1/4 cup buttermilk
1/3 cup canola or vegetable oil
2 eggs, beaten
1 teaspoon vanilla extract
1 cup all bran cereal
1 cup banana, mashed
1 cup flour
1/2 cup sugar
2 Tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
1 Tablespoon flour

Steps:

  • Combine buttermilk, vegetable oil, eggs and vanilla; add all-bran and let sit for 5-10 minutes to soften. Add mashed banana.
  • In a separate bowl, mix dry ingredients including flour, sugar, cocoa powder, baking powder and salt.
  • Add the dry ingredients to the wet ingredients. Stir until mixed completely.
  • Mix chocolate chips with 1 tablespoon flour; stir into the batter.
  • Line muffin tin with liners; fill each cup 2/3 full of batter.
  • Bake in a preheated 400 degree oven for 12-14 minutes or until a toothpick comes out clean.

1 1/4 cups All-Bran Original cereal
1 cup milk
3 large overripe bananas
1 egg
1/2 cup packed brown sugar
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat flour
1/4 cup cocoa
1 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/2 cup chocolate chips (plus additional for top if desired)

Steps:

  • Preheat oven to 350 degrees F. Line muffin pans with about 16 paper liners.
  • In a medium bowl, combine cereal and milk. Let sit 3-4 minutes until soft.
  • Add bananas to a large mixing bowl and mash with a whisk. Whisk in egg, brown sugar applesauce and vanilla.
  • Whisk in flour, cocoa, baking powder, baking soda and salt to the bowl. Add softened bran and whisk just until combined. Stir in chocolate chips.
  • Ladle into prepared muffin pans and bake at 350 degrees F for 15-20 minutes (Mine baked exactly 19 minutes) until a toothpick comes out clean or mostly clean.
  • Let cool to room temperature (you can dive in before that, but the paper liners are difficult to remove from warm muffins!).

1/2 cup sugar
2 tablespoons baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda

1 cup bran flakes
2 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1/3 cup canola oil
1/4 cup buttermilk

Steps:

  • Preheat oven to 400°. In a large bowl, whisk the first six ingredients. Stir in bran flakes. In another bowl, whisk eggs, bananas, oil and buttermilk until blended. Add to flour mixture; stir just until moistened., Fill foil-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 12-14 minutes. 1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.

2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.

  • Whisk in egg, milk, granulated sugar, and brown sugar.
