Chocolate Whoopie Pies Recipe

Ingredients:

  1. sugar
  2. vegetable oil
  3. eggs
  4. all-purpose flour
  5. baking cocoa
  6. baking soda
  7. salt
  8. milk
  9. butter', "confectioners' sugar", 'vanilla extract

Steps:

  1. preheat oven to 425
  2. lightly coat cookie sheets with nonstick cooking spray
  3. whoopie pies: in a mixing bowl , beat sugar and oil until crumbly
  4. add eggs and beat well
  5. in separate bowl , combine flour , cocoa , baking soda and salt
  6. gradually beat flour mixture into sugar mixture
  7. add milk and mix together well
  8. with lightly lightly floured hands , roll dough into 1 1 / 2" balls
  9. place balls 2" apart onto cookie sheets lightly sprayed with nonstick cooking spray
  10. flatten balls slightly with bottom of lightly greased flat-bottom glass
  11. bake at 425 for 5-6 minutes or until tops are cracked
  12. cool for 3 minutes before removing to wire racks to cool', "filling: in a mixing bowl , beat together butter and confectioners' sugar", 'beat in milk and extract until fluffy
  13. pipe filling using pastry bag on to flat bottom of cooled whoopie pie and top with another whoopie pie to make a sandwich
