This is my easy go to recipe for any turtle Cheesecake, that I make, and I make my cheesecakes in various shapes, Round, Square as you see here, and also Heart Shape depending on the occassion that I am making it for. 1/2 stick butter
1 c milk chocolate chips
1 jar(s) (12 ounce) smuckers caramel topping
1 tsp pure vanilla extract
1 c chopped pecans
CHOCOLATE CHIP CHEESECAKE
1 1/2 c graham cracker crumbs
3/4 c plus 3 tablespoons butter, melted
3 pkg 8 oz. each cream cheese softened
3/4 c sugar plus 3 tablespoons
3 large eggs, room temperature
1 c miniature chocolate chips
1 Tbsp vanilla extract

Steps:

  • 1. FOR THE TOPPING: Melt butter in a heavy sauce pan. Add the Chocolate chips and stir over low heat until melted; blend together with the butter.Remove from heat & add vanilla. Stir to mix.Spread warm chocolate over cheesecake & refrigerate 15 minutes. Microwave caramel topping in microwave for about 1 1/2 to 2 1/2 minutes. Add Chopped nuts. Stir to mix.Spread topping mixture over cheesecake. Cool completely before serving. Refrigerate any left overs.
  • 2. Preheat oven to 450 degrees F. In a medium bowl, combine graham cracker crumbs and 3/4 cup melted butter. Press mixture into the bottom and up sides of a 9 inch springform pan.
  • 3. In separate bowl, combine cream cheese and sugar. Add eggs one at a time, beating well after each addition. Add remaining 3 tablespoons melted butter, chocolate chips & vanilla. Pour mixture into crust in springform pan and bake in 450 degree oven for 10 minutes.
  • 4. REDUCE OVEN TEMPERATURE TO 250 DEGREES F. AND BAKE AN ADDITIONAL 35 MINUTES. REMOVE FROM OVEN. Loosen pan and let cool. Then top with turtle topping following directions above. Serve 7 to 9 people.

Truffle-like chocolate cheesecake in a chocolate cookie crust. If this does not drive your mate wild, keep the recipe and replace him or her. Note: The topping for this cake is your choice, you could use chocolate dipped strawberries, purchased chocolate truffles, or melt chocolate and/or white chocolate and drizzle it over the top.

1 ½ cups vanilla wafer crumbs
½ cup confectioners' sugar
⅓ cup unsweetened cocoa powder
⅓ cup butter, softened
2 cups semi-sweet chocolate chips
3 (8 ounce) packages cream cheese, room temperature
1 (14 ounce) can sweetened condensed milk
4 eggs
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large mixing bowl, mix together crushed vanilla wafers, confectioners' sugar, cocoa, and butter by hand. Press ingredients into a 9-inch springform pan.
  • In the top of a double boiler, melt the chocolate chips, making sure that they are very smooth.
  • In a large bowl, beat cream cheese until fluffy with an electric mixer. Gradually beat in condensed milk until smooth. Mix in melted chocolate, eggs, and vanilla. Beat with electric mixer on low speed until the ingredients are thoroughly blended. Pour the filling into the prepared crust.
  • Bake at 300 degrees F (150 degrees C) for 55 minutes. The cake will seem underbaked in the center, but will continue to cook after you remove it from the oven.
  • Allow to cool to room temperature, then refrigerate for several hours before serving.

This is wonderful simple cake to make. I got this from a Kraft magazine. I used about 1 cup of chocolate chips instead of the squares of chocolate. I added Cool Whip to the top after it was cooled and then chocolate shavings on top of that.

1 1/4 cups Oreo cookies, baking crumbs
1/4 cup melted butter
3 (8 ounce) packages cream cheese, softened
1 cup sugar
1 teaspoon vanilla
6 semi-sweet chocolate baking squares, melted & slightly cooled
3 eggs

Steps:

  • Combine crumbs & butter; press onto bottom of 9 inch springform pan.
  • Beat cream cheese, sugar & vanilla on medium speed until well blended.
  • Blend in melted chocolate.
  • Add eggs one at a time; mix just until blended.
  • Pour over crust.
  • Bake at 350°F for 45-50 minutes or until centre is almost set.
  • Cool completely, then refrigerate for 3 hours or overnight.

3 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips, melted
4 eggs
2 teaspoons vanilla extract
whipped cream
additional chocolate chips

Steps:

  • Mix in a bowl, all the crust ingredients.
  • Press mixture into the bottom and 2 inches up the sides of a 9-inch springform pan; chill.
  • In a big bowl, beat cream cheese until fluffy.
  • Gradually add milk; beat until smooth.
  • Add melted chocolate chips, eggs, and vanilla; stir until well blended.
  • Pour into crust.
  • Place cheesecake/pan in a large rectangular baking pan filled with 2 inches hot water; place in a 300 degree oven and bake for 1 hour and 15 minutes or until center is almost set.
  • Remove cheesecake from oven and water-filled pan and cool on a wire rack for 15 minutes.
  • Carefully run a knife around edge of pan to loosen.
  • Cool at room temperature for 3 hours.
  • Chill overnight.
  • Just before serving, remove sides of pan.
  • Garnish with whipped cream and chocolate chips.

  • Microwave method instructions: In a medium sized, microwave safe bowl, combine chopped chocolate and heavy cream. Microwave on high heat for 30 seconds. Take the bowl out and stir the mixture. Microwave in 10 second intervals, stirring after each burst, until completely melted and smooth.Double broiler (bain-marie) method instructions: Select a pot and a bowl where the bowl fits in the pot with at least 2 inches of space between the bottom of the pot and the bowl. Fill the pot with 1 inch of water, and heat until it's warm and steaming, but not bubbling. Add your chopped chocolate and heavy cream to a medium sized, heat safe bowl. Place the bowl in the pot, making sure the water doesn't come in contact with the bowl. Gently heat, stirring often, until the mixture is melted and smooth.
  • Cover the chocolate and cream mixture with plastic wrap touching the surface of the mixture, and refrigerate for at least 2 hours. Once the mixture has hardened, scoop into roughly 1 tablespoon portions. Use your hands to roll into smooth, round truffles.
