finish your soups or chilis. Add Mango Pepper Sauce slowly at the end of the cooking process until you get your desired level of heat!
- Amp up your scrambled eggs. We like ours added to the egg mixture before it goes in the pan for a well dispersed kick and flavor.
- Add it to your greens. This is a great way to spice up your collards once they're done cooking. Be careful though as a little goes a long way!
