Chocolate Frosting with Cocoa Powder and Powdered Sugar is a must-have recipe. It's creamy, smooth, and rich. This icing can be made stove-top or in the microwave and just takes minutes to stir together. It goes well on cakes and cupcakes.

Ingredients

1/4 cup butter (salted or unsalted, I use this )
1/3 cup unsweetened cocoa powder (I prefer this brand)
1/3 cup milk (whole or 2%)
1 teaspoon vanilla extract (preferred brand)
3 and ½ cup confectioners sugar (sifted)

Steps:

Sift sugar.
Heat butter in a small pan on medium heat, do not let butter get brown.
When butter is melted, whisk in cocoa, milk, and vanilla. Add sugar 1/2 cup at a time, whisking after each addition.
Remove from heat, after all the sugar has been added.
Whisk until smooth.
Immediately pour over cake.
If icing is too thin, add additional sifted sugar 1/4 cup at a time until desired thickness or sit it in the refrigerator a few minutes. Take it out and whisk it until creamy again.
Frosting will thicken as it cools, but it'll be harder to spread.

2 cups sifted confectioners' sugar
½ cup butter
1 teaspoon vanilla extract
1 ½ tablespoons milk
2 tablespoons cocoa powder

Steps:

Cream sugar, butter and vanilla. Add a small amount of milk (1 to 2 tablespoons). Add cocoa if desired and beat until fluffy. If frosting is too sweet add a little more milk.

1 cup unsweetened cocoa powder
2 cups white sugar
½ cup vegetable oil
4 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup confectioners' sugar

Steps:

In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.
