Easy keto chocolate cheesecake recipe that requires NO baking! Smooth, creamy and rich, this low carb chocolate cheesecake can be made crustless or with a simple crust!

1 cup chocolate chips (* See notes)
2 cups cream cheese (dairy-free, if needed)
2/3 cup sugar free powdered sugar
1 cup heavy cream (** See notes)
1 teaspoon vanilla extract

Steps:

  • Use an 8-inch store-bought crust or prepare a homemade crust. Alternatively, keep this crustless. Grease an 8-inch circular pan lightly, and set aside.
  • In a small saucepan or microwave safe bowl, melt your dark chocolate and set aside.
  • Beat together the cream cheese, powdered sugar and vanilla extract, until smooth. Add the melted chocolate and continue beating, until fully combined and silky smooth.
  • In a separate bowl, whip together the heavy cream until medium peaks form. Slowly fold it into the cheesecake mixture.
  • Pour the cheesecake filling into the crust or greased pan. Once filled, place in the refrigerator for at least 6 hours, to firm up. If desired, top with ganache or frosting.

100g/3.5 ounces Unsalted Butter
100g/3.5 ounces 90% Dark Chocolate
2 Eggs
1/4 Cup Stevia
1 teaspoon Vanilla Essence
Pinch of Salt
1/4 Cup Coconut Flour
200g/7 ounces Cream Cheese, chopped into bite sized pieces

Steps:

  • Preheat the oven to 180C/350F and grease an oven proof dish.
  • Melt the butter and chocolate together over a low heat.
  • When the butter and chocolate have melted, set aside to cool.
  • In a large bowl, whisk together the eggs, stevia, vanilla and salt.
  • When smooth whisk in the chocolate until well combined.
  • Gently stir through the coconut flour, one tablespoon at a time.
  • Place half of the brownie batter into the prepared oven dish.
  • Top with the chopped cream cheese and finally spread over the other half of the brownie batter.
  • Place into the oven for 20 minutes or until cooked to your liking.
  • Remove from the oven, cool and serve.
