Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease 12 muffin cups with butter or line with paper muffin liners.
- Stir sugar, oil, mayonnaise, and eggs together until creamy and light yellow. Mix in bananas until incorporated.
- Stir flour, oats, flax, wheat germ, baking soda, baking powder, and salt into banana mixture until smooth. Mix in chocolate chips and walnuts. Spoon batter into prepared pans.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes.

- Preheat the oven to 375 degrees F.
- Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
- Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
- Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla. With the mixer on low, alternately add thirds of the flour mixture and halves of the banana mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined. Fold in the chocolate chips.
- Divide the batter among the muffin cups. Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 24 minutes.
CHOCOLATE CHIA BANANA NUT MUFFINS
We added chocolate chips and black chia seeds to Betty Crocker Fiber One banana nut muffin mix for an added boost of flavor and nutrition.

- Heat oven to 425°F (400°F for dark or nonstick pan). Place paper baking cup in each of 12 regular-size muffin cups, or spray muffin cups with cooking spray.
- In medium bowl, stir all ingredients just until blended. Divide batter among muffin cups (about three-fourths full).
- Bake 15 to 20 minutes or until muffins are golden brown and tops spring back when touched lightly. Cool 5 minutes before carefully removing from pan.

CHOCOLATE BANANA MUFFINS
These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

I adapted this recipe with a few of my own changes from a Cooking for 2 Magazine recipe, so it is great for when you just want to mix up 1/2 dozen muffins. These are a very moist muffin with just enough chocolate and nut flavor. Tastes best fresh out of the oven.

- In a mixing bowl, cream butter and sugar. Beat in the egg, banana, and vanilla.
- In separate bowl, combine the flours, baking powder, salt, baking soda, and cinnamon.
- Add the flour mixture to the creamed mixture just until moistened.
- Fold in the walnuts and chocolate chips.
- Coat 6 muffin cups with nonstick cooking spray and fill two-thirds full with batter.
